I went to Chop Shop Butchery today for my first time ever with my son - snow and all. I was greeted by a very nice woman, busy stocking the shelves with items. I mentioned to this nice woman that it was my first time there. She legit introduced me to the store in the best way. She explained what the animals ate during their lifetime, explained the products (meat and otherwise), suggested wine items, etc. I opted for a nice ribeye steak, wine, sausages, and other items. I cooked the steak, and my son and I were like wow! Very fresh, above and beyond tenderness, and very flavorful (I can cook a good steak 😄... Had to throw that in there). I will be going back for more very soon. Thank you for the experience!

I received some steak and kabobs as a gift from a friend. It's really good and the meat was super tender. I don't live in the area, but I'm in Gaithersburg fairly often so I'll be in sooner or later

It's hard to find a real butcher anymore. Don't come here expecting cheap. If you want high quality meats professionally trimmed, trussed and packaged, this is your place. One or both of the owners are usually here and the rest of the staff is very professional and helpful. They're usually well stocked with your standard cuts of beef, pork, chicken, sausages, other specialty meats, sides and some prepared foods. If you need something specific, call ahead and they can probably get it for you.

Great selection of meats, many of which are hard to find. I have put in special orders for some game birds just to try something new. Service is efficient and orders have always arrived on time. The prices seem on the higher side. I have not tried any of the more common meats so I cannot speak on if the quality meets the price, but I can recommend this place for anyone wanting to try something new.

Best butcher in Maryland. I have never had a steak that wasn't like butter. The meats are top notch, tender and delicious. The staff are really friendly and helpful. I can't go back to supermarket stuff ever again. Chop Shop has totally spoiled me! Love the staff. Love the selection of products. You can't go wrong here.

Finally- a legit butcher! John has brought back the old school neighbor butcher shop that I haven't seen since I was a kid in NY. Super quality cuts of beef pork & chicken & all the sides are right there. I'm also impressed with the selection of rubs and brines to choose from. I could barely get my husband out of there!! I went in for a specific cut of pork for a recipe I was trying & John & his staff ensured i got exactly what I needed. Thrilled to have a butcher in MoCo!

This place is like Willy Wonka's chocolate factory, but for high quality meat. If you enjoy meat and grilling in any way, the Chop Shop is a treat to visit. The case is full of delights. Be sure to check out the locker full of dry-aged items in the back. At this point, I've purchased a ribeye and a dry aged NY strip, which both turned out incredible. I also emailed with a specialty request for some pork steaks (you can take me out of STL, but you can't take the STL out of me) and they were amazing. It's also fun to wander around and look at the sausage selection, the specialty items, and just generally gawk. If you've ever watched a Steven Raichlen episode on PBS and wondered where on earth you would find whatever rare/fun thing it is that he's grilling... THIS is the place. I can't say enough good things about the Chop Shop. On top of everything else, every employee in there is extremely friendly and clearly loves chatting about their product. If you're anywhere nearby and you want a butcher for any reason, this is your place.

I finally found a butcher on the east coast that sells tri tip. It's more pricey that what I used to pay in California, but it was so tasty and totally worth it! The people who work there are super friendly and helpful too!

Who knew! Who knew? Who knew. Hoo noo. Hiu Nieu?! Who knew I had a butcher shop like 7 minutes away from me? Answer: Yelp Alternate also correct answer: Not me! After going to Costco and finding no briskets And going to Safeway and finding no briskets I turned to the trusty Yelp machine. Chop Shop is a small carryout style butcher that has everything from fresh meats, sausages, crab cakes, bbq sauces, wood charcoal chips, and even specialty flavors of Fisher's popcorn. I walked out with a 5 pound prime brisket, pumpkin spice caramel Fisher's popcorn, and Old Bay Fisher's popcorn. I will say that brisket was PRETTY expensive. No ifs ands and pork butts about it. BUT, it was a prime brisket. I'm pretty sure that's like the top cut of brisket you can get. Also... I had all the things to cook a brisket without the brisket. So I was willing to pay a premium. All and all, the brisket turned out wonderfully. It was super delicious. Not lots of fat on it, so I was getting more meat in that 5 pounds. Also, I did a little research on their website and it turns out that the owner ran the Sutton Place & Now Balducci's Meat department for like 20 years. SO, if there is someone who knows high quality meats - it's definitely this guy. Ultimately its the customer service that made this review a 5 star review. The gentleman who saw me waiting for the couple in front of me took the initiative to get my order started. He was expeditious, friendly, wrapped the brisket really well, and wished me well upon leaving. Excellent customer service. Definitely willing to pay a little more for seriously good service, high quality product, and supporting a great local business.

