Came in to pick up something quick to eat and it was great! The korean beef burrito was different and great! The service was fast and everyone was polite. I work nearby, I will be back.

So thought this would be interesting to try, but I wasn’t super sure Latin-Asian fusion work.. but now I know. It f does. Or at least Chuey Fu does makes it work 👌💕💕 I tried their Korean Beef burrito and I normally only ever finish like half of these things, but I ended up eating the whole thing! So yeah. It was f yummy 😋💛💛 I think it’s that Korean beef already pairs really nicely with the rice but then it tastes interesting because with the wrap and salad. It really works. I also recommend their local craft beer, the agave wheat.

Fun mix of Mexican and Asian food. The fries were a hit with our group and both the bowls and burritos were tasty. The seared tuna was overcooked which was disappointing but the pho burrito with beef was so good it made up for the overcooked fish. Portions were also quite generous and the cost was very reasonable. Atmosphere was more of a bar vibe but still fun. I would recommend stopping by and trying the pho burrito.

Review update!!! 5/27/25 Thought we recognized the name! Food was absolutely delicious. Fresh. Bartender is awesome. I love the brick and mortar. 2021- Food truck heaven!! I have the best apartment complex. Once a month we have a different food truck and tonight it was Chuey Fu's. We ordered the tuna bowl, tuna tacos, chicken quesadilla, and tempura shrimp. Everything tasted amazing. Tuna cooked to order and you can tell. Everything was fresh and delicious. Thanks for being so awesome.

The best of Mexican and Asian combined in this little humble restaurant. Must try is the Fuh Burrito (Pho Burrito) it will not dissapoint. The tacos were amazing, and the must-have dessert is the twig and berries.

Food was fine, drinks were good but the service was terrible. There were easily 4 staff members for the 8 total customers and it still took 20 min to get our drinks and then 20 min for the check. They threw out my nachos when I was in the restroom also. The place could be great otherwise.

We stopped here by chance for lunch and were very happy with it. I had the Korean beef burrito and it was better than I imagined. Great flavors and textures. It was a great price and pretty quick. It was pretty empty when we were there but the atmosphere looks cool.

It's absolutely amazing how the universe conspires for us when we let it. Especially when we are on adventures in new places and are led to such magnificence as Chuey Fu's. Sayla, who greeted us, bartender and waited on us was out of this world AMAZING. The kind of woman that absolutely makes an experience of Fabulous food wayyy better than it could have been. Every moment was pure magic in there. We Adored the atmosphere and were STOKED To hear Dirtyheads and other wonderful Reggae while indulging in the greatest fusion of asian-latin deliciousness. We had the Fuki Fries, which were perfectly cooked shoestring French fries with Japanese Mayo and Crispy seaweed, a Pho Burrito, yeah you read that right...and just WOWZERS. I chose this Fabulous Ahi Salad with a miso dressing I could have bathed in. The experience, Sweet Sayla, if I am spelling that right was absolutely phenomenal. I will go back every time I am in Denver. There is no other place I would have rather ended up than Chuey Fu's. I love that place, I love the food and appreciate restaurants that make me feel like I am family. If I could give 50 stars, I would. I don't just recommend this place highly, IT'S AN ABSOLUTE MUST.

I had the best experience here! The food was amazing! Highly recommend the edamame and the Korean Beef rice bowl. My server Hailey was friendly, efficient and you could tell she loves her job! Great experience. I will definitely be back.

