CIBO has a beautiful, modern vibe — minimalist with wood and concrete details that make the space feel both sleek and inviting. The menu is creative and rooted in the region, highlighting local ingredients like fresh cheese and catfish in unexpected, seasonal ways.
One of my favorite parts was the cheese cart. The staff member who presented it was genuinely kind; he walked me through all the cheese varieties and even repeated their names in English so I could write them down and look them up later. It felt personal and made the experience all the more memorable.
The downside for me was that many of the dishes leaned heavily into acidic flavors. I understand the menu is built around summer ingredients meant to be light and refreshing, but at times the acidity overpowered the balance of the dish. A bit more contrast or depth could’ve made a big difference.
Also, the wine pairing didn’t quite hit the mark. The wine itself was good, but it didn’t match most of the dishes—only really working well with two (grilled catfish and another meat dish). At €145, I was hoping for something that would enhance the meal a bit more. We’ve had more cohesive pairings elsewhere at a similar level.
That said, I’d definitely come back to try a different seasonal menu. There’s a lot of creativity and care here, and I’m curious to see how it evolves.