This is def the best butcher in the county and prob the state. I got an amazing brisket point and awesome boneless pork butt in here recently and the meat and service were incredible. Boneless pork butt was the best one I've gotten from anyone in the area recently and I'm def going back to get all my meats here from now one. I'll be going back for another pork shoulder in the next couple days. Service was incredible as the guy answered all my questions and gave me recommendations about the brisket. Smoked the beautiful brisket point into burnt ends like he suggested and it was awesome.

I've never known what exactly makes the magic behind a butcher shop - the selection of cuts meats is usually vastly greater than a typical grocer, and it certainly comes with the price tag to match. But I've come in a couple times to order filet to make Beef Wellingtons for occasions, and I figured what better way to judge a place by one of the best cuts? Was able to just walk in and have my piece cut to size, and another occasion I called in advance. Well I truly got my happy ending - because the dishes I've made with their tenderloins have been the most singularly heralded bites of meat I've had in recent history. Even at their premium per pound cost for the meat, home cooking with that blew out of the water renowned restaurant offerings, which might actually end up being twice the price by weight. For me, Chop Shop is definitely worth the drive to beeline. Definitely will be back to try some of their other cuts. Plus, I'm heavily biased they have in stock some of the sausages and pates from one of my favorite joints in my California days.

Chop Shop Butchery is the go to for my husband and I on the weekends and any day I am cooking quality meats. John and his wife and staff are the most friendly, informative, professional and most knowledgeable butchers in the area. We never have a bad experience whenever we stop in. I highly recommend you stop by if you want to quality meat and quality service. They now offer a selection of specialty wines to indulge while you enjoy a delicious ribeye! Be sure to check them out!

I have been a regular Chop Shop customer since their opening. You will find a wonderful selection of fresh meat, delicious packaged food like sausages and hot dogs. John always keeps a nice selection of well marinated meats like Black Pepper Korean style Beef Short Ribs (yes, these are my favorite). Chop Shop is the only place I trust to serve fresh meat to my family and friends. I'm so happy that they are part of our neighborhood and hope that they will be here for a very very long time.

I love the Chop Shop and have been coming here for years. John is a great guy and is always willing to go out of his way to special order any specific product you are looking for. His CAB Prime is insanely good and his Wagyu Good is outrageously wonderful. I drive from Catonsville every Christmas to pickup my specialty meats from the Chop Shop and hope locals will continue to support him as well! Great job John, see you next year! A small boutique-like butcher with great, high quality meats. First time here, so I stayed basic and got 2 porterhouses. At $32/lb its definitely not cheap, but they were great. The butcher trimmed the excess fat and it was the picture-perfect porterhouse! Grilled it up that night and had a wonderful dinner. Nicely marbled on the strip side and the filet was soft and tender. I noticed they carried Peter Luger steak sauce and I'm kicking myself that I didn't get it. Next time I'll pick some up with some thick-cut bacon to try and re-create the PL experience!

Second to none butcher shop that we are lucky to have in Montgomery County. My husband and I have been coming here for years, especially for special occasions. Always a treat because of their amazing selection of high quality meats and customer service. Huge kudos to the Chop Shop Butchery staff for running this awesome small business (and also for being great people - they found my wallet after I dropped it and let me retrieve it even when they had closed and were hard at work prepping for the next day). Just checked on a Prime brisket point and some rub I picked up yesterday. The meat was so tender it wanted to pull apart before cooking. Making burnt ends today. Used the rub on a fresh whole chicken I also purchased there. It was perfect. The rub it sweet spicy and salty; Red dirt. Next time I might get a whole brisket with some practice and share with the neighbors. Felt more manly just being in there. My beard grew a little longer , my car drove a bit fast, and my dog listened to me that much better. Stop buying meat anywhere else.