The hubs and I decided to play hookie from work to experience D.T.C Eats - the food truck fest that occurs every other Monday in the Tech Center. Despite the array of food trucks to try, I'd heard the buzz on Chuey Fu's for a while now, and decided it was worth a shot. Everything, I repeat, everything looks delicious on their menu. I opted to try the Ahi Tuna Bowl (as they advised the bowl was much better than a rito or wrap) while the hubs was interested in trying the Korean Beef Bowl. Service was friendly, fast and food was ready in a short 7 minutes! My tuna - was pretty good. Slices of fresh Ahi over a bed of rice, stuffed with lettuce, pickled goodness and drizzled in the BEST sweet chili sauce ever!! mmmm! The Korean bowl wasn't that great - as the meat tasted a bit overcooked, and lacked the flavor my Ahi bowl had. Although the portions were large, the hubs didn't finish his food due to the lack of taste. I have to knock off a star for the pricing - as everything is really pretty expensive. My Ahi bowl was $12, while the Korean Bowl was about $12 - which seemed pricey for not being as loaded up as the other poke trucks nearby. *Pro Tip: Try their strawberry basil lemonade! SO refreshing and seriously to die for! If ever given the opportunity to try their food again, I'd gladly try something different on the menu - and try their flagship restaurant! :)

Awesome food and service. We had a party of 10+ and sat outside under a covering. Drinks came fast. Waitress gave us a few minutes and we ordered appetizers. Wonderful apps and the waitress was patient as we talked and enjoyed the first course. I had the ramen and was not disappointed. Rich broth and ample pork and noodles. We had a group in our party that was amazed at the food and said they would return in a heartbeat as they live in the area and were first timers. Excellent food, prompt service and reasonably priced.....what else is there? Highly recommend!

I can already tell chuey fu's is going to be a favorite spot among the neighborhood folks. We stopped in today to check it out and met Joe the owner, a real nice guy :) They transformed an old liquor store into their restaurant and it has a great vibe. We were just looking for a quick snack and a beer and got exactly what we wanted. The menu is a Latin-Asian fusion type of deal. I decided on the char shu pork as a rice bowl, but you could also get it as a burrito or 2 tacos, and it's stopped with a delicious BBQ sauce as well as a cabbage slaw and pickled onions. Damn. It was good! We will be returning for sure to try other menu items. Prices were at the most $10 an entree so super reasonable. Come in and check em out! They will still have their food truck around town.

Had the food truck for the first time last night and the service was quick. My son got a quesadilla, we had the shrimp tempura and the sweet potato fries. Quesadilla wasn't overly special but it was good. The shrimp tempura sauce was what made that app. The sweet potato fries were seasoned well and so good. I will definitely try something else the next time! And will definitely hit up this truck again!

Got sick from a fish burrito from their food truck. I'm just asking myself repeatedly why in the hell did I buy fish from the truck? I'm so pissed at myself right now I can't even think about it. Nasty diarrhea, stomach doing backflips. I haven't eaten anything that would make me sick all week long other than that. I haven't had food poisoning in five years. Im VERY careful (my wife surprised me with this). This one got me good. I should've known better than to trust a truck with semi raw fish. And NO!!! I don't have damned Covid. Only diarrhea and cramps.

Away from the traffic and noise found in downtown Denver and 16th street mall, Chuey Fu's offers a unique twist to "Asian/Latin fusion" with their crazy burrito and taco combinations, salads and ramen. I ordered a Korean BBQ burrito to-go and it was amazing. Burrito was tasty and had a little kick to it, which I really liked. (I believe the spicy taste came from the chipotle sauce and pickled red onions.) The white rice was cooked perfectly and the burrito had plenty of Korean marinated beef. Service was fast and friendly. (I waited 10 mins during lunch traffic for my burrito.) Even though I'm not a big happy hour person, the menu and restaurant inside looked like a fun place for after hour social events. I'll be back soon to try their other delicious flavors!

Co-workers and I ventured out on lunch to the Civic Center eats. We were inundated with choices. After walking for what felt like eternity, I stumbled upon Chuey Fu's Latin Asian Grub. I perused the menu and it was the only place that intrigued my culinary senses. I ordered a Korean Beef burrito and Limeade. From the first bite, I was in a state of bliss. The outside of the tortilla nice and crisp, a bit of eat, tender meat and slight sour note of the cabbage and onion. It was amazing. I washed it down with a refreshing tart Limeade. It was a great choice.

