A Chile Road Trip on the I-25 from Las Cruces to Denver | Eater

"A long-running Walsenburg spot (open since 1957) where the Pollo de Colorado—fried chicken strips topped with a thick red chile—tastes like a Mexican schnitzel, comforting and substantial." - Gustavo Arellano

Google
I wanted to eat something healthy / gluten free and am a little picky. I got the tostada (chicken) and loved it - loaded with chicken, and felt like a clean healthy meal. Service was great and very friendly. Fiance had steak and eggs and also enjoyed. We are going back for dinner 😄classic diner atmosphere.

Google
The food was very bland no seasoning small portions of beans and rice. The rice was trying to hard. Everything didn’t have any flavor might go back and try something different

Google
Food was okay at best, service was decent. We both ordered the special, a burrito. We also got chips & salsa which you have to pay for. It’s a Mexican food restaurant, that should come with it, but hey I’m Texan. I got water and husband had a coke….it was in a plastic bottle. Total $32.50 I didn’t want my burrito smothered I asked for queso on the side. The queso had gone bad, we weren’t charged for it.

Google
Waitress was very nice and took great care of us. Atmosphere it's very welcoming and makes you feel very very comfortable. Salsa and nachos... Ok I have to say that again, THE SALSA omg. Way better than any other "high end" Mexican restaurant. Tried the Stake and it was magical, again, the salsa that comes with the stake it's just amazing! Only thing I did not like it's the tacos, when you walk in to a Mexican restaurant you expect REAL tacos, not the taco bell kind of ones. Although I would definitely return and keep trying everything from the menu.

Google
Very small portions, ice cream scoop of beans and rice then 6 pieces of steak & chicken. The beans had no taste very bland. We go camping at Lathrop so we wanted to eat some of the local food but never again. The sad thing is I owned a restaurant & bar in Thornton CO from 1984 to 1993. Now we are retired from our construction company.

Google
The food here was not as expected to say the least. My family and I came through on our way to a vacation and ate here this afternoon. The beans on one of our plates were dry, there was no flavor to any of the food, they don’t have a fountain so if you order Dr Pepper you get a bottle and have to pay for another if you drink all the bottle, and the added gratuity for a table over six isn’t properly calculated. We paid $60 for two people when all six of us divided the checks into three. This place not only charges ridiculously, but the food is subpar. I will never be visiting here again.

Google
The food was great! The houl experience was amazing, and the green sauce was a bit spicy but yet so flavorful. This place needs a 5 star review not a 3.5

Bryan Alire

Google
The sopapilla burger smothered in red chile is the real deal! Best I've had and I've had some good ones in New Mexico and Colorado!!! I'll be back every time in the area.

Yelp
What a great little spot! I was in the area for a family wedding, and wanted to meet up with some friends in the area. They suggested Corine's. We met for lunch. I am so glad I didn't eat breakfast. The food was delicious. The combination platter was so good. The servings were huge! The service was great as well. A definite great choice. So glad we went!

Yelp
Our group was so glad that we stopped here on our way through town. The customer service was excellent, and the food was delicious. The food came out hot to where it was actually bubbling.
google avatar

Yelp
Tasty food. Authentic green chile sauce. Big portions. Quick and friendly service. Reasonable prices. And ... the dining room was toasty warm on a cold Colorado night. Thanks, Corrine's! I'll be back!

Alys H.

Yelp
Updated: I do in fact have severe food poisoning on a roadtrip. This place absolutely sucks. Praying I don't get food poisoning, worst food I've ever had. The guy was nice though!
google avatar

Marco D.

Yelp
Home made and family values and friendly staff. We stopped twice on our way to Gunnison and back home. Lunch freshly made enchiladas delicious. Breakfast huevos ranchero the ticket.
google avatar

Richard N.

Yelp
The food was great. The green chili on the enchiladas was delicious. The staff was friendly and the food came out quick.

K R.

Yelp
Stopped and had chicken enchiladas and taco salad. Very nice and good food. Highly recommend!

Brooke B.

Yelp
Excellent food! Delicious made to order taco salad. Loaded fiesta salad with red, yellow peppers, red onions, jalapeño, guacamole, salsa, sour cream. Enchiladas in red chili sauce, both chicken & beef cleaned their plates! Chili rellenos shared among four of us was mighty tasty. Great service!

