Every course in the tasting menu was beautifully presented and thoughtfully balanced…a seamless blend of French precision and Vietnamese creativity. The progression of flavors was masterful, and you could feel the chef’s philosophy come through in each plate….elegant, inventive, and deeply rooted in local ingredients. The seafood courses, in particular, were outstanding, and the wine and sake pairing elevated the entire experience. The setting is intimate and calm, perfect for appreciating the artistry of the meal. Yesterday evening, my girlfriend surprised me with a dinner reservation at CieL Dining — one of the most sought-after fine dining destinations in town. Great experience! Service was perfect, very exciting dishes and very fresh, high quality ingredients. Wine pairing was very nice, too. Got a bit expensive though (prices for the menu increased almost 20% from the time we booked the place), but still very much worth the experience!

Definitely worth a visit! Great use of Vietnamese ingredients with French & Japanese influences. The amuse bouche was so fun and creative - seafood courses were done better than the meat courses in my opinion. There was a small issue with my soup course but the restaurant team handled it well. Kudos to a young Vietnamese chef bringing pride and elevation to Vietnamese cuisine. Thank you.

Really really good Asian fine dining. Better than many other Michelin starred places I have tried. The care, effort can be seen in each dish very well executed. Service was very on point too. It’s a bit far from D1 so please cater for longer time to get there especially during the evening jam.

Experimentative. Play on cuisine. From Chinese, French to Peranakan. Even cheese sauce was used on a kailan. Premium fresh ingredients sourced locally and international. A few dishes were very memorable. Drunken chicken. Coconut desert. Duck with cashew sauce. Can tell that the chef put a lot of thought into conceptualizing and balancing each dish. May be one of the more expensive meals on Vietnam but oveeall excellent experience.

The only dish that didn’t quite match our preferences was the drunken chicken, which leaned a bit too far into traditional organ flavors for our taste. One of the most unique surprises of the evening was the dessert featuring coconut sorbet and caviar—an unexpectedly brilliant combination that introduced a refreshing contrast of creaminess and saltiness. As a final touch, we were delighted to receive a tiramisu cake to celebrate a birthday, a thoughtful gesture that ended the meal on a sweet note. Ciel is a must-visit for those looking to explore modern Asian fine dining with bold creativity, impecccable service and great hospitality.