I didn't know what to expect from Latin Asian fusion but we ordered this on seamless and it was the best decision ever. I had some tacos and OH MY GOD. I can't speak to service but the food was rad, arrived hot, and good value. Will def eat it again

Latin Aisan Food ... Need I say more ?? If you haven't tried this type of food then you are seriously missing out on some of the most delicious food I have ever tasted. And I have tasted a lot !!! Never did I Imagine that Latin flavors could mis with Asian flavors, but they perfectly know how to push the envelope for the power of flavor. I also heard he has a restaurant which I will defiantly be stopping by !! The food truck girls are so sweet and friendly and not to mention fast ! The line was long at Civic Center Eats but they move fast and the food is fresh and hot ! You can choose from 4 proteins then pick if you want tacos, burrito, or rice bowl. I did the Ancho Chicken Tacos , Ancho shredded chicken in a peanut sauce topped with asian veggie slaw and cilantro and onions . I also order a side of Chili Lime Sweet Potato Fries with Chipotle Ketchup !!! How could you pass that up ?! It was a chinese take out box filled with fresh sweet potato fries in a amazing flavor of chili, red pepper flakes and lime seasoning with a side of spicy chipotle ketchup. It literally does not get much better than that ! All I'm saying is get yourself so Latin Asian Grub, and where else then Chuey Fu !

Wasn't bad, but I expected better. Portion size was ok and pricing was adequate for today's crazy food prices. Sauce was pretty flavorful and greens tasted fresh. Main problem was meat - I got Korean Beef. It was hard to chew and had not much taste to it.

This food truck is the best! I can't say enough good things about Chuey Fus but I'll try. I chose the combo of street tacos and each one of the three was off-the-chain delicious. They were so good that I went back and grabbed another trio. I also sampled the fried plantains with caramel sauce. They were reminiscent of Bananas Foster and were a great finish to my taco feast. The price was fair for the quality of food and speed with which it was prepared. If you see these folks do yourself a favor and grab some product.

Yes!!!! Located right in the art district. I love the way the inside is decorated, nice relaxing vibes. The pho burrito with pork was phenomenal, this place has the type of menu where it is hard to decide because it all sounds so good but also not overwhelming. There is a nice full bar--I had the El Burro which basically is a Moscow mule and it was a nice strong drink! Definitely will be coming back.

Anytime I have a friend visiting from out of town this is the first place I bring them. Every time I visit I get something new and I'm always extremely pleased with the item because it's new, it's novel, it's something I've never had before and it's always delicious. I've only had one experience where something was wrong with a friend's order and they immediately comped it, no fuss. I've now tried all the burritos and I'm convinced there isn't a better place in Denver for unforgettable burritos. Highly recommend!

I visited the Chuey Fu's food truck at the White Christmas 1940's Ball in Lowry. Every food truck had a pricey menu, but that is to be expected at a large fancy event, where they also provided full menus and plates full o' dinner specials...even including dessert! Chuey Fu's was one of the more reasonably priced foods with interesting-looking menu (Latin-Asian?!) and they included a fancy churro. I should've eaten the churro while it was hot, so that the outside was still crispy as a compliment to the Chinese 5-spice filling in the center. This was an intriguing dessert, and I'd try it, again. The Korean beef with cilantro and pickled onions atop white rice was well-seasoned & spiced, a happy balance of flavors, and a large portion of meat. I didn't love the extra-smoky beans, but other friends enjoyed them. The coleslaw was fresh and people liked the idea of a peanut dressing instead of a Southern mayo style. Meat&rice, beans, coleslaw, churro = $15/plate Most places were $18+. After receiving our order, my boyfriend realized that the sauce on the rice included chiles that he did not expect and could not eat. Chuey Fu's replaced the entire meal for free. I loved this good customer service, especially on a very hectic night! Thank you, Chuey Fu's!

