This restaurant is a real treat from start to finish! I called to check on availability for one, and they have special seating called the chef's counter, which literally gives you a full-on display of the kitchen. Now, some people may not like this, however it was wonderful to watch the cooperation, dedication to craft, and overall professional atmosphere of the kitchen staff. My waiter, as well as the other staff members who tended to me, were very kind and welcoming. The timing of receiving menus and explanation of specials was well thought out. This felt like fine dining, and I hadn't even received my meal yet! Now, the meal itself? In a word: Phenomenal! Between my cocktail, Caesar salad starter and main course of steak and sides, I was presented with palette cleansers that were delicate and refreshing. This establishment is truly an experience, and I encourage those who are able to check out this incredible restaurant! My one regret is that I didn't try their dessert menu, perhaps next time!!

Went here for our anniversary and it was absolutely perfect. The food was so good, the steak melted in your mouth like butter. The atmosphere was cute and the service was exceptional! They went the extra step to make your day feel special. Best spinach dip I ever had and the mac and cheese!

Phenomenal restaurant. From the food to the ambiance, to the service (and especially the service) this steakhouse excels in all areas. I was celebrating my first anniversary here and every person on staff we ran into wished us happy anniversary. They also had a rose and hand signed carded waiting for us at our table. Food wise you can’t go wrong, everything we had was great. But the real standout was the American Wagyu NY Strip. It’s pricey but absolutely worth it. The guy who served us on Oct-26 at 8pm was really great and did an amazing job. The GM was also very personable and made us feel special If you’re in CO springs, do not pass this place up!

We had an outstanding experience! Cody, our server, was absolutely amazing. Attentive, friendly, and truly on top of everything. Grace, the server assistant, was wonderful as well and made sure we always had what we needed. And Abby at the host stand set the tone for the night with her warm welcome; I really appreciated how she walked us to our table and even highlighted a bit of the beverage menu on the way. The Porterhouse was incredible! Perfectly cooked and full of flavor. The sides were a bit on the smaller side, and the seats weren’t the most comfortable, but honestly the exceptional service and overall atmosphere more than made up for it.

Only reason for the atmosphere rating was because there were some interesting music choices every now and then, otherwise went for a belated celebration for valentines. Jole was an AMAZING server I mean on top of everything just all around fantastic, the food was delicious although I got a lobster tail the scallops were amazing, steaks? Amazing, thank you!

We had a phenomenal experience with fantastic wait staff. The food was absolutely incredible - and our server Josh went above and beyond to accommodate and educate us on the selections. The atmosphere is elevated but casual and cozy. The menu touch of printing a Happy Birthday message for our party was so thoughtful. Highly recommend for anniversaries, birthdays, or just a special evening out.

My Wife and I had our Anniversary at Cowboy star event though I messed up the reservation they still found us seating at the "Chef's Bar". It over looked the open kitchen BUT I'm glad we got to sit there, the experience was so fun and the Chef's were super friendly. Very welcoming environment and staff. Prices for the food was decently priced,and soooo good! yes they are aged steaks your gonna pay more.

This is easily one of the top steakhouses in Colorado Springs. From start to finish, the experience is exceptional. Parking was easy, which is always a plus, and the service was outstanding right away. The palate cleanser they give you before the meal is excellent and really sets the tone for what's coming. The bread and butter are great, the drink selection has a lot of variety, and the oysters are consistently amazing. The steaks and overall food quality are truly exceptional. Each waiter clearly knew the menu inside and out and did a great job explaining everything and setting expectations. I've been here 4 times now, and it has never disappointed. Consistently great food, service, and experience every single visit.

