Austin Bakery Pop-Up Custard Prison Makes Polish Doughnuts Paczki | Eater Austin

"An Austin-based pop-up bakery showcasing Polish baked goods, led by baker Sarah Foremski and a small co-op team that includes Becky Reeves, Mari Maki, and chef Paul Wojciechowsk. The operation specializes in paczki — lush, dense yeasted filled doughnuts that are fluffier and richer than typical brioche-style doughnuts — with adventurous flavors such as maple custard with a salty butter-maple glaze (topped with whipped cream and a cherry), pistachio–white chocolate ganache, rose-glazed strawberry jam with glitter, and blueberry compote with a malted sugar coating; past pop-ups have also included pierogi and other savory items. Foremski draws on experience as a former barista and pastry chef (having worked at places like Little Owl Coffee, Canje, and Epicerie), and both she and Wojciechowsk are Polish, which influences the menu and approach. The team runs regular pop-ups at local venues (including Fleet Coffee) and markets — most recently participating in a Houston fundraiser — operates with a community-minded, co-op ethos focused on shared work and benefits, and has been active fundraising for Palestinian families; they prefer cash at events, provide donation options, and are working to secure a commissary kitchen to make pop-ups more consistent. Our first time trying Connie’s…it was fantastic! Quick service even though they were busy. The custard was super smooth. I liked that they had a bunch of different options of items to add to your ice cream, or just have it plain. I had it plain, and it was delicious. My partner had the banana split, that was very good as well. I felt like everything was priced pretty fairly as well. Definitely would return again!!

The custard was phenomenal. Especially the salted pretzel. Their shakes are very generously sized, the sundaes are splendid. Cannot find a thing. I did not like about this place. Will come here again and again, even though it’s 30 minutes from my house.

Stopped in today for the first time and was super impressed with both the custard and the service. I had a small lemon frozen custard that was so delicious and refreshing! Apparently lemon is only offered on certain days so I decided to try that first. It had the perfect balance of sweet, rich creamy custard with the taste of fresh lemons. Even the spoon was remarkable. It was a very nice quality plastic spoon with no sharp edges. Most fast food or ice cream places provide the cheaper plastic spoons that can be a little sharp around the edges. Not so at Connie's. The delicious custard and quality utensils were great but the top notch Service provided by the young man at the window (think custard concierge) sealed the deal in ensuring not only will I be back on a regular basis but I will also be bringing friends.

I have to say, I am very impressed. It has been a while since I have been in an ice cream place like this. Out of my son's beautiful girlfriend's invitation, we made a quick stop here. Although the parking issue was the only setback, the service, atmosphere, and custard flavor combinations make up for this place's unique and nostalgic feel. It was our first time, but it won't be the last. Two traditional custard flavors, vanilla and chocolate, with a variety of good old-fashioned or modern combinations that will satisfy the most demanding of customers. The best experience was the welcoming interaction with the lady at the register, who I assumed was the manager or maybe the owner. Yet everyone else seemed happy working with a smile. Even on a cold and weathered day like ours, the place seemed reasonably busy, and I can attest to why: a wonderful product served in a nostalgic atmosphere by patrons who care. Lovely.

It was my first time going there ... they have a lot of options really hard to choose from as well you can create your own. I had the Almond delight I believe its called it was prefect not too sweet with the crunch of the almonds and coconut. I will definitely visit them again.
