Google
First time here. We were looking for a steak with a Mexican twist and found this place. Very interesting and unique menu. Fantastic service ! (Evan was our bartender and server and she could NOT have been better!). Fun and lively atmosphere but you can still have a conversation. Got here early and it was slow But by 6pm it started filling up and they served a party of about 30 people for a birthday celebration and they definitely had a good time. Food and cocktails were great!

Great experience at Copal on a quiet evening. The ambiance attracted us from Broadway with the cute light decorations calling out at the traffic passing by. Sat down for some delicious spicy shrimp appetizers that my wife couldn’t get enough of (chupate los dedos). Excellent, friendly service, and some flautas bañadas that were crispy, delicious, and filling. The side of rajas was divine. Barrio beer on tap, great atmosphere, we will definitely be back. Couldn’t get enough of the Cilantro Habanero salsa, not spicy at all, but packed with a creamy lime flavor that was unbelievably succulent.

Google
Awesome place! They have authentic flavorful mexican food, fresh ingredients. The service was prompt and very friendly. The atmosphere is very relax and good ambiance music. I'm guessing it could get loud because they have a bar but when I was there it was fairly quiet, good to have a conversation with friends. All in all, we had a great time, food was excellent and the service was very friendly. Amazing place, I recommend 💯

Small business trying to survive in a corporate world. It was very welcoming. Great happy hour. This was our first time and were treated like regulars.

Google
This was our first time at Copal. From being seated and served we felt taken care of. Every bite was full of flavor and those house made chicharrones and guacamole were so good. I had the quesobirria tacos and they were so good and full of tasty meat and cheese. I tried the flight of margaritas to try different flavors and they were wonderfully balanced and delicious. Especially the Strawberry one. The environment was fun and food was fantastic. Will be back to try more things!

Google
Amazing meal at Copal! It was my first time, and I enjoyed my meal. I had the Chicken Pa-Ti and the sauce was AWESOME! Paris, the bartender was great - very happy and personable, but she makes the best drinks. Best meal I've had in a while.

Google
We came to Copal to give it a try for an early dinner and we were so impressed! Josue was our wonderful server and he recommended: the Ribeye Aguachile, the Pastel Aztecs, and the Chicharrones. We also ordered the Elote Ribs and Tortilla Soup. Everything was amazing! The best item, hands down, was the Pastel Aztecs, but you cannot go wrong with any of the items we tried. Josue was very attentive and helpful as we decided what to try. He also recommended Elote Ice Cream, which was very unique and tasty. It was a great experience all around! If you are not sure what to get, make sure you ask for Josue to be your server, and he will make sure you leave happy and full :)

Google
If I were to summarize I'd have to say Copal is simply... Spectacular. It would be hard to go more than a block in this town without finding some sort of Mexican restaurant but Copal has shown that attention to detail and quality over quantity is what really matters with any culinary experience. When you enter it's like you've stepped through a portal and into a vibrant Vegas casino. The ambiance, decor, food, and excellent service, all come together to show how much care and pride, this restaurant boasts. When I visited for the first time, there was an event being hosted here and the group was very large and quite a lively and demanding bunch. Even so, every single staff member we interacted with was kind, helpful, and made my friends and myself feel very well taken care of and the food definitely arrived faster than expected. I will certainly be back again to try more of their menu items but everyone in my small group agreed that they haven't had such an incredible experience at a Mexican restaurant in a very long time.

Yelp
For being busy with a wedding group the staff did an amazing job! Came here for lunch with co workers as we ended up in Tucson. I got the flautas banadas with no onions or crema and a side of French fries. I believe it was Paris that helped us and she was super sweet and attentive. She did apologize for the wait but it was not bad at all. I came with 4 other co workers and w3 had a great time chatting and eating our appetizers. I enjoyed my good as did everyone else. I would recommend checking it out! Its very pink and pretty and vibrant!