My husband and I celebrated our 31st anniversary here a couple of weeks ago. We had heard that their happy hour menu was one of the best kept secrets in town, and since we can't afford their regular menu right now we decided to give it a try. We were so glad we did- we had such a lovely and delicious experience, even just in the lounge/bar area! Their happy hour menu runs from 3-6 pm and is only offered in the bar/lounge area. We went about 5:15 and were impressed with the big selection of discounted drinks and bites at really good prices! My husband got the cherry wood smoked Old Fashioned and he thought it was delicious, and the presentation of it was super cool too (see the photo). We got the deviled eggs as an appetizer. (I was pretty proud to notice that the owner of a popular downtown restaurant was also dining there during happy hour and got the same drink and appetizer- it made us feel like we have good taste!) I got their strawberry lemonade. My husband got the Butcher's Choice Sausage for his entree and thought it was delicious, and thought the whipped white cheddar mousse bites were especially yummy. I got the Ultimate Burger and fries and whoa, the fries were some of the best I've ever had! The burger was also really good (a friend told me it was the best burger she's ever had!) but I should have ordered it medium instead of medium well because it was really cooked (my mistake) and kind of dry. We ordered the Chocolate Chip Bread Pudding for dinner and it was absolutely incredible. I was so impressed with everything about it. We shared it and it was perfect for two people, with a beautiful presentation and even better taste. Perfection. The person who brought it out to us said he thinks it's one of the very best things they offer at the restaurant! We were served by a wonderful young woman named Lindsey (I believe that's her name) and she was so professional and kind. We appreciated her and her service a ton. We got excellent service and it felt like a fancy dinner out even in the bar area- what a treat. We were surprised by the gift of an anniversary card signed by the staff and a beautiful red rose wrapped in a Cowboy Star menu. Such a thoughtful touch. I have to mention that the restroom was super nice and clean too. We can't recommend the Cowboy Star happy hour experience more! We got all of that food and drink with tip for just under $100! We are grateful for a wonderful experience for our anniversary.

My husband and I recently went to Cowboy Star for our anniversary and we were blown away by the experience! As we were brought to our table, the swapped the napkins from white to black, to match better with our outfits. When we arrived at our table there was a card signed by the staff and a rose. We were given a special plate from the chef before the meal started...there were just so many thoughtful touches to honor our special night. We went on to have a beautiful meal and enjoy every bite! It was such a lovely, warm atmosphere. The staff was so kind and professional. We walked away just having enjoyed every aspect of the evening.

Beautiful , classy restaurant. Fantastic service. Our server Josh was great! French onion soup was really tasty and flavorful . Salad, however, was not my favorite. It was too acidic and needed a bit of sweetness to balance it out . Everything had beautiful presentation though. My daughter's dish did not meet my expectations. Steak ( filet) was cooked right but it was so bland. I don't understand why some restaurants don't season dishes and only provide salt and pepper on the side. It ruins the dish. Mashed potatoes also didn't have salt in them . Broccolini were bland . I expected better tasting steak meal for that price. Sauces for steak are extra $7 each and they also fell a bit short . I would return for some items like French onion soup .

Food and service were excellent! Got our food in a timely fashion and the food was to die for (not literally but figuratively) Shout out to Stephen, Zoe, and the manager Rebecca! They came in clutch and provided a wonderful date night! Thank you guys so much and would highly recommend this restaurant!

I had an excellent experience here. Ambiance is beautiful with a fire pit, bar/lounge and dining area. Food was great! Hot and fresh. My steak was cooked perfectly. Loved my wedge salad. Our server was very knowledgeable and just sweet. We wanted dessert but unfortunately just didn't have the room for it.

We rolled in for our weekly date night with zero expectations--just two lovebirds chasing patio vibes because the weather was giving perfection. And honey... we were not ready. Enter Josh, our waiter and low-key culinary guru. This man knew the menu like it was his Netflix queue--dropping fire recs all night long, from killer cocktails to mouthwatering mains. We kicked things off with oysters and bone marrow (because why not be fancy?). First time trying bone marrow and let me tell you--rich, buttery, and living its best life on that toasty bread. I went full goddess mode with the scallops, and my man tackled the T-bone like a champ. Both? Chef's kiss. Perfectly seasoned, perfectly cooked, and absolutely zero regrets. We wrapped it all up with their famous bread pudding, and babyyy... it was the sweet finale we didn't know we needed. 10/10 would eat our way through that night again.

Stopped in for happy hour with my husband and daughter on 07/06/25. We had a lovely time. We got strawberry lemonades which were a classic. The Caesar salad and the beef skewers were delicious. Oh! The fries were too. The service was incredibly friendly, albeit a bit stuffy (personal preference of course, a lot of people I'm sure appreciate it). I didn't get many pictures because admittedly I thought I'd already left a review lol! I'll make sure to update my review next time :)

Right off the bat you can tell the inside of this place is really nice! It's very classy and presented really well. The staff is also very friendly from the hostess to the waiter we had! The menu is nice but the prices are pretty high. The side sauces are $7 each. The mocktails they had were very good too. The pear mule was a highlight. The house made strawberry lemonade made me chuckle because it was just strawberry puree in store bought lemonade... Still not bad haha. The oysters were amazing, super fresh and had great taste. I'd highly recommend getting them if you like oysters. The french onion soup was also great, rich bold flavors all around. The steak however was lacking in flavor, cooked well and good sides but it was all just kind of bland. They provide salt and pepper on the side but I feel like there should be some basic seasoning. The salad was also interesting I'm assuming it had cumin because it kind of had a taco flavor to it. I'd would most likely return for smaller items but definitely a solid 4. The atmosphere, friendly staff, and small bites are definitely worth it.

