What is Buttermilk? And How to Use it for Cooking. | Eater

"A family-run dairy in Knoxville, Tennessee, led by co-owner Colleen Cruze Bhatti, produces a hybrid-style buttermilk made by agitating cultured milk and cream together so the process yields both butter and buttermilk. The co-owner describes the product as “a drinkable yogurt” and a cousin to yogurt and kefir, resulting in a creamier, hybrid texture that combines qualities of true buttermilk and cultured whole-milk varieties and works well for baking, dressings, and other recipes that benefit from both tang and emulsifying richness." - Nick Mancall-Bitel

This is a sweet little pizzeria that anyone who comes to visit Knoxville must try. We were turned toward the direction of this pizza joint by Kelsey, an employee at the cruise farm ice cream parlor in downtown Knoxville and I'm glad she told us about it. Food: we ordered the dumb blonde with chicken on half. Skyler, the cashier recommended putting a hot honey drizzle on the pie as she believes that's the best way to eat their white pizzas. She was so right! The dough is flavorful, light and fluffy. While the cheese is stringy and very tasty. Service: The servers were very kind and all of their uniforms looked sharp! Atmosphere: The ambience here is very warm and welcoming. There are pictures of the owners and their families. Additionally, the staff is knowledgeable about Jersey cows and how their milk is superior to other types of milk cows. Being from Jersey, pizza is a big deal and the quality of the milk that goes into their cheese is truly superb. You won't have to try any other pizzeria if you eat here first.

We heard great things about this place so had to check it out. The atmosphere is cute. Service was good. The pizza was ok, not great. We got the cheri baby( supreme ). There wasn’t anything really wrong with it. We just were not blown away.

After experiencing the best ice cream on this planet, we decided we would ruin pizza for ourselves while we were at it. This place has literally the best cheese and ranch I've ever had on/with a pizza. If you live nearby and you aren't frequenting this place, what are you doing? Seriously. 10/10 would recommend

Wow - I cannot express what a wonderful experience we had at the pizza barn tonight. My child has a dairy allergy (lol why we took her to a dairy farm I’m not really sure) and Marley, the assistant manger, went above and beyond to help us find something that she could eat. She even went so far as to make the food herself so she could assure us it would be made properly. I’ve always been impressed by the quality of and enjoyed the food at the Pizza Barn but this experience took things to a new level of excellence!

Google
Service was great. People were nice. Food was not good at all. Pizza was burnt on the bottom garlic rolls look like they had been purchased from food city and had garlic sprinkled on top was very underwhelmed. Will not be eating there again. It is such a shame because we have heard great things about it.

Google
Came for both pizza and ice cream! Both were amazing! Facilities were clean, staff was friendly, and beautifully decorated! Recommend to everybody and next time I’m in town will definitely go again!

Google
Marley was super sweet and very helpful since it was our first time here in Knox. We ordered 1 pizza with same sauce and tried two different pizzas. Let me tell you as a foodie, these pizzas in every bite you got every flavor. My mouth is watering as I'm writing this. The homemade ranch was very tasty and the service was top notch. I would recommend this small business and the ice cream shop to anyone. Glad we found you guys, glad we tried it and now I'm craving pizza again, thank you Marley and staff. Have a blessed day guys ..

First time I've ever been there, and the last. One of the worst experiences I've ever had trying pick up a to-go order of pizza. There was a movie playing on a projector, and the parking lot was full. A man with a flashlight stopped me and I told him that I just needed to pick up a pizza. He said I should park behind a building across from the restaurant. I parked on the curb beside this adjacent building. The man with the flashlight then ran up and started yelling that I couldn't park there because it would block the firetruck? I told this man this is the last time I'll ever come here. So I then drove, still in reverse, behind this building and parked. I had to use the light on my phone so to see how to get to the restaurant without falling. Got into the restaurant, said I ordered a pizza online, and had arrived when pick-up was scheduled. I was told it wasn't ready, so I stood to the side and waited. A significant line formed at the take-out, and I then received a message that is was ready. So I got back in line, for the second time. Finally got my pizza, then walked back to my truck with my phone lighting the way to the back of this building. When I got home, which is only 7 minutes away, we had to put the pizza in the oven because it was cold. This is my first ever Google review, that's how dissatisfied I am.

