For Chefs, Booming Home Businesses In New York and California

"Starting a pasta business was a goal for Josh Tango, an alum of Three Star The French Laundry and The Restaurant at Meadowood, so when California began closing up last spring, he got to work on hand-cut pappardelle and squid ink fettuccine. He now makes those and hyper-seasonal pastas like shishito and ramp (the ramps are foraged by a friend in Chicago whom he met while staging at Three Star Alinea). Tango's favorite is squid ink—he says he's always enjoyed both eating and working with seafood, though the seasonal pastas, with their limited run, are also snapped up by customers. The pastas are made with organic, free range eggs from Napa farm Taramasso Ranch. Add sauce (Bolognese and tomato), meatballs, and grated Parmesan, and dinner is a breeze. Tango laughs thinking of his learning curve. 'When I first started, I had absolutely zero packaging, so I bought some ziplock containers at $4/ container. Mind you, that was about 60% of the price of a single serving of pasta. Since then, I’ve managed to find recyclable boxes, which are far more cost-effective.' The home pasta business is tough; Tango has found Napa Valley sales to be unreliable, but he says pop-ups are going steadily and hopes he can grow Tango with Chef into a full-time business. First time. The 8oz latte was perfect. Bold and blended to perfection. Did not even need sugar. The mushroom empanada, the Pina empanada and the caprese empanada were each devine and delicious in their own way. They were not over baked, burnt, over seasoned and reasonably priced. Their guava ginger beer is one of a kind. It was hard not to purchase a pastry and over do it. The atmosphere was very comfortable, authentic and the staff were immediately helpful, pleasant and enjoyed the presence of customer. I really appreciate the insignia in each empanada. That is really the final touch of authenticiy. Each bag is also stamped to know which empanada is which. I am thrilled we stumbled across them. We will return.

This place is hands down the best. My hubby and I have been coming here whenever we get the chance. They also were so accommodating when I called the morning of my baby shower. I needed 30 empanadas before 12 and they got right on it. Not only a super friendly atmosphere but a consistent flavor with their empanadas. Literally the best. I rave about them to everyone I can.

A hidden gem for the locals! Best empanadas I’ve ever had! Each one is baked in a perfect pastry crust, so it’s crunchy, not greasy. Great friendly staff, & cute place!

Delicious savory and sweet empanadas. Great service. You can eat there or take to-go. Wish they were at least a dollar or two less, kinda small for a lunch and you need two for a meal. Definitely worth the treat once in a while.

Their fugazetta and mushroom empanadas are must gets. I've been getting their empanadas from the farmers market for months and finally got around to going to their physical location. Their restaurant is tucked away on a quiet little street where you can enjoy delicious empanadas and cafe con leche.

I had a late lunch (around 3 pm). Someone was there ready to help me. The decor is festive and modern. The branding is on point. I ordered the beef and chicken empanadas. At $5.50 each, it's cheaper than the ones found in Oxbow Market (although I haven't compared the sizes). They were good and they satisfied my late afternoon cravings. I also had a cold brew to go with the food and it made every other bite go down well. Empanadas and coffee -- what a great combo!

Visiting Napa and was craving something savory. Found Cocina Milonga with great reviews. They were closed that day due to staffing issues. We went back the next day and glad we did. Cute storefront with what appears to be seating outside in good weather (nothing setup outside when we arrived early am) One table and some counter seating inside. Nice cozy restaurant for a snack. Huge selection of savory and sweet empanadas. We ordered a dozen mixed savory empanadas. They also serve coffee drinks. Empanadas come in their own little paper envelopes which are individually labeled with the type so we can easily figure out which one we wanted to try. Nice touch! Favorites were Chorizo, Spinach, Mushroom and Fugazetta. $5.50 each which is not bad considering there is another Empanada vendor in the area that charges $7.

When visiting the Martinez Farmers Market we head directly to their booth! It's the first thing we do before any shopping. I highly recommend the Mushroom and Breakfast as a starter. All their empanadas are delicious so there's no going wrong. They have specials during the week so this week it was the Caprese, fantastic. The staff is always friendly and it's so great, the line is around the corner if you get there later in the day...also, they sell out so get there early.

I grab empanadas any chance I get going through the farmers market. My favorite are the mushroom and the fuguzetta, (I'm sure I spelled that wrong), but I wish I would have grabbed the spicy chorizo one this weekend. The pastry itself is always perfectly crisp and the filling full of flavor on any one that I've ever ordered. Service is always patient, helpful and friendly, as well as quick and efficient!

This place is super cute with really friendly people. I had a ham and cheese empanada and a chorizo and egg empanada. They were both good but the chorizo was the winner. They were not greasy at all and came with a delicious tangy dip that had a slight spice. What a great combo.

First time wine tasting with friends and we were in a rush before our 2nd of 3 locations. We first visited a restaurant but there was a lengthy wait so we decided to drive in the direction of our 2nd wine tasting area to look for something quick to eat. Great decision! Walking in, it was small but very welcoming. Very vibrant colors for the decor. I ordered the Chorizo empanada. MAN it was good. I wish I had ordered a few more to go. It was filling, very good and affordable! I don't visit Napa often but I will definitely be back here when I'm in the area.

