Seble makes some of the most delicious Ethiopian food I’ve ever eaten. I’m from Kenya and grew up in New York, and have eaten Ethiopian food throughout my entire life. It’s been the place to go after celebrations, reunions, and milestones in my family. When I moved to Albuquerque for my medical school rotations, I was hoping to encounter Ethiopian food as I had previously resided in Las Cruces for two years where I yearned for this cuisine. I discovered Seble’s food truck in early February of this year. At the time, I was going through a very difficult and devastating period. To me, it was a source of comfort and the discovery was a personal Godsend to me. I felt very grateful to be eating Ethiopian food again after not eating it in three years. I even signed up for a cooking class where I learned how to make injera and some vegetarian dishes. If I’m being honest (even if this sounds cliche), her food pulled me out of a very dark time and instilled a lot of hope into me. I look forward to one day Seble opening up an Ethiopian restaurant and serving her very delicious food to all.