Yelp
A great family friendly place to get good pizza and as an added bonus...ice cream is right next door! Cruze Farm Pizza Barn is tucked away in what seems like an industrial area of East Knoxville. It is popular and for good reason. A friendly young man took our order at the walk up counter. We then filled our drinks and found a comfy booth to sit in. We had the Cherri Baby Supreme and a 1/2 Cheese 1/2 Pepperoni Pizza for our littles. We didn't realize that the cheese pizza has a large swirl of sauce on top. We would ask to leave that off next time since our child doesn't love sauce. But both pizzas were delicious with a good amount of toppings, yummy crust and cooked just right. Paper plates are provided and a napkin dispenser is at the table which is helpful especially when you have children! Parmesan cheese and red pepper flake shakers are on each table as well. After dinner we walked next door for their ice cream. They make their own ice cream with quality ingredients. They offer a wide variety of flavors, toppings and dips. This is a fun and relaxing place. We have eaten here in the past and will continue to frequent the Pizza Barn.

Yelp
I would not call this Knoxville's best pizza but the atmosphere is always great and it's good enough so pizza plus vibe plus hopping next door for some of Knoxville's best ice cream = 4

Yelp
For an area not known for being a pizza Mecca, they did some really good pizzas. The crew there were very helpful and friendly. We came in from out of town and I would definitely go back the next time we are in the area.

Yelp
I absolutely love Cruze farms I tried the pizza first time I went- it's good and the ladies wear the cutest dresses Next time I tried a pumpkin seasonal flavor shake from the ice creamery next store that they run I'm talking about heaven in a cup! Go there you won't regret it!

Yelp
The listed time for the pizza was 45, I didn't track it but I believe they actually had the pizza to the table in 20 ish minutes. The salad hit the table less than five minutes after sitting down, and the garlic cheese bread maybe 15 minutes. The food over all was really good. But hands down the best part was the garlic cheese bread, it doesn't need the sauce. We had contemplated the garlic ones, but the counter person description didn't sound as good as the picture of garlic cheese bread. I asked which was better several chimed in that the garlic cheese bread was better, and it sure was. The place was clean, and all the workers seemed nice. Even the one we witnessed dealing with a less then ideal customer, she did great handling them.

Yelp
We've been searching for the best pizza in Knox and this is a definite contender! I just wish it were closer to our house. Nestled in SE Knox, this pizza parlor is directly across from the historic home that houses Cruz ice cream. Luckily, it was in separate buildings so we could steer our kids away from the ice cream before they got too obsessed with the idea (we had Christmas cookies with us to eat as we drove through Shadrack lights). We arrived around 5 and were the only people there for a good 1/2 hour. The space has very dim lighting and quite a few booths and several high-tops and low-tops. The space isn't huge, so I would imagine it gets loud and busy during prime weekend hours. There is the typical Cruz farm photography of the Cruz girls, cows, and cow-themed decor. As always, the Cruz staff was super kind and welcoming. The menu has some unique topping options and specialty pies. We opted for: -Cowgirl's Dream hand tossed: Roasted Chicken, Spinach Maria, Garlic Cream Sauce. I loved this one. The chicken was fresh and well-seasoned and the cream sauce flavorful. -Pepperoni hand tossed: Amazing cheese quality, as expected. The dough is really tasty and it was NY style...floppy and foldable but with a fluffy back crust. Really messy with the grease from the pep pooling in the center, but the kids loved it! -Mega Garlic Cheese Bread: essentially rectangle pan style dough with a ton of cheese and fresh parm and garlic. It was amazing! We would definitely order this again. With us being the only people there for a bit, our pizzas came out pretty quickly and we watched them being made and placed in the oven, which was fun. Make sure to order their yummy ranch for on the side. They include 1 sauce per pizza, either ranch or marinara. Their pizza sauce was the only thing that we thought was just okay. It was very chunky without much sauce consistency, liked chopped tomatoes in a cup instead of sauce to dip. In general, we had a great experience and can't wait to go back and try more. I will dream of that cheese and bread.

