I think the most important thing to call out about Chikyu is that you don't need to be Vegan or Vegetarian to enjoy this place. If you consider yourself a fan of sushi, Chikyu is a must if you're in Las Vegas. The flavor profiles we've experienced in the various rolls at Chikyu have been unlike anything I've had elsewhere, in a very good way!
One of the biggest differences between vegan sushi at Chikyu compared to other places where I've had vegan sushi, is that Chikyu isn't trying to recreate classic sushi rolls with vegan ingredients. You can find places already doing that, but Chikyu takes things in a different direction by getting WAY more creative with their ingredients and flavor profiles.
I keep telling myself I'm going to get something besides sushi next time I go there (can't wait to try their Ramen), but the sushi rolls at Chikyu are each their own delicious work of art. It really is beautiful food that also tastes incredible.
Like all other traditional sushi rolls, the food at Chikyu is very filling. Don't think that just because it comes out looking like a work of art that it won't fill you up. Both times I've gone there I've probably ordered a little too much, simply because everything looks so good, and then ended up not being able to finish it all. Luckily, their rolls are just as good the next day.
Overall, I can't recommend this place enough. I love supporting small restaurants like this, and they're always so friendly when we come. Again, if you love sushi, forget about the fact that this place is all vegan and just go there to enjoy some amazing new takes on sushi!
