I recently dined at Copal on a Sunday afternoon after seeing multiple social media posts about their Vegan-friendly options. When we arrived, I wasn't sure if the restaurant was open as the parking lot was empty. Walking up the stairs and approaching the front door, it was clear that we were stepping into a very much open, welcoming, and vibrant atmosphere. The decor is colorful, modern, artistic and inviting. There was only 1 other table of guests when we first arrived, but it was in-between lunch and dinner to be fair. Our server quickly welcomed us and gave us time to look over the menu. Chicharrones, with a roasted green chile salsa and a creamy avocado lime sauce on the side were brought to the table. The Jamaica Agua Fresca was delicious, not too sweet, with more complimentary notes of citrus than spice. The Margarita was said to taste fresh (No sweet and sour mix) and made your lips pucker, which apparently is my mother's telltale sign of a good margarita. I had seen recent social media posts about their Vegan options, but was surprised to find mostly Vegetarian options highlighted on the menu. The server advised that they did have Vegan menu items coming soon and the kitchen would be happy to prepare them, though not yet on the menu. She recommended the Mushroom Aguachile Tower. My dining companions chose meat options including a 50/50 Carne Asada and Birria Cheese Crisp, and the Pastel Azteca. We shared an order of Elote Ribs with the queso fresco on the side as an appetizer. The food was beautifully presented and even more delicious! Portion sizes were large leaving us all with a stack of leftover containers to take home and enjoy later as we left the restaurant. The service was excellent, staff were informative and accommodating, and the food was truly a contemporary, fresh take on classic flavors. I look forward to my next visit.