Yelp
Very good food, and the staff was so friendly. We got there at 3 just in time for Happy Hour, $2 off appetizers and drinks. We had the ribeye aguachili and it was amazing the flavors were so good. Then we had the ceviche tostada trio, wow ceviche on fried shrimp so awesome, never eating tostadas any other way. LOL We had a few margaritas and a Paloma that were nice and strong. Such a great spot, definitely show them your love.

Yelp
We had dinner at the Copal tonight. Couple of cocktails, and appetizer and a couple of entrees. First time dining there and we were looking forward to it. Staff was friendly polite and attentive. The resterant was clean and presented well. The atmosphere was relaxed and laid back. Now the issue - The price point on the menu items were what you would expect for a higher end dining experience. The speed of the service and the portion sizes just did not match the premium pricing. Both the entrees came out warm, not hot. My entree, Pollo la Fuego, was three small chicken thighs with three slices of radishes, three slices of carrots, a pinch of micro greens, some guacamole under the thighs and a sauce covering the plate all for $25. The dish just did not justify the price and the almost room temp serving state definately made it fall flat. All and all we were just sadly disappointed by a resterant that we had been looking forward to enjoying. We will not be returning or referring anyone.

Yelp
After two trips to Copal I can tell you this much- the service leaves much to be desired but what's lacking in service is made up for in flavor. Both times we have gone was for an early lunch and it was what one would say "slow" - only 2 or 3 other tables. We had to ask about our drinks multiple times. But once they came they were delicious. The margarita flight is a great value and let's you try 4 flavors. The tostadas bandañas were the perfect portion size for lunch and the esquites as delicious!!! The queso fundido hits the spot - even without a protein. The elote ribs are also a great starter. Sadly they haven't had the barrio bread either time but I look forward to it. For dessert the elote ice cream is sometime unique in both taste and presentation. The gooey cake is gooey and incredible. The vibe inside is fun and full of neon and murals! There is an outdoor pet friendly grassy spot and seating with oversized games which is fun! Good spot for food but definitely be ready to check on your plates and drinks.

Yelp
Tasty spot for dinner if you're looking for a different/modern take on Mexican food on the east side of town. We've been twice and have enjoyed our meals both times. Instead of chips, meals start with chicharrones which are a nice twist and not too heavy. Thoughts on what we've tried: - Elote ribs: Good, but as other reviews have mentioned, a bit difficult to eat (can get messy). - Queso fundido: We added pork belly, good for sharing, on the heavier side for appetizers but the melty cheesy goodness with the saltiness of the pork belly went so well together. - Ribeye Aguachile: Even though it's an appetizer, I got it as my entree at the staff's recommendation - it was worth it! My favorite dish we've had at Copal so far. The ribeye was cooked perfectly, and the tatemado salsa had a wonderful smoky flavor. - Ribeye Pa-mi: The rib-eye was also cooked perfectly, but prefer the aguachile preparation (above). - Pollo al Fuego: The chicken was tender; the adobo sauce is flavorful and the chicharrones and mushroom topping added a nice texture to the dish. Overall, satisfying meals though a bit on the pricey side, but would definitely go back.

Yelp
Bro date weekend we hit up the Copal! The place is very well decorated inside. We're told everything is scratch made. The draft beers were excellent even though the Buenavesa was tapped out. First was queso fundido with chorizo excellent, followed by elote ribs super tasty! The Tamarindo is home made and makes the margarita sing! Then the Camarones in garlic and ceviche tostadas! Words can't describe them just look at the pictures then treat your pallet. All the wait staff were fun to be with and make the place lively. First chance you get stop in for some neat drinks and tasty vittles!

Yelp
Came here on a Friday evening. Our bartender Josue was absolutely amazing! Give Josue a raise! He was so pleasant, so helpful with the menu, answered all of my questions about the restaurant, and even gave some great recommendations. I ordered the quesabirria tacos (came with the traditional broth dip, and a delicious cheesy dip). I had The Elote ribs (yum!) . And Josue made me two cocktails that were absolutely delicious. I definitely plan to come back and try some other things on the menu.

