Cloud Nine’s Liquid Nitrogen Ice Cream Shop Hits Southcenter | Eater Seattle
"Inside Westfield Southcenter Mall between Sears and Din Tai Fung, Cloud Nine Creamery is set to open a liquid-nitrogen ice cream shop on February 16. I note that the creamery makes ice cream through a rapid liquid-nitrogen freezing process that customers can watch through floor-to-ceiling glass walls. Customers order by choosing a waffle bowl, cone, or cup to fill with ice cream made from a milk, yogurt, or vegan coconut base, with flavors like strawberry, raspberry, lychee, cake batter, and Nutella, and can add a wide selection of mix-ins including candy, fruit, cookie crumbles, and nuts. There are Cloud Nine–designed combinations such as New York cheesecake, Ube cheesecake, and rotating seasonal options, plus a “Chips and Cream” sweet-and-salty pick that riffs on french fries dipped in soft serve; french fries will also be available on their own or for dipping. The menu also includes various sauces, shakes, fountain sodas, and coffee, and features products from other Northwest businesses including cheesecake, brownies, and apple pie from Alki Bakery and coffee from Caffe D’arte. Because liquid nitrogen freezes rapidly and prevents large, crunchy ice crystals from forming, the ice cream is said to be creamier.