My wife and I went to cowboy star for our anniversary. We did not have a reservation, but it did not take long for us to get seated. We waited about 10 minutes on a Thursday night. There are two dining options. You can sit in the dining room or at the bar. They both have different menus for example you can get a burger at the bar, but not in the dining room, the wait staff was amazing and very attentive. We started out with some cocktails and an appetizer. The main course was delicious. We didn't leave any room for dessert, but it also looked amazing. The manager brought a rose and a card signed by the staff congratulating us on our anniversary. It was a nice touch. Overall great experience, will go back again.

Great atmosphere, good food but it was so unfortunate when we went to their happy hour (6 of us) at 4::30 and they did not have a table for six and the lady who greeted us never smiled, was not accommodating, did not try to make it work for us, like maybe she knew someone was leaving shortly. We were celebrating my boyfriend and decided to come here as a treat. His son said this is the best steak house and we had to try it. We made a reservation online and were sat very quickly. This is by far the nicest steak house in Colorado Springs. We ordered a drink, I got the summer spritzer. It has a great strawberry taste and was very strong. They told me the drink menu was changing soon so I was lucky I got to try it! After we ordered our meals they served us a palette cleanser, it was delicious like a corn mash. Then they served us bread with whipped butter and hawiian salt, the butter was so good! The salt had a nice crunch to it and the bread was perfect, so soft on the inside. We shared the crab cakes, the sauce served with it was divine and paired so well. They do have a kids menu, just have to ask. We decided to share the 40oz porterhouse and so glad that we did! Half was New York strip and the other filet. The Filet was my favorite, so tender and flavorful. They even had cut it before they brought it out and served it to us. It took awhile for us to get our food but it was a large steak. The mashed potatoes were creamy and the broccoli soft. We chose the Mac n cheese as our side, the taste of the truffle was not overwhelming and the sauce was creamy. It also had bits of bacon. All the food was beyond amazing but this is the best steak I've ever had. When we were done they boxed up the food for us and gave us a ticket. It was so convenient and they gave us the food when we were leaving. Overall it was the best experience we have had at a steak house. Great staff and food. We will definitely be back. Already raving to our friends about this place.

The food is absolutely outstanding and very well prepared. The service makes you feel like royalty. Prices are high, so it's not something we can do often but when we go, it's always a very special experience.

One of the best steakhouses I've been to in a long time -- and I'm saying that as a Texan! The service was impeccable; I didn't want or need for anything. The American Wagyu was cooked to absolute perfection, and the sides of mashed potatoes and broccolini were equally delicious. I highly recommend sitting at the counter to watch the chefs work -- it's an impressive show of organized chaos and culinary precision.

Came here for a company Christmas dinner. Loved it. Every dish was delicious. Appetizers shared- crab cakes, Bacon, bacon Mac and cheese (I licked the spoon - this was the star) , & oysters from Prince Edward Island . My husband had a smoked old fashion - came smoking to the table- lovely and I had champagne of course- we were celebrating. The tomahawk wagu steak (special) was so flavorful and the accompanying sauces perfection. All steak are served with broccoli and mashed potato- even these dishes were fantastic. My husband and I are more savory than sweet people but the Cho chocolate chip bread pudding was so delicious and not overly sweet. It was very comforting and warm and chocolatey. Service was very attentive with water refills constantly and checking our needs. Definitely I will be back and it is perfect for a special evening out.

Came here to celebrate our anniversary dinner. The service was friendly and attentive. The food was made to order and timely. The ambiance is classy and has a business casual dress code. The memorable experience was highlighted by the ambiance and detail of the staff. It was cool to receive a rose and handwritten letter from the team. Our food was good and did the job. Would recommend for a treat to yourself but would just come here once in a while.

