"This delightful village is famous for its “Cocido Maragato”, a dish that for centuries has, against convention, been served here in reverse order (first the meat, then the chickpeas, followed by the soup at the end). At Coscolo, the special feature of this legendary recipe is that it is prepared with products that are smoked, cured and prepared on the property using ingredients sourced from the local area. To this stew the Navarra-born chef here likes to add tiny details that add even more personality, hence the change of name of the dish on the menu to that of his restaurant (“Cocido Coscolo”). Leave your car in the car park at the entrance to the village as only local residents are allowed to drive in." - Michelin Inspector

Great place, super clean and comfortable. The hotel and rooms have the same style as the town, new and fresh. The bathroom and towels are super clean and the shower have a nice water pressure. The only down side is the check in time, u have to be there before 6 pm, if not u will be left on the street. 2 couples arrived after 6 and couldn't check in, it was very up setting for them. Also there is nothing open there at night or in the morning, beside the very simple coffee and little muffins include with the room. The place deserve a 5 start but the management deserve a 1 start, in a place where time has stop can't rush u to arrive in a rush, they need to up grade their system to offer a better service

Terrible service and bland food. Nothing, nothing special. The lady was rude to answer with wild gesticulations when a non-meat-eater try to order different from, by the way, extremely boring "cocido maragato". As a vegetarian (we called in advance to inform them of my choice), i felt humiliated when they gave me a socalled salad, lettuce and some olives. That was it! I will never ever return. What a way of ruining a day for a group of friends. Needless to say what this means for this little village's reputation!!

COCIDO FOR EVER You make your reservation in advance and you will have best in class cocido maragato. 3 courses, first meats, thereafter vegetables an the soup to finish. And sweets. This is the only choice, no fish nor salads nor meat, just the cocido maragato. And you know what? There is no need, this is the best choice in the most beautiful mediaeval town. Really pays off visiting. And of course you will be 20 minutes away from the most beautiful cathedral in Spain and one of the most in Europe