Yelp
I had the most amazing experience at Copal contemporary Mexican restaurant. Talk about aesthetically pleasing! This spot is absolutely darling and a designer's dream! Every inch is Instagramable! We really enjoyed our food. The pastel Azteca has the best flavor, very authentic. Our server Alexis was very friendly and helped guide us through the menu. Alex helped us with craft cocktails and was very personable. We also got to meet mom, Beatrice who is an angel and helped design the restaurant. Lots of inside and outside seating.

Yelp
Went here Friday night around 8pmwith my husband and was really pleased by the unique menu and moody vibrant colors. I was shocked it was so empty on a Friday evening. I was sad to see Pita jungle leave this location a while back and didn't care much for the restaurant that came after, but this one, I feel could be a good thing for east Tucson. The service we received was very caring and attentive. I ordered a lavender fizz I think it was called and I loved that our server didn't wait for me to tell her if I liked the drink or not, she asked and insisted on honesty. When I told her it wasn't my cup of tea, she did her best to rectify it. I also order the caldo de queso soup with chicken and loved it. It was both me and my husband's favorite thing we tried. In addition to that, he got the pastel azteca and I got the ribeye pa-mi. He didn't love the flavors of his order though I thought it was good. I also took a chance with the ribeye dish, not being a steak person. I thought it would be more flavorful and though the sauce in it was yummy, it was.. a lot. And not enough to always mask the flavor I wanted more of from the beef. The fries were good though. A cool thing about this restaurant is that they give you chicharrones w/ 2 awesome sauces upon being seated. I thought this was so different and both dips were so good. Only thing is that they were SOO incredibly crunchy, one would even argue too crunchy. Never had them that hard. If they took it down a notch, it'd be perfect.. at least to me lol! I could t leave without trying the elite ice cream which is exactly as described, but also pretty frozen and hard. Still edible though! The chocolate and strawberries were a nice touch and there was actually bits of corn which was interesting lol. Really cool to try. All in all I enjoyed the restaurant and would love to try more of their entrees. Yes it's a little on the pricier side, but portions were pretty big and for the service and value, I'd say it's worth it!

Yelp
Visited Copal for happy hour this week and had a lovely experience. I very much enjoyed the watermelon and cucumber jalapeño margaritas, and the Pizza Norteña was perfect to share. We ordered half birria, half care asada, and both were delicious. The space is light and airy, with fun decor and a friendly staff. I'll definitely be back.

Eric S.

Yelp
The atmosphere of this restaurant is well designed and welcoming. The service is fast and exceptionally friendly, and of course the food and drinks are 10/10 highly recommended!

Yelp
One of the best meals in Tucson! Eastsiders come check out this place! The decor is bright and fun and very unique. The uniqueness doesn't end there as their menu follows the same vibe. There are so many unique dishes to choose from. I tried the Pastel Azteca - which consists of grilled tortillas layered with chicken, peppers, cheese, and amazingness! I've never tasted a flavor profile like this. It is baked and I thought it might have the texture of lasagna, but it doesn't - it's somehow crispy and soft at the same time - it's magical! Trust me, just order it! The service was amazing - I was with a friend and we were so busy chatting and they didn't mind us taking extra time to order - they answered all of our menu questions and helped us with our selections with enthusiasm. This place will be on my east side rotation on the regular!

Yelp
First the ambiance is cool, a great vibe. The service was attentive and friendly. Everything was fast but it was mostly empty. The only problem was that they delivered the app with the meal. They start you off with pork rinds and two amazing sauces, I'd have that lime habenero sauce everyday. They brought their fantastic seasoned chips because my wife isn't down for pork rinds. We got the taco trio app with crispy pork belly, mushrooms, and burria. They were all great! Then we had their smashburger it was good but could've used a little more seasoning so I put that lime sauce on it and made it killer. We also had a Margherita and their Cuba Libre, both great, so much so I had 2. And to wrap things up we had their tasty gooey butter cake. We were stuffed and very satisfied at the end. We will be back for sure.

