Coltelleria De Paola Massimiliano

I was visiting Rome for a week and brought two folding EDC knives with me for sharpening. I had randomly found an incredible little knife shop (coltelleria) many years ago in Florence and wanted to find something similar in Rome. After some google searches I picked Paola’s shop mostly because of its convenient location (15 mins walk to where I was staying). I showed up at his store at around 4:00 pm on a Tuesday and showed him the knives. One of them (a SOG Tomcat 3.0) had a small nick. The other one (CRKT Largo) was not damaged but pretty dull. Paola said no problem and told me I could pick it up the next morning. I may be wrong but I think he does the sharpening off site hence the overnight service. The shop is super small and I couldn’t see any sharpening machines. Regardless, I went two days later to pick up the knives and they were done. The edge on both knives looked amazing. The nick on the SOG was gone and both knives cut through receipt tape easily. The best part, 2.50 Euros per knife. Needless to say, I highly recommend this place for sharpening. He also has a decent collection of kitchen knives and various scissors for sale. I didn’t see any folding or fixed blade EDC’s.

Le forbici erano vecchie, arrigginite, non tagliavano neanche il burro 😱... bè... sono tornate nuove... tagliano come non mai... anche i millimetri di stoffa rifilano alla perfezione qualsiasi cosa. BRAVISSIMI...! ARCISUPERMEGAIPERULTRA CONSIGLIATI...! VERI PROFESSIONISTI CON A++++++++

5 stelle non bastano! Ho portato ad affilare un coltello la cui lama era veramente messa male ed hanno fatto un lavoro eccezionale, sembra uscito nuovo dalla confezione. Il tutto a soli €2.50. Bravi e super economico. Per non parlare del fatto che il negozio è veramente fornito. Super soddisfatto

Dovevo affilare dei coltelli ed in base alle recensioni ho scelto loro.( Si, sono 10 anni che faccio il cuoco ed ancora non avevo qualcuno di fiducia.) Ho ritirato oggi i miei coltelli e devo dire che sono stati una scelta azzeccatissima! Ho ritirato coltelli completamente rigenerati e dotati di un affilatura perfetta. Inoltre essendo loro in prati ed essendo bravissimi mi aspettavo almeno 5 euro a coltello. In tutto ho pagato 30 euro per 15 coltelli!!! In parole povere consigliatissimi! Professionali, bravi ed onestissimi! Il negozio è piccolo ma fornitissimo tornerò sicuramente. Lunedì stesso ho intenzione di portargli altri coltelli.

Coltelleria storica che sa stare a passo con i tempi(e a che passo). Oggi mi sono recato in negozio per comprare una pietra nipponica,oltre ad averla trovata ad un ottimo prezzo,sono rimasto colpito dalla vastissima scelta di coltelli professionali giapponesi di ogni prezzo e tipo. Il proprietario ha saputo spiegarmi molto bene le differenze degli acciai e metodi dì forgiatura(una rarità che in altre coltellerie romane non si è verificata). Consiglio vivamente in negozio a tutti i professionisti romani!

Efficienza, serietà e precisione, contraddistinguono questa attività di vendita in manutenzione coltelli. Abitualmente mi rivolgo a loro per un consiglio, acquistare o sostituire i coltelli e le forbici mio possesso.