Yelp
Cruze Farm Pizza Barn has darling decor, a cute country theme, was clean, and had friendly service. We give it five stars for ambiance and service. My husband and I absolutely loved the hand-tossed pizza crust! Five stars for the pizza crust. The downer was the toppings. We had a large Cheri Baby Supreme. The amount of toppings, including the cheese were minimal, but we paid $21, and expected more for what we paid. The sausage was delicious, but there was only one bite-size piece of sausage per slice of pizza, the same for pepperoni. The other ingredients included a minimal amount of bell peppers, onions, mushrooms, and green olives. Even the cheese was so light, it was almost not even noticeable. We were going to order a pizza to take home for dinner, but decided it wasn't worth it. Because of the minimal amount of toppings, we give the pizza three stars. Will we be back? Yes, we'll definitely give Cruze Farm Pizza Barn another try, but with different expectations. It might be worth a stop on the way home from Seven Islands Bird Park, or maybe after a long, scenic drive. Now, if it were really good pizza, we would drive up there just for the pizza, but, unfortunately, it's just not worth it. We give our overall experience at Cruze Farm Pizza Barn four stars.

Yelp
This place is an electric factory. Get everything on the menu. Sweet cream flavor is the best. All the pizza and sides are amazing too

Yelp
My first time stopping in here after being on my list for a while! I'm so glad I did. Super cute interior. Easy ordering process. I loved the family pictures and old posters and decorations. Although the interior and decor was well done and fit the space and theme very well, there were a few things that needed attention. The floors, tables, and booths/chair needed cleaned and wiped off. There were food particles and napkins on the floor. The tables and booth/chairs had crumbs and straw papers on them. I had to clean off my table and booth before sitting down. There were several young ladies working and there were only 2 parties there while I was there, so they had the available staff to properly maintain the dining areas. The light fixtures were beautiful and fit the decor and theme so well, but I couldn't help but notice they were varying degrees of dimness/brightness. So, you'd have maybe 4 bright bulbs and 1 super dim. There were a few spots in the sheet rock that could easily be patched and painted to make the dining area look cleaner. As for my dining experience, I was really pleased!! I always love a pizza place with the cheap, white paper plates, but appreciated having real silverware to accompany them! I ordered a supreme pizza and a small garlic cheese bread. The pizza was really good. I had the standard thin crust (I think there might be other crust options) and there were plenty of toppings and it was well baked. I loved the garlic cheese bread, especially the edges which got crispy and caramelized. The marinara sauce was very flavorful and a good dipping accompaniment for the bread.

Yelp
I came here with my church youth group, and the pizza is delicious and I was able to get the pineapple dole whip!! I absolutely love how it looks in here and the people here are so nice especially because they had to deal with so many of us showing up. I would absolutely recommend!! And I will be coming back anytime I get the chance.

Yelp
Great pizza, great people, and great ambiance! I could happily eat a Cruze Farm Greek salad and Mountain Angel pizza at least once a week for the rest of my life, and the fact that Cruze Farm is a local, family-owned operation that gives back to its community so generously makes it worth the drive. Just don't forget the ice cream and some Cruze Farm swag before you go. You'll spend $17-21 for a pizza and about $6 for a regular cone or cup of whatever flavors they are serving that day, but you'll know that your money is supporting a local family farm and being reinvested in the community. That's worth a few dollars more, in my opinion. And just when you thought Cruze Farm couldn't get any cooler (I mean...the pizzas are named after Dolly Parton songs, after all ), here they go encouraging kids to read. They currently feature a special flavor, dragonfruit sorbet swirled with marshmallow cream, created to go along with the One Book Read City initiative for Knox County Schools. I tried it, and just trust me on this one: One cone might not be enough. Dolly would be proud.

