My wife and I have dined at Conserva several times now. Last night was their inaugural Tapas 101 night, a five course tapas menu paired with Spanish wines, sherry and a Basque cider. While Challis cooked and spoke on the meaning and culture of tapas food, Dillon assisted him as a sommelier, enthusiastically speaking to the terrior and provenance of Spanish wines, a fino sherry, and a Basque cider. The tapas selected and cooked by Challis were delicious. Even a several page guide with a map of Spain was at each table for our use - we took ours home and will archive it.
It seems this may be but the first in a tapas series, and I encourage anyone not familiar with it the cuisine, or even if you are, to come to Ludlow and enjoy the ambiance and care Challis, Lauren and Dillon have put into such an evening. This is not just a restaurant in Ludlow, but part of a budding nucleus of a community of like-minded people enjoying a cuisine and atmosphere conducive to conversation and joie de vivre, or as the Spanish might say, "alegría de la vida?"
You can not find more passionate hosts that Lauren and Challis. Their friend, wine sommelier Dillon, radiates an infectious enthusiasm expressing his comprehensive wine knowledge. Cheers to all who read this!