Yelp
I have been in the service industry for almost 30 yrs. I will have to say it's a cute place with good chips/salsa. The rest was less impressive for sure! My burrito had no flavor but the worst was how you received another margarita! Never in my life have I seen it being refilled at the table and putting a glass of ice under your arm near your armpit was the topper! I'm sure that's against the health code. Needless to say I will never be back!
google avatar

Ginny G.

Yelp
Really good beef enchiladas and tacos with green chilies...red sauce too hot for me. Service was friendly but overwhelmed with crowd this afternoon. Boss lady(?) stepped in and everything moved along a bit better. Great local place. Right up our alley!
google avatar

Mary O.

Yelp
Best Red Chili in town, they have all the usual Mexican items! Yummy tamales, enchiladas, and my husband and in-laws love the stacked enchiladas!

Shakira B.

Yelp
Expensive food for the portions. DONT WASTE YOUR TIME Asked for queso cheese on enchiladas and it was regular nacho chip dip cheese. We ordered guacamole and were given barely any a hand full of guacamole on the plate surrounded by chips. It was maybe only a spoon full of guacamole.
google avatar

Nicole F.

Yelp
Not great. The green Chile that was on the enchiladas was not really green chili , rather more of a grey gravy. There were the only place open in town unfortunately.
google avatar

Yelp
A hidden Gem. Three generations of family owned little Mexican food joint. Had the traditional Mexican steak plate and couldn't be happier. A nice cut of steak smothered in a Mole style sauce that had huge flavor. Good coffee and she kept my cup full. Really good food and service by the owner of the place.

Roseann L.

Yelp
The service was not good and the place was not busy. The waitress was not friendly or welcoming. The food was very expensive for the portion size. It tasted okay but not great. You have to pay $5.50 for the chips and salsa and it's a small portion. Do yourself a favor and do not waste your here!!

Yelp
Stayed at a motel nearby, so ordered food to take out--so I can't really comment about the in-restaurant service. We got three enchiladas and a taco salad. It was one of the best taco salads I've ever had. Overall, really great Mexican food and I highly recommend checking this place out if you're ever in the area.

Yelp
Have tried this place twice. Wanted it to be good but food is just flat out awful. service terrible. place smells like strong cleaner mixed with grease. A/c on high so prepare to be cold and have to smell this. Heard from a friend who applied to work here that this is a terrible place. stay away.

Steve S.

Yelp
We had a burrito supreme ($11 daily special!) and steak fajitas. Let's start with the burrito supreme. In a word, ginormous! The steak fajita were sizzling hot. Both meals were tasty and good portions for the money. Our server was sweet and taking care of a lot of tables simultaneously. We will be back!

Yelp
Very, very disappointing. When I saw a bedroom ceiling fan as the only source of lighting in the restaurant, I should have known we were in for a questionable dining experience. There's not much available on a Sunday night in Walsenburg and we wanted to eat out so we decided to go here. The waitress was nice but unfortunately didn't have a clue. We placed very simple orders. Seemed easy. Not! We got our appetizers very late. While we waited we observed our waitress appear to make multiple errors with other customers meals. Bad sign. Finally got our food. Not great. The checkout process was very painful. Mixed up receipts. Wrong charges. Total chaos delivered by our waitress. Let's hope when we get our credit card statement that we weren't double charged. While I would like to say COVID influenced this experience - I can't. Poor service. Poor food. Poor us. Poor Walsenburg.

Alexandra F.

Yelp
The BEST hamburger I have had in a while. We stop here always on our way out to the springs. Better than a $19 burger hands down.

Yelp
Hello everyone I went to eat at this restaurant tonight and I was not very happy with the taste of the food. The beans and the meat everything tasted like canned food there was no flavor. I had the jumbo combo and it wasn't good the tortilla shell on the taco was soft it wasn't even crunchy, they gave me avocado and it looked very old the burrito beans where gross the tamale was gross it tasted like frozen tamale they don't taste homemade. And lastly i got some sople pillas and they were not even crunchy they tasted old as well... I am very disappointed. One good thing was the staff they where really nice.

Yelp
if i could choose zero stars... i would. terrible service right off the bat. it's a small restaurant with few tables, yet no one could help seat my family and i. i wanted to walk out and find another place but an older woman had convinced me to stay for the "great" food. the food was well presented but not worth the time or money spent at all. our server had checked on us maybe twice and seemed stressed. I understand working in the food industry, it can be a stressful environment! but girl...theres like 6 tables in there.

