These guys stopped their big truck full of delicious food outside the Mountain Toad Brewery in Golden several times over the summer; apparently the Toad has a rotating schedule of food trucks so as to ensure that there's always something new for regulars to try and there's always the Chuey Fu's truck when I'm there.
Seriously, I think I even came in on different days of the week a couple times and there was the Chuey Fu's truck. But that wasn't a bad thing!
I tried several different dishes, including the special ahi tuna and chorizo/peanut sauce burritos, and they were all quite delicious. They're also available as rice bowls or tacos, but having looked at all three I'd recommend the burrito.
Everything was cooked to order and was ready in an entirely understandable amount of time given the number of orders they were servicing at any given time and the fact there was only two people in the truck; I didn't have to wait long at all. The cooks/servers were also really friendly, which is another part of what sold me on trying the cuisine.
The prices were decent for a food truck; not too cheap, but not what I'd call unfair for the quality of the food. Sure, I wish I could just eat edamame all day for free, but I understand why that's not really a good business model.
I'm all about fusions of different cultures, foods, music styles, and pretty much anything else you can think of fusing (and things you probably wouldn't have thought of, such as Latin & Asian food), so this was right up my alley. Their sauces are flavorful and some have a good spice, sweet or spicy as is befitting, and I will happily partake of their food the next time I'm at the Mountain Toad, since apparently, they're always there when I am.
