"Chillest" is a great way to describe this local shave ice company! Owner operator Aaron Wong and family has been operating this shave ice company as a pop-up at Kaka'ako's Fishcake on Saturdays for a number of years. Prior to that, it was called Ailana Shave Ice, with locations on Kona St and Waikiki, which I remember having a smooth and fluffy shave ice at its Kona St location. Aaron and family opened Chillest on 5/17/25 in its permanent brick-and-mortar location in Kaimuki.
According to Aaron, he distinguishes Chillest from other shave ice stores by his nostalgic memories of eating shave ice as a kid:
* Shaping his shave ice like a mountain without a peak, instead of the typical packed ball.
* Not packing it in, but instead making it light and fluffy so that the syrups permeate the ice.
* Ensuring that the ice texture is super fine.
Aaron also makes his own syrups as much as possible by using real fruits, e.g., strawberries, mango, papaya, coconut milk, and matcha from Japan.
The shave ice comes in one size only, is shareable, and up to three flavors can be chosen. The flavors are categorized by price: $6 is for traditional syrups, $7 for house flavors that are more natural (strawberry milk is its signature flavor), and $8 for unique house flavors.
I chose a classic shave ice with flavors of vanilla cream, Japanese grape, and orange cream. We enjoyed this combination. The Japanese grape was not overly sweet, and the two cream flavors took it to a higher level, like a creamsicle flavor. Yum! Generous amount for the price that hubby and I shared this shave ice. So reasonable in price as compared to other shave ice places. The towering shave ice held its shape and did not fall out of the bowl.
Customer service was excellent! Aaron was the operator of the shave ice machine, assisted by his daughter, Erin. With smiles, they efficiently made our shave ice and patiently answered all my questions about which flavors go with what flavors before other customers started coming in.
Nice interior to dine in, as it's clean and bright! Flavors and prices were clearly displayed on the wall. There is a counter alongside its front window that you can watch cars commuting on Waialae Ave. Or sit at its two tables to enjoy your shave ice! And there's a restroom by the back entrance.

Hours of operation are daily from 11a to 6p. Chillest is located next to the Curb Kaimuki in the former Color Lounge hair salon at the corner of Waialae and 8th Aves. Free parking is available in a private lot in the back of the store that is shared with other businesses in the complex. From the parking lot, look for a green door for the back entrance of Chillest, and they are in the process of putting up appropriate signage. Good view of the kitchen of Bread Shop next door.
Congrats to Aaron and his family for its first permanent brick-and-mortar shave ice store known for its light fluffy ice flakes with natural syrups! Just in time for the hot summer months, and we shall return!