Yelp
Cruze Farm has something cooking in Knoxville between dishing out pizza from their pizza barn and ice cream/dairy products across the way. Our initial plan was not for pizza, but the super cute interior, women dressed in red plaid with hair ties, reasonable prices, and unique atmosphere drew us in for lunch. While they have a few select salads and pastas, we kept it simple by ordering garlic cheese bread and a cheese hand-tossed pizza. We were torn between the hand-tossed and pan-style deep dish & Haley was kind enough to point out that the same dough used in the deep dish can be tried out with the garlic cheese bread, since it is served deep dish style. The garlic cheese bread was cooked well with a perfectly crunchy undercarriage, an ample amount of cheese, and what almost seemed to be a garlic sauce glaze on top to add a slight garlic taste. Personally, I would have preferred a stronger emphasis on garlic, but the overall creation was delicious nonetheless. The cheese hand-tossed pizza tasted great, with super fresh dough being the stand out all star. The tomato sauce tasted fresh, and the cheese I would call it's weakest point being merely average. Still, we enjoyed the pizza and devoured every last slice without any hesitation. The food was more accurately about a 4 out of 5 stars, but the service, cute decor, and excellent music are worthy of a boost up to 5 stars, as it really is a unique place I'd recommend to others as an eatery worth going out of the way to visit. The walls are adorned with Cruze farm family pictures, cow bells, and employee paintings in their adorable outfits, and the music track hit a home run with me.

Yelp
Great spot! If you have a large group you can rent out the piano room in the ice cream parlor across the street and bring the pizza over. I had almost 20 people, ordered pizzas and salads ahead and they were ready when we arrived. Excellent pizza with fun flavors and delicious salads too (love the ranch). Was so great to get ice cream after too!

Yelp
Very good food; we had a supreme pizza and cheesy bread sticks. The pizza was VERY greasy, but SO good! The cheesy sticks were full of flavor. Staff wasn't cheerful nor rude , but being a Friday at lunch, I don't know that I blame them for appearing tired. It was relatively busy still when we stopped by at 2:00 on Friday afternoon. Overall, we've had it once, and recommend it, but as out of town visitors, we'd probably try somewhere new next time we visit and crave pizza.

Yelp
If you like pizza, you have to try this place! Heck, even if you don't like pizza it's worth it! Friendly service. Indoor and outdoor seating available. I had the pizza of the month. A white pizza with ham (I subbed chicken) bacon, caramelized onions, and a hot honey drizzle. Just make sure you save room for some ice cream across the parking lot. It's owned by the same folks!

David W.

Yelp
Amazing pizaa great pull to the fresh cheese you know its good. Dont forget the ice cream next door.

Yelp
I was super excited to try Cruze pizza. I have been a fan of their ice cream for such a long time. The Farm Pizza barn is right next to the Cruze icecream place and if you are going for the first time, it's confusing. There are no signs telling you where to order what or where you can sit. However, we figured it out & got a pepperoni pizza. It came out relatively quickly. The pizza sauce is definitely was the best part but the crust was underdone and nothing else on the pizza was spectacular. On top of this the employees looked overworked they were running around and they either had a fake smile on or a look that made it obvious they didn't want to be there. Disappointed, and probably will just stick to their icecream here on out.

Chris J.

Yelp
We had the best time having pizza with my 87-year-old mom, and it was delicious. Then walked across the drive to the ice cream feast. They had so many different delicious flavors and it was the best I think I've ever had.
google avatar

Salmaan T.

Yelp
Service was great. Atmosphere was good. Pizza was just bleh. I thought the cheese might have a unique and rich flavor but it was underwhelming. Had a the cheese, Buffalo chicken, and chicken with spinach and garlic sauce. All were below average. For the price, there are many better pizzas. Clearly Cruze has a brand and that's awesome, just don't go expecting a great pizza. For context, we had just finished a hike and we're pretty hungry. It's just not that good. Ice cream was as delicious as usual.