You can't go wrong with this funky truck. My favorite are the Korean beef tacos, but the ancho chili chicken, pork, vegetarian or any of the other options are great too. The pricing is pretty comparable to some of the high end taco restaurants. The tacos are not large, but filling. You get 2 in an order for anywhere between 8 and $10.

So, I am torn between 3&4 stars: I ordered the Ancho Chili Chicken w/sesame peanut sauce (burrito) and Katie ordered the Korean Beef w/chipotle bbq sauce (burrito). The burritos were a excellent size and all ingredients were very fresh. For my ancho chili the balance between the sesame peanut sauce, chicken, cabbage, & rice was perfect... Not over powering but not weak ether. The same can be said about Katie's Korean beef. Where the 3 star factor comes in is the overall price at $10 each and that the burritos had 75% rice and only 25% meat and other ingredients. I would feel much more comfortable paying $8 for this burrito given the ratio of ingredients.

10 bucks for a burrito that was 75% rice 20% cabbage and a tablespoon of beef? I ate more than half the burrito before even seeing meat- No Bueno. Maybe they were having an off day or ran out of Korean beef but either way they left me disappointed. Willing to give them a second try and hopefully it gets better and meatier.

Great happy hour and great staff! I ordered the two tacos off the happy hour menu and really enjoyed them. Our waitress recommend the shrimp tacos and they were my favorite. I will definitely be back again.

We tried this food truck for the first time today at the Farmers Market. Ordered a tuna taco (came with two street sized tacos) and a breakfast chorizo burrito. Came to $19.....pretty expensive for small portions. The tuna taco was good, tuna was cooked great and the sauce drizzled on-top was delicious. The breakfast burrito was cold and not fresh. Really disappointed. No wonder all the other food trucks had lines and this one was empty.

Definitely enjoyed the pho burrito. It was full of flavor and exactly what I imagined it would be. I also got the char siu pork burrito and it didn't really wow me. I though the pork would be sliced rather than ground pork. They are pretty small if you compare it to a Chipotle burrito. It was a little bit on the pricier side but we wanted to give it a try. Churros were decent but nothing spectacular.

Tried out this truck today at Civic Center Eats and loved the cool and delicious fusion between Latin and Asian food. I had the Chicken/Peanut Taco and the Vegetarian Taco; I was so pleased with the uniqueness of the food, along with the awesome flavors (and textures - hello cabbage!) that were present on both tacos. I'm not usually a cabbage or cilantro person, and both were plentiful on the tacos, and I still absolutely loved them - so that's a win for sure! If you're looking to try something new and delicious - go to Chuey Fu's! The only thing that I would love to know more about is their Happy Hour (when/where/etc.) so I can go get more tacos for a slightly more affordable rate than the Civic Center Eats price, which was a little bit steep!

There was a reason the line at Chuey Fu's truck was so long this past weekend at Denver Flea located at the Big Wonderful. The flavor combinations here are delicious! They give you three options for their menu items: burrito, tacos, or rice bowl. I enjoyed the char su pork in taco form. One word: Yum. Prices are spot on for what you get as well. The pork was great and the wasabi aioli had just the right amount of kick to it. Also enjoyed the strawberry basil limeade which was freshly made by the looks and taste of it. Definitely quenched my thirst on a really hot afternoon. When I see this truck the next time I'm out and about, I would order from it again!

Came there for happy hour and really excited for a new restaurant in the hood. Unfortunately, the food and house margarita was mediocre. My boyfriend had the pork burrito and I tried the happy hour chicken street taco, ahi tuna taco and korean beef taco. We also got an order of the chips and queso. Chips were stale! The marinated meats for the tacos were a little too sweet for my taste. The happy hour tacos only came with meat and sauce but normally the other tacos would come with meat, sauce and cabbage. Bummed that I couldn't give a better review. 2 mediocre tacos for $10?!

On first Friday art walk I had 2 pork tacos and got food poisoning. Had them on taco festival no issues. Will not be eating here ever again. Update Owner contacting me offering a free meal on the house. Hmm should I get food poisoning again maybe just get the veg option. Changed rating to 2 stars for the effort of this.