Who of thought empenadas would be so good with chimichuri in Napa ? Another find in my Napa valley culinary adventure. Good coffee and an expanding menu of delights here . I would have never known about this place if my auto mechanic was near byv. Wow!

This was my first time trying this joint and it didn't disappoint. The food was amazing and the service was amazing as well. As you can see from the pictures the Ambiance was chill with amazing smells the moment you walk in. We tried the Ham&Cheese, the Argentinian Chorizo, the mushroom and the Apple empanadas. All the ones we tried were filled with amazing flavors. The chimichurri was, as the owner says, magical sauce. It was all a perfect balance of amazing food, great service and a chill spot to come visit. If you're in the Napa area you must come to this spot, you will not be disappointed.

We caught up with Milonga's fabulous empanadas at the Napa Farmer's Market where they had a nice large display. Beef, chicken, pork, sweet potato, spinach and yes, vegan options (roasted veggies, potato and apple) all available this morning. I opted for the "Breakfast" empanada which included eggs, cheddar cheese and bacon. Absolutely delicious and a great first bite. Not bad at all for $5. The perfect accompaniment to a picnic at any winery! We took our assortment of empanadas to Larsen for wine and bocce and they were so perfect! Highly recommend trying everything that sounds amazing to you, price is right to over order! Personal faves were the mushroom and also chicken empanadas. Enjoy!

Our first time coming here. We were in between appointments and wanted something fast, budget friendly and somewhere we haven't tried in Napa. We ordered 2 chicken, 1 mushroom and an apple empanada. They were absolutely delicious. Can't wait to try the other flavors.

We went to Cocina Milonga on the recommendation of Rancho Gordo (a place close by that we bought beans from) The empanadas where fabulous! I tried the Potato and also the fugazzeta. They were off the hook and so many flavor and textures. The sauce on the side chimichurri (I think it was) was so good I could drink it up! I brought home the empanadas and put it in my air fryer and it smelled so good when it was cooking that I wanted to wear it a perfume. When I pulled it out it was hot and crispy! I really regret not buying more. I bought some beef empanadas from their freezer section so that I could have them later on. I really wish I would have bought one of each flavor when I was there. This place is a must try! Go try it you won't regret it! The service was also great everyone there was so friendly and welcoming.

Great service and the coffee quality is very good and creamy. My eyes lit ip when I saw they had "Lolita" brand Alfajores since they are absolutely delicious. Very quaint and quiet area as well. Highly recommend!

I was just stopping by on my way home to get a mocha and empanada as a little snack and oh my goodness, this was one of the best tasting things I've ever had in my life, packed full of flavor! And the mocha wasn't too sweet just like I like and it tasted like real ingredients! And the service was so excellent. will definitely be coming back

I picked up lunch today from Cocina Milonga, and OMG it was so good!!! My bf had 2 chicken empanadas and 1 ham and cheese empanada. I am vegetarian so I got 2 mushroom and 1 spinach. I loved them! I will go back to try other vegetarian and vegan options (they have many options-yay) ! I also got Alfajor Cordobes... the dulce de leche was my favorite! Please support this small business!!!

I love this place. My boyfriend and I have chatted with the owner in the few times we've been there and he's just so kind and welcoming. The empanadas (including the sweet ones) are SO GOOD and that chimichurri sauce is chef's kiss. I haven't had the coffee yet because the machine was down when I ordered it but I'm looking forward to it for next time. Today and I got 1 of each (except the tuna and apple cause I've had them) and each one does the opposite of disappoint

Super delicious and complex fillings in the empanadas. We tried Chicken, Beef, Mushroom and Mixed Veg. All fantastic and unique. I'll be back for coffee and desserts. It is WAY off the beaten path, but I will be recommending it to everyone. Lovely owner, super clean and nice front garden with little tables as well.

Very good empanadas. I had a chicken, chorizo, and mushroom. All good and either baked or heated fresh as there was a 5-10 minute wait, not sitting under a heat lamp. They seem pretty serious about their coffee though I did not imbibe.

I have never in my life had a more joyful cashier. My family got up at 3am for sunrise adventures and we were on the brink of being hangry & needing a nap, but the Milonga man brought a smile to all of our faces helping with recommendations and lightening our heavy moods with optimism. He was a one man show, cooking, making coffee, and bringing out food/drinks. Great food and ever better service.

Took my fiancée here for a date because he love's empanadas. I called the food in and it was ready when we got there in less than 10 minutes. The cashier was extremely friendly, they have plenty of vegan/ vegetarian options, and everything tasted great. I feel like the cost was a little low for the quality they put into it. We got 7 empanadas and a dessert for $42, I think that's extremely reasonable for Napa! We will definitely be back!!!

The owner was great to talk with, the Cafe was set up for success but.....the empanadas are baked, hence dry. My advice would be to offer some fried choices on the menu.

I'd never had anything like this. The crusts were amazing. The fillings were delightful. The prices were pretty good. $5 ea. The coffee was damn good. The owner was helpful and knowledgeable and friendly. The vibe was bright and clean. I'm definitely going back! If this business were down town, it'd be popping. A hidden gem!!!
