Our team of 7 spent two hours with Chef David learning about the exciting flavors of Spanish Tapas. The entire experience was fun, easy-going and delicious!
When we arrived, the entire area was setup with enough aprons and place settings for everyone to get messy and enjoy the food to come. Fresh ingredients were prepped to get started and the small gas stove and cookery was perfect for a group our size. Chef David explained the overall menu and his background, making us salivate even more when we heard the inspiration of his menu.
We got started with dessert, since it needed time to chill in the fridge. He showed us techniques like whisking the crema in a double boiler and using heat sparingly while creating the base mixture. It was hard work but the end result was phenomenal.
We next cooked the first course, a Spanish style tortilla, which is more like an egg frittata but with potatoes, snap peas and other ingredients. The tortilla was deceptively simple to make, and all of us felt confident we could replicate it at home. This was paired with a phenomenal romesco sauce, mad with toasted walnuts and paquillo peppers. When it was time to plate, he even showed us a few techniques on creating a great presentation. By this point, we were ready to just dig in -- and the food was INCREDIBLE. So velvety and soft, and the cheese and light salad pairing put us in heaven.
After the tortilla, we made the next "main" course, gambas -- or Spanish prawns cooked in a savory sauce. Chef David has his own interpretation which uses huge Mediterranean prawns tossed in a very garlicky, sherry based sauce. This dish only took a few minutes to make, which was perfect because we came prepared to eat! I should mention you can BYOB some wine, which made the event light hearted and fun for our team.
After devouring the shrimp and feeling stuffed, we returned to the crema dessert that had been chilling for us. Chef David allowed us to use hot plates to caramelize the sugars we placed on top, or we could opt for a blowtorch... which I obviously selected. We finished the dessert with a fresh, crunchy cookie mixture, edible flowers, and expertly cut citrus slices. The dessert was light and full of flavor -- a perfect compliment to the rich flavors we enjoyed before.
Overall, we not only had delicious food but the Chef and his training really made us come together and feel confident in completing his course. Chef David was funny and had great passion for his cooking, so we all just fed off that energy. We definitely will do more classes with him and Cozymeal.
