I live in the area and have spotted this cute food truck around many times, but only recently finally got the chance to try it out. My coworker (who lives nearby) and I decided to order some breakfast here on the way to work. We showed up around 8:45, and there was a bit of a queue (two people ahead of us), but they are speedy, so we got our food in no time.
Overall, it was really tasty and quite authentic imo, albeit a bit pricey (adding various ingredients like eggs and meat can cause the price to add up quickly). I think one extra egg makes for a good portion size, and I would recommend getting pork floss and one meat (the Spam is so yummy). For spiciness, the options do tend to lean mild, so the "regular" spicy is not really that spicy. Also, I still don't really know what the difference between the "original" and "jing style" jian bing.
Obligatory warning for cilantro-haters like me: they do include cilantro by default, but you can just ask them not to include.
Some other notes: they aren't here everyday (i.e. referring to the Court Sq location near the pharmacy), and I don't know where to reliably find their schedule online (Yelp/Google aren't consistently accurate). My friend says that he's in a WeChat group where the owner apparently announces the days he'll be open for business LOL.
They also don't take credit card; I paid with Venmo, and cash and (I think) Zelle is accepted, too.
Overall, I had a great jian bing here and would love to come again, but I might have to wait until I get lucky and see the cart when passing by (since I don't have WeChat lol).
