I really enjoyed my big lunch today at Copal. I had the crab, the quelites salad with citrus, the little chicken a jus, and the ate for dessert. I also had a few delicious nanche cocktails and wonderful mezcal. The service was great; I felt like a queen. As a former cook myself, I can say that the talent and skill in the kitchen is very high and they care about what they are doing! I liked the Copal burning, as it contributed an herbal quality to the whole experience and it felt like a dream - but at times it was a little overwhelming and felt like I was getting ready for a temezcal 😉. Maybe a lighter amount of copal would appeal to more folks? In any case, I want this place to be successful- It is an interesting, exceptional restaurant and I’m glad I stumbled upon it.
