How Mushroom Farming Waste Could Benefit the Environment and Economy | Eater

"A small waterfront specialty mushroom farm in Troy, New York, producing up to about 1,000 pounds of mushrooms per week. The operation works with sawdust- and soy-hull–based substrate inoculated with edible strains; after a first flush many blocks are set aside as spent substrate, creating sizable piles that still sprout oysters. Most of the material is taken to a nearby composting facility, while local farms, gardeners, florists, and individuals (who sometimes buy buckets for a few dollars) salvage portions for composting, home growing, or soil amendment — underscoring both the reuse potential and the logistical headache of moving a steady waste stream off the property." - Doug Bierend

First time visit! My friend has been talking about visiting this place for a while after watching a documentary recently on mushrooms. We finally decided to visit and check it out. I enjoyed myself. Not only can you buy mushrooms but you can also see how they grow, get information about the different kinds they offer, look through the cook books, get some recipes and even buy different mushroom themed gifts. I also love how they have artwork from various local artists for sale. Overall a great educational experience.

Just got a handful of goodies from this awesome mushroom centered shop. I haven’t tried the chocolate or the tea yet but the jerky was awesome. One piece of jerky leaves a lasting taste in your mouth that is mmmmhmm good. Great flavor and what a good meat substitute. I’m excited to learn to cook with some mushrooms Great spot to get unique food and to support a meatless diet!

Fantastic place. Stop in and look around at all the mushrooms, growing areas, art, and shop items. Avery is a great person and very knowledgeable about mushrooms and growing mycelium. The shop has products including mushroom tea, coffee and chocolate, fresh mushrooms, mushroom jerky, and even powder and extracted forms of mushrooms like lions mane. Whether you are looking for tasty food mushrooms or health benefits, this is a good place to come by and buy stuff

I visited the shop last week and had the opportunity to meet and chat with Avery. I purchased some beautiful oyster and shitake mushrooms to make the shepherds' pie after watching the video. It was very delicious and easy to make.

This hidden gem is a place worth checking out, they grow their own mushrooms that you can actually observe through little windows, and their merch is awesome. They even have events! Overall, their products are awesome, the people are awesome and knowledgeable, and I would 100% recommend anyone to go! 💚🍄
