"I’m super pumped for Copper Rose Bakery opening up in Edmonds. Casey Cooper is the Walter White of baking. He’s a legit nerd and thats what makes his baked goods taste so good. I have a feeling this place will have lines for days when it opens up." - Eater Staff

This place is new, and I've been watching it for a while and so glad it opened at this awesome location. We tried the snickerdoodle cookie, jam pastry, coconut macaroon, and blueberry muffin and take home savory pies to bake for dinner later. What I noticed about some of the baked goods is that it is lacking the massive amount of sugar you find at other places. That is a very welcomed surprise. Great job, guys, and I will most definitely recommend and come back for a visit

A delightful addition to the Edmonds scene. The first open to public day offered some delicious danish, still warm, flaky with a pleasant suggestion of sweet. There is a lot of potential here, and look forward to more offerings as they come into more of an established rhythm. Updated: after a few visits and really wanting to support and appreciate this bakery, there is too much inconsistency. One time the pastries were mostly over baked - past the point of dark browned, and another time the croissant was raw in the middle. Nevertheless I will periodically check to see how they find their rhythm and hope the best for them.

The Edmonds Cutter sandwich may be one of the best sandwiches I’ve ever had! Flavorful bread & sauce. The meat was deliciously smoky & and huge pile of it. This one sandwich left me very full for two meals, which is a great deal for $14

I went to copper rose for their soft opening this morning. The first of these two cinnamon rolls was delicious! The right balance between sweet & flavorful, flaky & sticky. Looking forward to my wife enjoying the second one. Friendly staff and a great location in downtown Edmonds. There is currently no indoor seating. It is located in Main Street Commons, west of Molly Moons & Johnny Mo’s.

1st visit to Copper Rose Bakery -- ordered a cinnamon roll and chocolate chip scone. Cinnamon Roll was subtly sweet (opted for the cream cheese frosting) and had a cloud like fluffiness. The scone had the right amount of crumbly without being dry. Overall nice and soft. Will definitely come back for bread in the near future based on the quality of the treats. Location is right across from Mollie Moon's back from the street Main Street). Visited on a rainy cold day and it looks like there are outdoor shelters that might be used for outdoor seating in the future. Looking forward to visiting again.

I have been eagerly awaiting the opening of Copper Rose Bakery and have not been disappointed! The baked goods are delicious and creative. So far so have enjoyed the cookies, danish, cinnamon rolls and pie. I got the mixed berry pie; the cherries in it added a great element of tartness to what can be a very sweet pie. The crust was one of the better crusts that I have had, it can be hard to make a flaky non-soggy bottom crust. Copper Rose always seems to be putting out new batches of baked goods. On my last visit they were bringing out fresh cookies. While I normally ride my bike, downtown Edmonds has ample parking for cars, and ADA accessable spaces. Copper Rose is a great addition to the Edmonds food 'scene'. I love their space, and the staff seem very nice. I am excited to see this place grow.

This is based on only one visit. We ordered two pastries: a butter croissant and a jam danish. I knew the second I touched the danish that something was off. We threw them away after two bites because they were inedible. The croissant was extremely overbaked and raw in the middle and oddly extremely salty. The danish was rock hard. Very disappointed in the waste of money. Other reviews mentioned inconsistency, so maybe they're okay sometimes, but we're not interested in going back.

Breakfast sandwich was delicious, as well as the oatmeal raisin cookie and cream cheese danish. Wonderful addition to the downtown Edmonds food scene.