Yelp
I decided to try this place out on Saturday afternoon. Pleasant open atmosphere with a nice large full bar area. Seats at the bar were pretty tight. service was prompt at the bar. I started with a Jack and Coke with Chips and salsa. Chips were tasty so I tried their signature Rajas dip appetizer with heavy cream, layer of cheese, and poblano slices mixed in. it was kinda bland so mixed in the salsa. The appetizer took lil bit to get from kitchen, apparently restaurant was short staffed for number custOmer's this day. I was reassured Dinner staffing is better. Definitely worth a stop in and try the food.

Yelp
Food was excellent presentation was beautiful Service was okay place was super slow and we waited a very long time to get order taken and served although the waitress was super sweet Ambiance was nice very very clean and super organized The bar was well stocked

Yelp
Amazing food! So beautiful and delicious. Second time here and will go back. Sauces are rich tasting, food is beautifully presented.

Yelp
My partner and I went to Copal one evening when neither of us felt like cooking. We were greeted and seated promptly next to the bar area. Copal has a fun vibe, and they had live music the night we were there. We could converse over it, which is something I appreciate. We were excited to see quite a few vegan and gluten free options in the menu. We started with elote ribs, which were amazing! Loved the tajin, cilantro and queso fresco topping. We then ordered the queso fundido. It was a bit salty, and we could have used a few more tortillas, but it was both tasty and filling. Finally, we got the cauliflor trufada that was prepared in a way that tasted too much like meat to me, but my partner liked it. We definitely will be back for the elote ribs and to try some of the other menu options.

Yelp
If the prices were more reasonable this would be a solid 4 stars or more. This for me just inches into 4 stars, barely. This was a nice stop. A little expensive. The cocktails were amazing. Enjoyed a happy hour. Ordered shrimp (Camarones Al Ajillo). I felt the shrimp a little small for the price. Enjoyed the Queso Fundido with pork belly. Very nice. Pork belly was delicious and the queso was nicely cooked. Had a chicken dish marinated in our house adobo, served with tortillas, pickled onion, and guacamole and micro green. It was nice. Beautifully plated. Rice was ok. All very enjoyable. Not spectacular but enjoyable. I did not like the prices. $26 for very little chicken. So I will have to reflect on returning because of the prices.
google avatar

Alex B.

Yelp
We were one of only 2 tables there which is really unfortunate as the food and drinks were really good. Very good chips and salsa and chicharrones available on request. We're visiting from California so we found the prices for what we received to be very reasonable, but we haven't been here long enough to know how they stack up here, but the food was the best Mexican we've had in a long time.
google avatar

Laurie C.

Yelp
We came to Copal for lunch with a group of 10. Our waitress Alexis was fantastic--very welcoming and had the table all prepared for us. The decor is a cool "Mexi contemporary" and the food was good, not great but good in a city full of outstanding Mexican restaurants. It was surprisingly quiet for lunch. The restaurant is out of the way and a bit hard to find so I'm wondering if that is the reason.
google avatar

Rebecca I.

Yelp
The vibes, super fun. I love the neon signs and colors. The margarita flights are also super good as well as all of the appetizers. There is a soup that other I was with wasn't a fan of, extremely salty was the complaint. Also the service was rather slow but maybe it's because the place is new!
google avatar

Berkedei K.

Yelp
We finally made to Copal for supper last night and can't wait to go back again. I love the decor and vibrant colors although the classic rock music really did not go with the ambiance. We went for early supper at around 4:30 PM and our server seemed to be bartending as well as waiting tables and she did a wonderful job. She was friendly and attentive. The house made chips were tasty, as was the salsa Verde. We weren't fans of the crema. Barrio bread was perfection. We did not care for the poblano butter though, felt it was just meh. I got the Pastel Azteca and it was delicious! It was so good it will be hard for me to try anything else there when we go back! It was plated beautifully as well, wish I would have taken a picture. Hubster got the flautas banadas. He enjoyed them, I thought the chicken inside seemed a little dry personally. I regret not saving room for dessert!
google avatar

Traci G.