Yelp
Wow... We've been on the road on an RV trip for nearly 5 months, and have eaten out in lots of restaurants in 7 different states... This dining experience was by far the worst! We ordered their Famous Guacamole Dip for an appetizer. It was priced at $9.99, so we thought it would be a good sized serving. It was about the size of a large ice cream scoop. Then I ordered the Fiesta Salad for $11.99. It sounded like a nice salad with lots of grilled veggies, grilled chicken, guacamole, sour cream, lettuce, tomatoes, cheese and Tortilla chips. When it was brought to the table, It only had lettuce, chicken, cheese, tomatoes, olives, and Tortilla strips, and was about the size of a dinner salad. Very disappointing. When I asked about the grilled veggies, they brought me out a bowl of peppers and purple onion that was barely cooked. The waitress tried to fix things, and did take a few dollars off of the salad. We would not eat here again.

Yelp
Authentic food Decent price fast service Waitress was new but efficient Must be a great place for locals

Cooper G.

Yelp
DO NOT EAT HERE!! This is the worst Mexican food that I have ever had. I would not even consider it food, my enchiladas were stuck to the plate and they were really burnt. I could not even cut the enchiladas with a fork.

Anais M.

Yelp
The only local restaurant we could find open on a Sunday evening. We decided to go despite the bad reviews and that was a terrible mistake. We would have been better off going to one of the fast food chains. The food was average, but the sanitary conditions were deplorable. There were dead flies on the window sills. Both bathrooms where clogged up and the staff seemed neither surprised nor concerned about it. Eventually someone from the kitchen went to deal with it and then went straight back to the kitchen. This is during the COVID19 pandemic and the waitress wore her mask under her chin during the whole time. She might as well not have worn one. Nobody in the kitchen seemed to wear one either. The food did not sit well with 2 out of the 3 of us. Our friend got the fajitas and she was the one with the most upset stomach.
google avatar

Chandler M.

Yelp
This place is a real gem! The ground beef tacos on flour tortillas are absolutely amazing. Simple and amazing. This place is a must stop if you are passing through town no need a bit to eat!

Sandra M.

Yelp
Food was authentic, hot and so very good. Restaurant was clean and nicely decorated. Server was quick and gave good service.
google avatar

Sarah L.

Yelp
I was hesitant because of the reviews but dang this was good food. It is not Tex Mex. it was more authentic and taste amazing. Great lunch and staff! .
google avatar

Luke G.

Yelp
Fast service but expected higher quality for the price. Kind of dated but has some character and basic Mexican food. The server stared at our card on the table when we were trying to pay for over 10 minutes. Just giggling on their phones. Guess you pay at the bar...
google avatar

Gilbert G.

Yelp
Slow as hell. And we definitely got the wrong waitress. I asked the waitress about the green chile and could not explain what it was. So asked for the chile relleno platter. Check out the picture, 1 really wth. No silverware and as my order came to me the waitress fell down. Not impressed at all.

Yelp
Food was meh. Everything else was just awful. After we were seated and had our beverages, we heard that the restrooms were out of order and customers needed to go to Carl's Jr down the street. The table next to us had kids and I felt bad for the parents who had to take them down to the gas station bathroom right before the food went to their table. We had a tandem of servers. The first one was deshevelied in his appearance. The other was very sweet and she was one of the few highlights here. The unkempt server brought chips and salsa out. As he set the salsa bowl down, his thumb slipped into the salsa. He didn't show awareness this happened and walked away. I tried some of the salsa warily from the opposite side of the bowl away from where the thumb was. The salsa was very good, as well as the fresh chips. But temps were freezing inside. Everyone wore their winter coats at the table and we were still cold. We were told that they didn't have heat, just a/c that they didn't run after the summer. The chairs were very hard cheap plastic, making things very uncomfortable. The food was brought out to our table before the silverware. We just watched as things got cold while the whole table was served. Eventually we received a pile of forks and napkins with an apology of "sorry these aren't wrapped, we had a rush." We ate our food. I had a burrito smothered with green chili. It was ok, but nothing great. From what I saw, I was worried about food sickness when I ate it, but I took the gamble. I'd say this restaurant shouldn't even be open without working restrooms or heat in the winter. It needs to really step up. I didn't feel like they cared at all about our experience. I'd suggest you steer clear.

Yelp
Incredibly friendly service and great fajitas. I really enjoyed their house guacamole as well!
google avatar

Shelly P.

Yelp
We were hoping this would be a hidden treasure, yet we were horribly mistaken . The chips were overly salted, and the meal was just awful. We should have saved time and had a frozen meal from the gas station. This is a definitely a place to just pass by.
google avatar

Patrick S.