Cowboy Star is a nice restaurant. Nice linen covered tables with patrons eating steak. We did not have a reservation so we went by the bar seating (booth type partial seating with table and chairs- without linens- a bit shabby) our waiter, Landon was very nice and attentive. The food was pretty good. I ordered the corn soup, it had a hush puppy in it. it was very good. The salad- was not bad. The salmon dish was nicely done and had good flavor. The half chicken was very good too. The price of the dishes was very high- salmon was 40 ish dollars, same with chicken, the soup was $17 and so was the small salad. Steaks run in the $60 ish ranges. So, the food was descent ( probably the steaks are better, I'm guessing for the price- which is too much for me). I might come back as they do change their menu every three months.

Sat at the bar and Ivan was our bartender. Wonderful service all around. Lovely, funny and personable experience. I love the steak here and the mashed potatoes are awesome. A real treat. Ivan recommended the perfect wine pairing with our dinner and I love that shit. My favorite steak place in the Springs. Thanks!

Celebrated our anniversary here. Everyone made us feel so special! The steak was superb!! The service was great, staff were attentive. The ambiance was also nice.

The food and service was phenomenal during our first visit on Christmas Eve - however, our second visit was a huge disappointment. 1. The scallops reeked strongly of ammonia - meaning that they have turned/spoiled. 2. My filet was medium rare instead of rare. 3. My husband's ribeye was rare instead of medium rare. 4. The brussell sprouts tasted nowhere as good as the first visit. I appreciate that the manager refunded the cost of the scallops ($33) and had the kitchen remade my filet, but I don't plan on coming back due to food safety concerns. I'm baffled that the chef did not notice the strong ammonia smell on the scallops.

Cowboy Star was a stunning dining experience on a cold Colorado night. Rebecca took us on a journey through the menu then my gf, the love of my life, got the salmon while I went with the filet. The mashed potatoes with the filet had me question all the times I've ever made mashed potatoes. It was a perfect night and can't wait to see Rebecca again. Thank you so much chefs. Next time I'm bringing my parents but won't fight for the check.

What a cute spot! We stopped by for happy hour and the apps were amazing and the drinks were great! They have cozy chairs, couches, and a fire pit! We can't wait to try the dinner next! Our waiter was also amazing!

Disappointing Experience - Not Worth the Hype We went to Cowboy Star to celebrate a birthday and honestly, it was a letdown from the start. The hostess was the only bright spot--she greeted us kindly and got us seated right away. But after that, things went downhill fast. It took 20 minutes just to get a drink. Then another 20 minutes before we saw the complimentary bread... which, by the way, other tables who sat after us got way before we did. The inconsistency was frustrating. Throughout the evening, Rebecca (who I believe is the manager) walked past our table several times without acknowledging us. She greeted certain tables, but never stopped by ours until the very end--right when we were getting the check. By that point, it just felt too little, too late. The entire staff looked unhappy to be there. No smiles, no energy. The ambiance was cold and honestly just uncomfortable--not the warm, welcoming atmosphere you'd expect from a place that calls itself fine dining. I love fine dining and have been to plenty of amazing restaurants. Since moving to Colorado Springs, I've been exploring local spots, but this one is a hard pass. If you're celebrating something special, this is not the place. You'll feel overlooked, rushed, and like you're bothering the staff just by being there. Rebecca, if you are the manager, there's some serious work to do--your team's energy reflects leadership, and the vibe here was just... off. Definitely not recommending this place. This place was amazing. From the reservation for my husband's birthday, to his name being printed on the menu to the servers and the food and the drinks, just top notch. Ambiance was great, we were set in the back room which we had to ourselves for most of the meal. Servers were attentive but not pushy and the food tasted amazing!

This place is amazing! Seriously probably the best filet I have had. We started with the oysters and the A5 wagyu appetizer which were both perfect! The ambiance and service is top notch as well. So happy to have been I voted by my brother to try this place.

After debating over 4 different steakhouses suggested by Yelp, I landed at Cowboy Star. Yelp came through again! It was just me and had no problem getting a seat at the bar. Hostess was very nice and escorted me to a barstool. Restaurant was very clean and welcoming. Both bartenders were attentive and worked well to make sure everyone was being cared for. I ordered a glass of wine and the 8oz filet medium rare. While it took a little while to come out, it was the perfect temperature and delicious. I feel it was a little over priced for an 8oz, but I knew this going in and it was really good, could have eaten a few more ounces if they showed up on the plate. I ended up leaving my credit card at the bar. Didn't realize until after getting back to the hotel. Called the restaurant and they had it secured in the managers office. Headed back to get it and the staff was expecting me, checked my ID and handed over the card. Very responsible staff! The professionalism shows from the minute you walk in the door.