This is going to be a mixed review so please read the entire thing. I will start off by saying I have always been a big meat eater. I am originally from California and the steaks here in Virginia/Maryland just haven't been as good as California. Albertsons in California has better steaks than Whole Foods in Maryland. My point of all this is it's hard to find a store, restaurant or butcher shop with good steaks. We have been to the Chop Shop twice now and mainly went for Ribeye steaks. Both times the steaks were better than anything I've had in the past 5 years since I moved to the east coast. Even better than Maestros in DC. Now, you are probably wondering why I gave two star. It's the service and the owners not willing to make the customer happy when they make a mistake. The first time we went here it was for Christmas. We ordered a Prime Ribeye steak about a week ahead of Christmas. We specifically asked for a large cap. The day came and I picked up the steak. When I got home my wife looked at the steak and it had no cap at all. Very disappointing! We called the shop and the lady told us we should have asked for cap. We explained that I asked specifically for a large cap a week ahead of time. My wife loves the cap so I wanted to make sure. The lady at the store just said sorry. We asked if we could exchange the steak or her make it right. The lady explained over and over that we would have to pay for a new steak and they don't take refunds for fresh cuts. We were pissed. We ended up just keeping the steak we had. Second time, I went in today and hand picked the ribeye with a large cap. I wanted to make sure this time because it's for our wedding anniversary today. So the guy grabbed the steak and wrapped it up. I went to pay and asked if I could add a Tenderloin as they looked great. They grabbed the tenderloin and rang me up for both steaks. I go home and opened the steaks to show my wife and guess what??? My ribeye was a new strip instead. The package had New York steak printed on the label as well. So the chop shop gave me the guys steak that ordered his meat at the same time. I immediately drove back. I called on the way back and a guy told me that he would just charge me the difference and give me the ribeye. When I showed up the same lady that handled my situation the first time handled it this time as well. She explained that she knew it was their fault but they couldn't take refunds. She should have just given me another steak and ate the $33 dollars. Instead she charged me for another steak at full price and then threw in some cheap sausages. My wife called and the lady said the same thing over and over that we had to pay for another steak and they don't take refunds. So now we have a cut we don't like. So because the owner felt that $33 for the ribeye would break her bank, we have decided we will not be going back. It's unfortunate because the steaks were great. Now she lost more money from future purchases by my family. In conclusion, if you go here, you will be happy with the quality of meat but you better make sure you get exactly what you want or you will get screwed by the poor service.

Very disappointed in this butcher Been there for several times and burgers are great ( expensive but good) had a few times veal and last weekend again and wasn't even close to what it supposed be. Had to go back today for Tri tip which he promised that it would be there early Tuesday morning but never got it, while I was waiting for that i told butcher about the veal and for the price you pay and been very disappointed the only thing he said ya can't say for sure if quality is good or not. He didn't apologize or give me credit So that's the last time I be going there

WOW eeeee!!!!!!! 20878 has a butcher!!!!!! Chicken sausage with Spinach and Feta. OMG! John and crew have carved out a great place with lots of quality choices at reasonable prices. Chicken, all meats, sausages and everything is fresh and very personalized service like Sam from Brady Bunch personified. Plenty of sauces and accoutrements also. Next to CVS so easy to access to Safeway also to make quality meals. Part of the Vace family so deep rooted stability. NOT going anywhere. Go now!

Their selection of products is top notch, and we have never been disappointed with what we bought there, whether it's the chicken, beef, pork or other more exotic meats. Not so great experience here. I asked for ground beef, was charged one price then charged another price, and I was confused as to why. Seemed disingenuous to just say, "yeah the price is wrong" and not explain why. My experience also felt rushed and uncaring. For someone who's interested in learning more about the art, this was a bit discouraging. I'll be looking for another butchery, perhaps maybe direct with a farm bext time.

Hey Yelp can we get a 10 star rating? I go in and I am casing the joint and they have truffle butter in the case next to the steaks. Trust me you need to try truffle butter on steaks. I walked out spending a fair chunk of change but Mike and I loved the steaks, stuffed pork chops and the lamb chops. It is not an everyday kind of place but With the quality I can do a little splurge once a week for date night.

