Mark Bittman Is Opening a Sliding-Scale Restaurant on the Lower East Side | Eater NY

"Framed as a sliding-scale social experiment, this Lower East Side restaurant opens September 19 inside the Lower Eastside Girls Club, led by executive director and food-justice advocate Rae Gomes with chef Mavis-Jay Sanders, the 2022 James Beard Award-winning chef of Philly’s Drive Change (with experience at Blue Hill at Stone Barns and Untitled). Multi-course dinners run $15 for neighborhood folks, $45 for those paying closer to cost, and up to $125 for those contributing more—no questions asked, no policing—with half the seats reserved for local residents at the $15 tier; reservations go live September 17 for the neighborhood and two nights later for the public, and dinner is served Wednesdays through Saturdays. The space repurposes an unused bakery—honeycomb-tile floors, an old-fashioned display case, and a counter replaced by a bar—with a full kitchen tucked inside the nonprofit, and an entrance mosaic of the neighborhood made from shards of prior Girls Club locations; inside aims for a high-end dining room “minus the attitude,” with custom-built tables, Jono Pandolfi ceramics, and Michelin-level service without pretension. The menu is a single, seasonal, several-course offering (mostly plated with a few family-style dishes), with a potential vegan alternative. Launching as a pilot through late November, the team is testing the menu and the model while building relationships with neighbors; the mission centers on prioritizing BIPOC farmers using agroecological principles, treating workers well, and universal accessibility—including a plan, per the Times, to create 80 jobs and pay each worker over $32 an hour—backed by an advisory board that includes Alice Waters, José Andrés, Marion Nestle, Saru Jayaraman, and Karen Washington; ideally, Bittman says, half of diners will pay $15 and the rest will split between the middle and higher tiers." - Melissa McCart

I’m not a fancy food small portions type of guy! But because they have a sliding scale menu and they are local, we gave it a try. Delicious food, 9 courses of small portions of different flavors, delicate taste. Great service! Nice people and an interesting experiment. Looking forward to bringing guests that come to visit in the future.

I ate at The Community Kitchen Restaurant on Saturday for dinner. The nine course dinner was not only delectable, but meticulously presented on each plate. The servers were attentive, knowledgeable, professional, and gave impeccable service that was seamless. Every aspect of the dining experience was perfected, including the greeting, the cleanliness of the dining room, and the pacing of the courses. The experience is tailored to the guest making them feel welcomed and valued. Anyone who wants to experience fine dining at its best, I highly recommend making reservations at The Community Kitchen. I hope The Community Kitchen becomes permanent, because Mr. Mark Bittman who is the founder has created a phenomenal restaurant that is needed in New York City.

Community Kitchen is such a special place. All the waitstaff were incredibly friendly and personable, which made the experience warm and welcoming from the moment I walked in. Their mission is beautiful: making fine dining accessible to everyone!! I love that idea, because everyone deserves to feel special and to have access to cool, fun food. Every dish I tried was delicious, but the standout for me was the chicken broth with the cured egg yolke. You can tell a lot of thought and care goes into the food here. I highly recommend visiting, and I really hope this is just the beginning of many more projects like this. 🩷

This is a comment on the concept. I tried booking a month out and there are no reservations available except for the top tier price. If you're going to limit the lower tier (and I don't know how limited) isn't the tiered pricing more a gimmick than reality?

What a unique and refreshing concept. I would recommend anyone in the area to visit. The restaurant is focused on training and providing practical skills and experience to its young staff, so its great knowing we are supporting its mission. If you visit, I would plan for a 3 hour visit. This is a multicourse meal, and due to the training aspect - meal service is slower than what you would expect from a ramped up kitchen. Be patient! I appreciated each dish and its subtle and distinct flavors. I could not find any fault in any of the items served to us and we had a great time. Our favorite was the corn "pudding" which was more of a savory soup!

This is the place if you want an extraordinary meal, served with attention to every detail, that includes the most unusual dishes, at reasonable prices -- you specify what you can afford -- this is the place for you. I may have had food as delicious but I have never had food that is this interesting and unusual, many delectable small dishes leaving me satisfied and delighted. On top of this, you can easily make friends with your counter or table partners and have a memorable evening from every possible aspect. We were among the lucky few able to get seating. This is not just a great dinner, it is an unparalleled dining experience. I fervently hope that it can be continued over the long term.