Service was perfect, other highend restaurants ive been to dont compare, this was very much appreciated. Drinks were well made, cocktails were great. Food was barely second to the service, textures and flavors were paired very well. Its a very traditional steak house with a small modern take but I really recommend it for nice night out.

Hands down a 5 IF... the food was delivered faster! I was there 2 hours... single, by myself sitting at the bar having great convos with bartender Chris. Super dope guy, but he was apologetic for how long the food took to get to me. Oh, the kitchen also delivered my salad with what I asked them NOT to include. I'll be back, but I'll chock this visit up as... "just another Wednesday in the Springs"! Excellent filet though! #JustRight

We were there for our 38th wedding anniversary. The service was exceptional, and everyone was very kind and nice. The only problem I had was the rib eye. It's the only steak I like, and it's my favorite. They told me that's what I was eating when it was clear to me, that I wasn't. The taste was bad, and, it didn't taste anything like any ribeye I'd had before. The oysters were wonderful, and everything else was delicious as well. We've been anxious to return since, but haven't been able to. Our anniversary was two days ago, and look forward to returning back soon. The ambiance was very calming... I hope it improves when we return.

Cowboy Star, from the minute we arrived, we were in for a great experience. The hostess was welcoming and friendly. We had a reservation and were seated within 5 minutes of arriving. The ambiance of the restaurant and decor was amazing. We sat with Dustin, he made the entire experience memorable and was very attentive. His overview of the menu items was on point and his recommendations exceptional. We started our evening with cocktails and a charcuterie board which was plentiful for four and beautifully presented. The cocktails were delicious and perfectly balanced. Our mains included filets as well as an amazing Ribeye. They were all accompanied with mashed potatoes and broccolini. The temperatures of the steaks were perfect, medium rare. The charring on the meat was perfect. Cowboy Star is one of the best restaurants we've experienced, having been in Texas, Miami and many other cities, without a doubt the food here is amazing. We would definitely recommend visiting and if you can, ask for Dustin for an even better experience.

This place was recommended by a friend of ours for our 6th year anniversary and it definitely did not disappoint. The food was tasty, the service was amazing and so were the cocktails. We had happy hour before our reservation at the bar. The bartenders were super friendly and the drinks were soooooo good. Really good happy hour selection, I may add! We got to our table and the table had a rose and a menu titled "Happy 6th year anniversary" and an envelope with a card signed by all the employees to acknowledge our celebration. The cutest touch for the table! For an appetizer, we ordered the spinach and artichoke dip. It was served with sliced baguette. ($18) For dinner we shared a porterhouse steak ($140) and got two sides of sauce; Chimichurri and peppercorn gravy ($5 each). We also ordered a side of sautéed mushrooms and Mac and cheese. ($13 each) We would definitely return and recommend this place to others!

My family has had incredible steaks, wine, salads, sides, cocktails, desserts as well as amazing wait staff and bartenders while celebrating engagements, anniversaries, Eagle Scout achievements and birthdays galore. We love the atmosphere, view of the mountains and the decor. We do not, however, appreciate the host staff. Joy in particular. We made a point of supporting this restaurant during covid and she has been nothing but condescending even when we were among the few who patronized when others would not. She has been consistently condescending to us in person, on the phone and to other patrons. We have complained to management before and yet they keep her on board. Tonight she snapped at me over the phone while I was trying to make reservations for a birthday celebration with family. Looks like we'll be celebrating at Prime 25.