My dad is a frequent flyer at Chop Shop - he's there at least once a week, especially during COVID-19 since we've been eating at home more often. Everything is delicious and John and his staff are really friendly and knowledgeable. There is always a large selection, and you can find specialty sauces, breads, buns, etc. too! Icing on the cake is that everything is locally sourced - love supporting local/small businesses!

I love this small local owned butchery. I used to go there at least once a week during grill season. After we moved, I managed a few trips while I was in the area. This is the place where you get your meat crave satisfied. Hands done on the Tomahawk!!!

Please bear with me as I "storytell" for a paragraph. A few years ago I was traveling in France and noticed every town had a full service butcher shop. The butcher sold meat and only meat - the freshest available. Around the corner was always a bakery for baguettes and dessert... and within a block or so, the citizens could get the most fresh, high quality ingredients to prepare their meals. There is a reason French food is so good! Back in Rockville, we have the big supermarkets - Giant and Safeway and Costco all have meat departments. And they do fine, serving USDA Choice meats at reasonably low prices. Or you could go to upscale places like Whole Foods to shop for better quality. No offense to any of these chains... but thank goodness for Chop Shop! This area has needed a high quality butcher serving Prime quality meats. It can be intimidating when you first shop at a butcher. There is so much that you can't learn from years at the supermarket. The folks at Chop Shop do a great job at explaining their products and they have a good selection of pre-seasoned meats "ready to grill". Without a doubt, butchers cannot compete price-wise with the large supermarkets and Costco. But they deliver much higher quality meat... so the choice is yours! When you're ready for higher quality meat than then supermarkets are offering, Chop Shop is ready for you!

Against my better judgment I gave this butchery a 2nd chance. My husband came in today to purchase a ribeye for our anniversary tonight. He ordered the ribeye and picked it out the case and they put it in butcher paper. When he got home we saw it was a NY Strip. He got someone's else's order. We called and the male owner said come in and he would fix the situation. When my husband arrived the woman owner said "Too bad we are a small business trying to survive". She made my husband buy a ribeye and us eat the cost of the NY Strip. This butcher shop has now ruined our Christmas Eve dinner and our Anniversary dinner. Never again, lesson learned. There are plenty of other quality, professional, customer centric options in the Rockville/Bethesda area certainly NOT Chop Shop Butchery. We will never trust this business again especially with a special occasion and you shouldn't either.

We are so lucky to have the Chop Shop so close to home. We've never had better meat in our lives. I feel sorry for the steak houses in the area because I'm sure they're losing business. Why go to a loud overpriced restaurant and get a mediocre meal when you can stay home and cook what you want the way you want with top quality products. In particular, their Flank Steak is not only the best Flank Steak I've ever eaten, it's one of the best steaks in general ever. We smoked a 5 pound pork butt this last weekend and it was more juicy and tender than the best BBQ I've ever had in a restaurant. Treat yourself to a dry aged Rib Eye once in a while and you'll feel better about life. Make this a regular stop for meats and improve your life. THANKS to John and to all your crew.

By far the best bacon I've ever had. I thought the applewood was delicious but when I went back for more I decided to try the cherrywood as well (normally not a fan of cherrywood bacon). Their cherrywood bacon changed my mind completely and is the best!

Warning, please do NOT place an order with the owner over the phone. They will give you the worst cuts of meat with the highest prices. I explained my disappointment with the owner and she told me too bad. If you must frequent this business go in and look at what your are buying first. The owner ruined my Christmas dinner. I don't normally write reviews, but this place is worth the exception. It's amazing. You can tell the guys behind the counter know their stuff. I'm an avid smoker/bbq'er and this place is where I got to get my meat. They carry Snake River Farms, which if you know anything about BBQ SRF is one of the top places in the country. It's well worth the money! Plus, I love the idea of supporting a local shop. We support them, they support the farms. It's win win all around!