Yelp
Ok, so after some deliberation we decided that this is a three star experience but overall much better than Huerfano Cafe. We had grilled cheese and onion rings, quesadilla, and the taco and enchilada combos. More spice, the green chili sauce was awesome, the beans and the chicken were all pros as well as the size of portions relative to what we paid. Tough group to satisfy especially after a weekend of delicious cuisine at Ojo Caliente! The place to eat in Walsenburg!
google avatar

Nancy R.

Yelp
What a nice little local restaurant to find in a town that features mainly fast food restaurants. It was open late and happy to consider substitutions to items on the menu. The portions were generous and tasty. The menu featured standard Mexican fare; we chose taco salads. The tortilla used to form a bowl was like a croissant. It was light and fluffy.
google avatar

Bryan W.

Yelp
This was a great surprise. After being conquered by the mountain we had to turn around and come back to town to takes different route. So we stopped in for lunch Immediately upon entering we were made to feel at home. The waitress had a bubbly personality which was infectious. Really nice, friendly, knowledgeable and definitely cute:) As to the food had an amazing chili relano with a pork fat topping (trust me you want it) which I forgot the name of. All covered with a delicious green sauce. The breading was a bit heavy(think poormans lobster) but delicious.
google avatar

Angelina R.

Yelp
This place was delicious! Great green chili!! The red chili was delicious as well!! Nice little place!!

Kaitlyn A.

Yelp
Overall good meal and service. We all had Mexican food. The portions were good and price was reasonable. The chips and salsa were not complementary but still very good. Mexican rice and beans could use some work. Vegetarian friendly. Looks a little sketch from the outside but good on this inside and clean rooms. Don't let the looks deter you.

Moriah B.

Yelp
The restaurant was clean and nicely decorated, staff was super friendly and nice. The food. Oh my the food. It was not good at all. Most of the dishes were cold, the Chile rellano was frozen in the middle I'm not sure what the sauce on the cheese enchiladas was, it was brown, tasted burnt and was not good at all. There was a lot of grease and very little seasonings. I was hopeful but we all left very disappointed. Won't be back.
google avatar

Jules L.

Yelp
Arnold plamer was watered down and hardly tasted like tea or lemonade. Chips and guacamole was good, chips were heated and delicious. Entree was disgusting... I tried to get through it but the sopapilla was dense and tasted sour and yeasty. I've been eating and making sopapillas my whole life and I've never met one I hated. Service was cold and uninviting from the start and when I mentioned the issue with my "sopapilla burger" it was just shrugged off by both waitresses. Over priced. $22 for one person absolutely not worth even stopping in.

Cory D.

Yelp
The staff was very nice, attentive and courteous, but the food was bland and doesn't give us a reason to return. Also, their burrito is the about the size of a soft taco from Taco Bell, which was much smaller than expected.
google avatar

Jon P.

Yelp
be sure to allow at least 2 hours for dinner even when they're slow. omg don't come here.

Kathy C.

Yelp
Great friendly service. Food was delicious. Definitely glad we stopped by Lots of parking for trailers
google avatar

Adam P.

Yelp
This is honestly one of the best places in town. After being stranded in Walsenburg for several days I quickly figured this out. The food here isn't great, neither is the service but you're not going to find much else. The food is semi-homemade but rather bland. The service can be quite slow. It's also a little pricey for what you get. But it isn't horrible and the people are pretty friendly.

Kevin D.

Yelp
Food was good and it was fresh. I had the beef taco salad, and my wife enjoyed the chile relleno. We were served quickly by the friendly staff despite having very limited staffing. We will return.
google avatar

Lela V.

Yelp
The service was so horrible and offending that we left right after our water came! Even my husband who is the most polite and understanding person got up, and we left! People of Walsenburg, we could leave money to your town, and your community. We didn't because of the rude bigots who are running a business in your town and ruining your reputation.

Bob D.

Yelp
years ago we tried Corine's. Lousy service, barely so-so food so we did not go back. Recently, we tried again. Food was OK, but the service left a lot to be desired. Today, we tried again. Service was lousy--1 wait person, many tables. My order was OK--nothing great. My wife's order was not. It was a jumbled, nearly inedible mess. And not at all a bargain price. So, I guess we quit going there for another few years before we try it again.

Valerie V.

Yelp
One of the best breakfast you'll find in Walsenburg Green chili and red chili are the REAL DEAL Recently remodeled in past year Authentic regional southwestern cuisine