Visiting Cowboy Star was a perfect bookend to a marvelous day in The Springs. While spending time in The Springs, I wasn't expecting to dine here until later in the day. Reservations are recommended. Cowboy star is situated in a shopping plaza. It's not easily seen by the main highway. The parking lot is big and shared with other businesses in the plaza. There is a butcher shop next store to Cowboy Star. The butcher shop is part of Cowboy Star. After entering the restaurant I was greeted by two staff members at the hostess station. There is a nice fire pit in the lobby area with some nice chairs to sit at while waiting for your table. This is a classy place! I was impressed with the ambiance. Furniture is elegant and it's very clean. Wait staff are dressed very professionally and they're respectful as well. They provide a world class experience. The managers were also wearing suits with bowtie. One of the managers delivered my salad and was professional with his interaction with me. I was more enthralled with the level of service along with ambiance rather than the food. I liked the food. However, I've had better steak at other steakhouses. I skipped ordering an alcoholic beverage. They offer a very extensive drink menu. I was impressed with the number of cocktails they offered. I was tempted to order a Manhattan but passed. They offer bottled water for purchase in lieu of regular tap water. Evian or Pellegrino are the choices. I chose Pellegrino. I skipped an appetizer and ordered the Local Organic Greens Salad. it has Farmer's Market Lettuce with burnt cinnamon poached pears (pears are sliced nicely), goat cheese, toasted pepitas, and sherry sage vinaigrette. The burnt cinnamon packed pear makes this salad really good! This was one of my favorite salads I've had in a restaurant. For my entree I ordered the 14 ounce Ribeye Steak, medium rare. It came with whipped mashed potatoes and green beans. I also ordered brandy peppercorn steak sauce and sautéed mushrooms. The mushrooms are made with garlic, shallots and parsley. They were delicious! They added to the steak nicely! The steak was average. I can't say I was that impressed with it. Especially after having a top notch steak at another fine dining restaurant recently. My waiter, Jason, was professional and accommodating. I loved that he noticed the credit card I used then asked if I'm a military veteran. They offer a nice military veteran and first responders discount. I very much appreciated this generous discount. I felt the final bill of sale was reasonable. I slipped in a carrot cake dessert to go. I had it at home with a nice cup of coffee. It was okay. Nothing special. I've had a lot of good carrot cake so it would need to be special. Overall, I enjoyed my dining experience here. I noticed this place in the not too distant past and expected to dine here sometime later in 2023. This was also a fantastic way to close out 2022, with all of its twists, turns, up, down, sideways, backwards, double back, round and round then back again dynamics. I recommend checking out Cowboy Star. This is a great place to bring a date, wedding anniversary, birthday or other special celebration. I hope you have a pleasant experience here. Enjoy!

This place is great. The food, drink, and service are all notch. The servers are very professional, the restaurant is very clean, and did I mention the food is fantastic? Highly recommend for any occasion.

I brought my daughter here for her 14th birthday, and it was a perfect night. The food was amazing, and the service was top notch. Jason was our server, and he's so charming and informative. We ordered the foie gras and oysters for starters, and it was perfect. I got the dry-aged ribeye, and my daughter got the wagyu, and these are the best steaks we've had in Colorado, they were wonderful. Also, hats off to whoever made the ice cream she had for dessert; it was Earl Grey, and it was delicious. We'll be back again.

Such a great experience! We've been searching for a good steak house here in Colorado Springs since we moved here a year ago, and cowboy star delivered. The staff was so lovely. The steak and sides were delicious, impressive wine menu, great cocktails. We will 100% be back!

WOW!! I left a note on my reservation that my boyfriend and I were celebrating our 3 year anniversary, and the result from the staff was nothing short of amazing. From the moment we walked into the restaurant to the second the door shut behind us, was such beautiful experience. We sat at what I would consider such a great table that overlooked the beautiful dinning room floor, that was also perfectly lit. We were able to experience the view of the open kitchen concept and watch how the staff interacted to make sure everyone was properly taken care of. Our server, Chris, was so pleasant and very knowledgeable about not only the food, but the beverage menu as well. We will be back, and appreciate everyone who made us feel so dang special!

My party and I ordered a variety of steaks and overall I am pleased with the experience. The server recommended a red wine to pair with it and the recommendation couldn't have been better. We ordered the crab cakes for an appetizer and they were to die for! Definitely worth a trip for those alone!!

My favorite steak house in co springs! We have tried every high end steak house in this city, and this one is our favorite. The rib eye is perfect and melts in your mouth. The apps, drinks and salads are also the best. The service is super attentive and top notch. We frequent this place often and have never had a negative thing to say about cowboy star. Also- their happy hour is truly the best in town, but also hard to find a seat.