I got into smoking and charcoal grilling a few years back. Chop Shop opening up was literally an answer to my prayers. I was forced to pick up meat and other special orders from butchers many many miles away, and even worse from the local grocery store. I must say...Chop Shop is legit and the best and only butcher in the area worth visiting. I love this place. The quality of product is unmatched and the customer service is phenomenal. Check this place out. You will not be disappointed.

So this was my first time at Chop Shop and it was a fantastic experience. Not sure what the name was of gentleman that helped me but he was super friendly and very helpful. He was patient with me as I asked many questions about the different cuts of meat and how to properly cook them. Had a fantastic selection of meats to choose from. The shop was clean and not overwhelming. Prices compared to regular groceries were a bit higher but the quality was far superior to what is in stores. You definitely get what you pay for. I got 2 beautiful New York strips and they came out better than I could wish. Will definitely be back to try out the different cuts!

Yes, it's pricey, but they know their meat, and everything that we've had, e.g. the sausages and the specialty cuts, were very fresh and tasty. If you need a particular cut, they can get it for you.

If you're looking for GREAT meat... or specialty cuts... you CAN'T go wrong here. They select and cut meats, plus offer the most PERFECT burger blend which includes Chuck and Brisket. Their bacon is outrageously good, flavorful and intoxicatingly aromatic as it's cooked. Sure we have all gotten pre-wrapped meats from the cases at the supermarket, or picked up expensive and only marginally better offerings from Whole Foods, but the product at the Chop Shop is noticeably​ better, trimmed with care, marbled to perfection... and results in an amazing meal! While price can be a tad bit higher than other meats you can buy, we all know... you get what you pay for. And in THIS case, it is especially true! I made a couple of burgers for my son and I yesterday, and his words were, "OMG! This is THE. Best. Burger. EVER!!!!" And he was right... as luck would have it, I set the flame and timed it well, flipped just once, toasted the buns, and with his favorite pickle slivers, melted American​ cheese and ketchup, there wasn't a lot to disguise the real flavor of the burger. Juicy. Fresh. Awesome. I like a bit of onion jam (also procured from the Chop Shop... they have​ an excellent assortment of GREAT condiments as well!) some applewood smoked bacon and lettuce. Again, the flavors came together in a symphony of notes, from smoky to sweet, meaty to crisp, all coming together to create a perfect burger experience. And I could go on about the steaks, chops, chicken, and sausages as well. Never a bad experience at TCS! So... when quality counts (and when doesn't it?)... skip the deli case filled with meats cut in some factory, and visit the wonderful people at the Chop Shop for an experience more in the fashion of the traditional, caring, attentive, neighborhood butchery!

AMAZING QUALITY AND CUSTOMER SERVICE!! Finally got to go and see this new local butcher! This is a family-owned, family-operated small business that proves quality of product and quality of service can co-exist. Reminds me a lot of the feeling I get at the Italian Deli just down the street. Butcher and owner John came out from behind the counter to talk to me about my favorite cuts, to explain the variation in products, made some suggestions based on our conversation, and made me feel at home. I also actually learned something. How often does that happen anymore at your local food shops? I asked for a thick cut of prime, bone-in ribeye, and John went into his back cooler and brought out a fresh rack, and started asking me how thick! I was in heaven. I walked out with two almost 2 inch cuts, beautifully marveled, and gorgeously-colored, and he trimmed the fat to my taste. I also got the fresh drumsticks, boneless breasts, homemade half smoke sausage, chorizo, chicken/spinach/feta sausage and chicken/apple sausage. Needless to say, we grilled out, and everything we ate was 100% GOLD! I'm still dreaming about that ribeye right now! OVERALL EXPERIENCE: 11. It was comforting to know that a true expert like John has sourced my chicken, beef and other meat products, and that through his experience I know where my food is coming from, that I can get the cuts I like- how I like them, and that my money is going to a good, hard-working family that enriches my neighborhood. I hope to bring my kids to the Chop Shop for many years to come! VERY HIGHLY RECOMMEND THE CHOP SHOP

Love Love Love this place!! So happy I went to check it out! The prime bone in rib eyes that were hands down the best steak I've ever cooked. So much happier to spend my money at this quality small butcher rather than a grocery store. Well worth the money spent. I will only come here from now on!