Yelp
Ambiance was vibrant. The service from our waitress named Paris was WONDERFUL!!! The food was amazing starting with appetizers of corn ribs smothered in cojita cheese, the fundida cheese with mushrooms and even chips and salsa are homemade fresh every day!!! Then a grilled salad with shrimp soaked in the most yummy butter sauce...best salad I ever had!!!
google avatar

Yelp
This is the second time we've been here and both times were great. The first time we went with my mother who uses a rolling walker. Most staff have no idea what to do about it and the chairs. The hostess knew exactly what to do. She gave my mother the option of the chair or her walker and then moved the chair right out of the way. No problem. Most people just stand there with the chair not knowing what to do as they look back and forth between the chair and the walker. She gave my mother plenty of time to get settled and never tried to yank anything away from her. Tonight, we were mother free, and our server tonight was Paris. Paris is great. She was very patient with my indecisive husband. The staff there want to make sure you enjoy what you order. Paris was willing to take the time to make recommendations and explain the menu. The food was great both times. It's different, interesting (in a good way), and beautiful. I usually smirk at people who have to take pictures of their food before eating, but my lavender Collins was so impressive I had to. I even took pictures of our dessert and sent it to my friends. I saw several other dishes I want to try, so we'll definitely be going back.

Yelp
What a beautiful place to enjoy a delicious meal. We were the only ones in the restaurant for lunch which was sad. That being said, the service was wonderful. Our server said that they may start closing on Mondays since it was that slow and many Mexican restaurants are closed on Mondays. We were offered chicharones and salsa when we sat down but since we don't eat pork they brought chips and three types of salsa; red, green and white. All were fantastic. We both ordered tortilla soup which is vegetarian but we added chicken for the protein. Excellent soup. For dessert we split a flan. That was disappointing to me. Maybe it was a regional recipe. I personally like my flan to be more on the creamy side. This was just ok. All in all, it is worth a return visit.
google avatar

Lori C.

Yelp
Great new place - I had the cauliflower and my husband had the ribeye. Both were delicious. The lavender Collins and mango margarita ere also fantastic.
google avatar

Erika J.

Yelp
Everything was very flavorful. The service was exceptional. The decor was impressive and relaxing. A bit on the pricey side, but you pay for quality I guess. The bar looks like a great spot for a date. Definitely recommend this place!
google avatar

Maritza O.

Yelp
The food, service, and ambiance was amazing. We got amazing recommendations from our waitress Paris who has amazing energy and personality. We would definitely return just to have her again!
google avatar

Lusy D.

Yelp
Copal is a great new spot in Tucson. The inside of the restaurant is spacious, and it has super fun, lit up decor. We went on a Saturday afternoon and it was pretty slow. We both had the taco sample platter which includes 3 proteins and tortillas. It was definitely enough for the 2 of us, and you can add more tortillas if you need. Additionally, all the servers were very kind and they all checked in on us. Even the chef checked to see how we were doing. We ended the meal with elote ice cream which is a definite skip for me. It had frost burn and it barely had a corn flavor. Overall though, the food and service was amazing and I would come back!
google avatar

Kathryn W.

Yelp
First time, good experience. Service was really good we came for early happy hour and our server was fast and friendly. Food was good, happy hour prices helped. Favorite thing that's not pictured is the Esquites - corn and peppers in cream sauce.. delish! Also enjoyed my $5 Mexican candy shot, hadn't seen it this way before! I like what they've done with the interior of this space. It's very bright and colorful with cool lights and neon signs. Also enjoyed the photo op flower wall outsidenice to try something new .
google avatar

Al L.

Yelp
Really nice lunch today with the wife...got the Mexican Pizza special which is more like a heavy cheese crisp than a pizza, but wholly cow it was tasty. Carne Asada & delicious marinated mushrooms along with all sorts of tasty goodies. The roasted chile salsa was amazing as well. Can't wait to go back & try some more of their food! Come check out this great new spot in the Williams Center!

Yelp
Four of us dined at Copal Friday early Friday [4/4] evening. Our seating location was next to a very "loud" foursome - obviously having a good time. Yet noisy enough to drown out the conversation[s] we were trying to have. the server [according to the receipt] was "caro v"; she tried her best but she was overwelmed because it seemed to me that the wait-staff was undermanned. Our food, which included Barrio bread, Quesbirra and rice along with Tortilla soup and wine, was excellent.
google avatar

Eileen S.