Just like fusion eats, food trucks are hit or miss. This guy just hit the ball out of the park. I just had my first encounter at Strange Brewery: friendly (and funny) owner recommended the Korean beef, and now so do I! Yummy steak cutlets cooked to perfection w rice, purple onions marinated in rice wine vinegar and what appears to be an Asian slaw. Excellent on all accounts. I will be hitting up Chuey Fu's again :)

These guys stopped their big truck full of delicious food outside the Mountain Toad Brewery in Golden several times over the summer; apparently the Toad has a rotating schedule of food trucks so as to ensure that there's always something new for regulars to try and there's always the Chuey Fu's truck when I'm there. Seriously, I think I even came in on different days of the week a couple times and there was the Chuey Fu's truck. But that wasn't a bad thing! I tried several different dishes, including the special ahi tuna and chorizo/peanut sauce burritos, and they were all quite delicious. They're also available as rice bowls or tacos, but having looked at all three I'd recommend the burrito. Everything was cooked to order and was ready in an entirely understandable amount of time given the number of orders they were servicing at any given time and the fact there was only two people in the truck; I didn't have to wait long at all. The cooks/servers were also really friendly, which is another part of what sold me on trying the cuisine. The prices were decent for a food truck; not too cheap, but not what I'd call unfair for the quality of the food. Sure, I wish I could just eat edamame all day for free, but I understand why that's not really a good business model. I'm all about fusions of different cultures, foods, music styles, and pretty much anything else you can think of fusing (and things you probably wouldn't have thought of, such as Latin & Asian food), so this was right up my alley. Their sauces are flavorful and some have a good spice, sweet or spicy as is befitting, and I will happily partake of their food the next time I'm at the Mountain Toad, since apparently, they're always there when I am.

Every time I eat here I have the ramen and it's incredible. Usually I do the ancho chicken ramen. I can't say enough good things about that ramen! Also fantastic queso and salsa. The Margaritas on the rocks are really good too. The one thing I'll say is that service is just a tad slow, but the atmosphere is nice so you won't mind waiting a little longer.

Good food. Simple menu. I would recommend this to anybody. They have burritos, tacos, rice bowls, quesadillas. Choices are beef, pork, shrimp, chicken, chorizo.

Mixing two of my favorite things (Korean BBQ and Mexican) seemed like a no brainer. A lot of reviews complained about small portion sizes on the tacos so we ordered two of the "giant" burritos for delivery. We were disappointed when they were about half the size of your typical chipotle burrito. My Korean beef was 90% rice 5% cabbage and the 5% that was beef and sauce was delicious. Overall it was dry, undersized, and at $10 way over priced. Based on portion and price we both decided this isn't a place we'd try again.

Awesome place for happy hour. They have great drinks and appetizer deals. The pho burrito won over my heart and my belly. Be wary of the spicy jalapeño drinks, because they really pack a punch!

Hit up the food truck at "Taste of Denver". We had the Thai chicken taco and Korean beef tacos, BOMB. We'll have to hit up the actual place when we get back to Denver!

Saw Chuey Fu's was opening a 3rd location in Denver, so thought it must be good and we like to support local restaurants (we used South Broadway location). Ordered two different rice bowls, chicken and pork. Was very disappointed. Lots of rice with a little bit of topping. It was hard to distinguish if the pork was ground pork or whole and to be honest just kind of grossed me out. We wish great success for all restaurants, but I find it hard to believe they are expanding when the product they are producing is mediocre at best.

Saddest. Burrito. Ever. We ordered the ahi tuna burrito at the Pearl St. Farmers market and it was mostly rice, cabbage and a tiny slice of flavorless tuna. It was barely edible. Also, the guy cooking was not wearing gloves. Save your money and go buy an entire pizza or roast chicken for the $10 you will spend on this burrito.