Cowboy Star is Fantastic from the front door greeting to the serving staff being very friendly to the kitchen staff really knowing their way around a steak. I had the Cowboy Cut bone in ribeye with a Mac & Cheese side, I tossed in 3 scallops just for fun. The ribeye was a perfect medium rare. The scallops had a nice sear and super tender. Mac & Cheese was incredible. Creamy with just the right amount of bacon (that means alot). The table services was outstanding. Very attentive right down to the crumb scraper. I can't forget the cocktails. The bartender made a great old fashion and my Martini was perfect. Ice cold a virtual ice skating rink made of vodka. If you don't go and check them out you are missing a gem. You don't get this kind of service and food much anymore. Celebrate a special occasion with them. You won't be sorry.

Went out for happy hour, and we landed here. The place is very aesthetically pleasing and clean, and in a great location. The service was great, since I'm terrible with names I have no idea what his name was. He was very proper, professional, and efficient. The food was delicious as well. I had the shishito peppers, a huge side of delicious French fries, and a garden salad (I believe). Everything was tasty and the portions were great. As a vegetarian it makes no sense to go to a steak house, however, I enjoyed it enough to go back again.

Had the opportunity to go to the San Diego location and now CO Springs. Always great service and our table mentioned that this place is a very well oiled machine. What we had: Drinks: Mai Tai - Blueberry Southside - I Beg Your Garden - Dinner: Apps: Artichoke Dip - a MUST. Honestly one of theory delicious appetizers I have had. Shrimp Coctel - not my choice but also very good. In the Middle: Yellow squash bisque - my mom really enjoyed her soup and was very pleased with the flavor. Wedge salad - with some bacons Main: Pan Seared Halibut Steak for 2 Filet Will be back !

Alright where to even begin. We were celebrating my friend's birthday and looking for an elevated, yet casual steakhouse for a nice, hearty meal. Cowboy Star delivered and then some. At first glance, it's pretty unassuming sitting at the corner of a strip mall and I'll be honest, I was apprehensive. But some of my most surprising meals have been in weirder places so I got over that real quick once we walked inside. You're instantly greeted by a very friendly host/ess and the vibe here is so inviting. The big, open fire with rocking chairs is such a nice touch and the intoxicating smell of burning wood instantly sets the mood. Beyond that is a nice looking bar, but we were sat in the dining area near the kitchen. It's an open-kitchen concept which I enjoy, but still a good distance away so it maintains a nice intimacy. The service was spot-on. Every person who greeted us wished my friend a happy birthday and they even had personalized menus for the occasion (nice touch). They actually have her a copy in a scroll at the end of the night as a keepsake which was cool. Our server Alexis was GREAT. She really knows her stuff and was on-top of everything. We started with some cocktails which were all delicious (melon mules were so refreshing and the old fashioned's were very well made). Great start! Alexis then brought out a complimentary amuse-bouche for the table which surprised us and got us instantly excited for dinner. Another great touch. Now for the food: For apps we got oysters (fresh, not grainy, delish), C-Star Caesar (very good especially if you like your dressing on the creamier side), burrata with melon (burst of flavor and the perfect, light starter to open your palate), and the tuna avocado crudo was one of the tastiest things I've eaten all year (total flavor bomb and the tuna was prepared perfectly). For entrees both couples ordered the same steak and we split sides for the table. We opted to go for the 18 oz dry-aged rib chop cooked MR. Now, let me start by saying I love a dry-aged ribeye and if it's on the menu, I'm probably ordering it. While the flavor was good, it had an odd texture almost like a very meaty fish. I'm sure the aging process maybe affected this a bit, but I was a little confused by it and why I would probably give that steak a 3.5 rating. I like my ribeye with nice marbling and that fat that melts in your mouth and this didn't have it. I would probably try a different cut next time. Like I said, it's not that I didn't like it, but it wasn't what I was looking for. However, the sides were all sooo good. The Mac & cheese was so yum and had crispy pieces of bacon that made the flavor pop. We also got the Brussels sprouts that were perfectly cooked and the right amount of salty/sweet. The horseradish mashed potatoes were excellent and not too horseradishy if that ain't your thang and paired with broccolini. My husband and I got the shrimp with our steak which were tasty too. We were stuffed, but had to get dessert to celebrate my friend's bday and they brought it out with a candle which was nice. This chocolate chip explosion of flavor was so damn good. The brioche was perfectly moist and that butterscotch sauce was to die for. Didn't need Nick Cage for that to be gone in 60 seconds. A perfect ending to a very enjoyable meal.

Food was amazing. Steak was cooked to protection. Service was on time all the time. The ambience was great fire place, low lighting great night.