Yelp
What a beautiful fun place to eat at. Its interior is so vibrant. The food was wonderful. The service was amazing...knew the menu well, explained things clearly, were so accommodating, and very prompt. Definitely returning. We ordered the street tacos and quesabirria along with their rajas (corn/poblano side (mmmmm...wow)) were beautifully presented and so flavorful.
google avatar

Lorena G.

Yelp
What an awesome experience and I do t say this lightly! I value great customer service and they went above and beyond! Everyone was just amazing! From opening the front door and greeting us to the end! Bar tender was to die for, ordering was a breeze over cocktails, (very well made and yummy)! The Elote ribs are a must! You just have to order these! The queso fundido was delicious and well made. Truly enjoyed every single bite! Moving on to the main event. Hubs got the hamburger and it was fantastic, tasty, juicy and delicious! I ordered the pastel azteca and it was upper tarty and well made. Tortillas were nice and crispy bringing on some texture. Will definitely return and enjoy the place! Clean and very well managed!
google avatar

Kim L.

Yelp
I stopped in with friends after wine tasting at George Wine Shop, otherwise we def. would have had a flight of margaritas! We just had some appetizers - the elote ribs, the warm barrio bread with chili butter - which was just to die for, caldo de queso, and queso fundito - all were excellent, the elote ribs were difficult to eat, so it really just a couple of bites of corn, but we loved and we saw the margarita flights coming out, and definitely want to try them next time! The interior i super cute, and service was very good! The food is from all different regions of Mexico!

Debbie W.

Yelp
This place is very clean and decorated very nicely. Our server was very knowledgeable and steered us in the right direction. We sat outside on their beautiful patio and I had Pastel Azteca and a Blueberry Lemon Mocktail. My friend tried the Quesa Birria tacos. We both thoroughly enjoyed our food. Will definitely go back!
google avatar

Mildred O.

Yelp
It's a fun and brightly decorated interior, located in the old The Dutch. It's still their soft opening so they still have a few kinks to work out. The hostess was friendly and welcoming. The food was good, but the tortilla in my Pastel Azteca couldn't even be cut through the bottom layer. My family really enjoyed the large Chapo Burger. We also ordered blended margaritas and was told there was no blender and their grand opening is coming soon. The server was nice and was trying, but our interactions were awkward. Once the blender arrives and some more targeted training of servers, I feel they will do really well.
google avatar

Colleen H.

Yelp
Lucky find for delicious, fresh, real deal Mexican food. Copal had a "soft grand opening this week before it's GRAND RE OPENING next week. What superb authentic Mexican dishes. We enjoyed the shrimp and carne asada taco plates. And the freshly made GUACAMOLE is a must por favor!! Russ, the head bartender was also our waiter and he made our first time visit super fun. It really is "Food to Die For." Margarita taster? We loved the Tamarindo!!!!!

Yelp
Immediately greeted upon entering around 1pm on this Saturday afternoon. I had a break from work so I thought I'd give it a try. I ordered a Taco combo: pork belly, jackfruit birria and grilled shrimp with a side of cilantro rice. They were all sub par but the jackfruit was greasy, really oily like, not sure what that was about. Even red onion, cilantro and lime didn't enhance any flavors. I also had Jamaica Lemonade and it was delicious, not too sweet. It was a nice quick lunch but I wasn't wowed. The dining room was pretty empty but there were 3-4 others at the bar upon entering. A large party came in while I was eating but they were seated in the dining area. The restroom was clean and stocked.

Beth C.

