"On the port of Cancale, Breizh Café has one motto: "A new take on crêpes." After all, the concept was originally born in Japan! The owner, Bertrand Larcher, was the first to export Brittany's galettes (buckwheat pancakes) to Tokyo, and several Japanese restaurants later, he has founded one back home. The produce is organic (eggs, cheese, meat) and first rate. The crispy flavoursome galettes and wafer-thin, soft pancakes are made entirely traditionally. The filling depends on your mood, ranging from classical to unusual: artichoke rolls, scrambled egg, Comté cheese or Saint Malo wakame seaweed. A champion of buckwheat and Brittany’s culture, Bertrand started by opening pancake houses in Japan, before returning to France to pursue his passion for food. Now in a dining room overlooking the bay of Mont Saint Michel, chef Fumio Kudaka mixes Brittany’s produce with Japanese techniques and seasonings. The lobster is served with free-range poultry and soba noodles; Challans duck is simply roasted and enhanced by a negi miso sauce; the apple and black sesame tart is paired with cinnamon ice cream and a caramel of shiokoji.