Yelp
Staff was welcoming and friendly. We were seated immediately and given water and menus. I got a classic margarita that was well-balanced with salt, tequila, and lime. My husband said his burger was amazing and the side salad with arugula and fresh vinaigrette was great. I got the pollo al fuego and the sauce was amazing! We had the elote ice cream for dessert and it was so different and yet so tasty. Thanks to our server for the recommendation. The space had great lighting, bright decor, nice spacing between the tables, and quiet enough so you could carry a conversation easily. It was 5pm on a Saturday night. I can't wait to return and try some more menu items!
google avatar

Yelp
Copal is a relatively new player in Tucson, and it nicely rounds out the spectrum of Mexican cuisine here, offering an innovative menu that gives flair to traditional ingredients. The Pastel Azteca is delish, with savory strips of rajas as the star of the dish. We'd planned to try the salmon croquettes and potentially the pulpo, but both were unavailable on the night of our visit (a bit of a challenge, given that it's a small menu to begin with). We went with the wild-mushroom medley instead and received a substantial portion that was excellent. We topped that off with gooey butter cake. I'd suggest renaming that dessert, in that it is not anything close to a standard gooey butter cake by either texture or taste, but it was still a wonderful cap to a good meal. The margaritas are great as well, and the whole restaurant has a hip vibe reminiscent of Phoenix or San Diego, with vibrant, modern murals and lighting throughout. It's an energetic see-and-be-seen place that's sure to evolve!

Yelp
The atmosphere is fun and bright. I was a little surprised that it wasn't busier for a Saturday evening. The service was also friendly and very quick. The food was also great.

Yelp
Cadillac watermelon margarita and mezcalita. Both drinks 100/10. I found this place here on yelp with one review. We decided to check it out and discovered to be its soft opening! The grand opening is July 17th! I HIGHLY recommend checking this place out. The environment and atmosphere is amazing. We felt comfortable and relaxed and even got to speak with one of owners! Looking forwards to returning on the grand opening! I have to try the bone marrow luge!!!

Yelp
The drinks were spot on and the vibe of the restaurant were great. We ordered the queso fundido and elote ribs for appetizers. The elote ribs were amazing. They had multiple flavors happening with every bite. The queso fundido was average. The entrees were not impressive. I had the chicken thighs which were served in this heavy cream sauce. The chicken was highly over cooked. The cabacitas were drowning in he same sauce that drowned the chicken. The two other dishes had copious amounts of cheese. Overall, the food was not worth returning. I was very excited for this restaurant but there is work to be done.

Yelp
I recently dined at Copal on a Sunday afternoon after seeing multiple social media posts about their Vegan-friendly options. When we arrived, I wasn't sure if the restaurant was open as the parking lot was empty. Walking up the stairs and approaching the front door, it was clear that we were stepping into a very much open, welcoming, and vibrant atmosphere. The decor is colorful, modern, artistic and inviting. There was only 1 other table of guests when we first arrived, but it was in-between lunch and dinner to be fair. Our server quickly welcomed us and gave us time to look over the menu. Chicharrones, with a roasted green chile salsa and a creamy avocado lime sauce on the side were brought to the table. The Jamaica Agua Fresca was delicious, not too sweet, with more complimentary notes of citrus than spice. The Margarita was said to taste fresh (No sweet and sour mix) and made your lips pucker, which apparently is my mother's telltale sign of a good margarita. ‍ I had seen recent social media posts about their Vegan options, but was surprised to find mostly Vegetarian options highlighted on the menu. The server advised that they did have Vegan menu items coming soon and the kitchen would be happy to prepare them, though not yet on the menu. She recommended the Mushroom Aguachile Tower. My dining companions chose meat options including a 50/50 Carne Asada and Birria Cheese Crisp, and the Pastel Azteca. We shared an order of Elote Ribs with the queso fresco on the side as an appetizer. The food was beautifully presented and even more delicious! Portion sizes were large leaving us all with a stack of leftover containers to take home and enjoy later as we left the restaurant. The service was excellent, staff were informative and accommodating, and the food was truly a contemporary, fresh take on classic flavors. I look forward to my next visit.

Yelp
In a city of innovative Mexican food, COPAL is a giant leap above. Grilled Cauliflower was bursting with flavor, Pastel Azteca with chicken was inspired, must have the Gooey Butter Cake for dessert and at least one Margarita, a real Margarita--not frozen sugary foo foo. Ask for Josue to make recommendations. He and the staff are friendly and fun. This is my new favorite restaurant.