Arden B.

Yelp
Cruze farms is okay, but it's mediocre and overpriced at the same time. But I appreciate that when I was there I told them I was allergic to peanuts and they were extra careful to make sure I didn't accidentally consume peanuts.
google avatar

Drew F.

Yelp
Best pizza in the greater Knoxville area! They have some unique options. The atmosphere is fun and family friendly!

Yelp
This place was so cute. We stopped here on our trek from Texas to DC and enjoyed it, especially the ability to run across to get ice cream right after (they have vegan dole whips (like ice cream but no dairy)!). It's a place you order at the counter & they bring you your pizza. The ladies all wear red check dresses, which I imagine they hate but you would never know. The young lady that took our order was so nice & enthusiast. It was kind of crazy town when we were there because 2 consecutive parties of 20 had just rolled through, but was still fairly together inside given the previous hurricane. I do recommend getting the caramelized onions on your pizza delish. The crust here is pretty good too. The 2 of us finished a large (my hubby and me), so either we're fatties or take that as you will.

Yelp
Great pizza and service. Didn't get ice cream but everyone enjoyed. I fished it off with a lavender cappuccino! Yezzirrrr

Yelp
Wonderful wonderful wonderful! Cruze Farm is always the best and the cheese here is possible the greatest mozz you'll ever get. Always go deep dish people that pan pizza crust is so so so good and crispy and crunchy. Service is at the Cruze Farm quality, so GOOD, you always have friendly helpful people, and the rustic feel of the restaurant matches the old school feel of all of Cruze Farm. There's a reason they're so loved and have the best product, GOO CRUZE FARM!

Lovely place. Cute pizzaria with ice cream shop across in the same business area. Service was excellent.

Yelp
On a warm night, so fun to order a pizza and sit on the patio and then pop in for some amazing ice cream!

Yelp
The best made to order fresh baked pepperoni pizza pie on the planet. They also have the best sweet cream sundae and s'mores churn.

Yelp
Fantastic pizza and great service. We had 3 doors down and a Cowboys Way. We will be back!

Cindy K.

Yelp
Very good pizzas and ice cream to die for brown butter the best. I have been there many times. Not one time has anything been bad. Raspberry ice cream in a cone dipped in chocolate is great.
google avatar

Amy M.

Yelp
Two doors down pizza + hot honey (white pizza with sausage and caramelized onion) = heaven on earth I thought the southern salad was a good side to help prevent coronary artery disease. It had bacon, because bacon makes everything better, red onion, some sliced red cabbage, home made croutons with house ranch dressing on a small bed of local greens (yay for supporting local farmers!). On second thought, I'll take more bacon, croutons, and ranch, and say hello to my future coronary artery bypass surgery. I sampled some of the ice cream and thought it was great! The strawberry was sweet, but not too sweet. I think technically the ice cream is sold in a separate establishment, but it's literally across the parking lot.

Yelp
Great pizza!!! Sick of commercialized chain pizza and this is the second time we've had Cruze pizza. Very good pizza! The cheesy bread was great too. Their marinara sauce is very good. I look forward to trying their other items like salads or baked meals like ziti. Think the prices are a little steep but it's ok when you splurge a little. I find it hard to get great pizza in knoxville since I'm from NY. That was a huge change we weren't expecting when moving south. Cruze is a good tasty alternative to the chain pizza places. Thanks guys!
google avatar

Amanda S.

Yelp
Pizza was so GOOOOOOD! My son loved playing in the little play area with the house. They had a huge mist fan that my son would go up to and talk and have his mouth open and just laugh laugh laugh! It was hilarious! The ice cream was so good like always! My son did such a good job at not dropping one last bite. haha He made lots of new friends that day and it was great to see him interact with new buddies!
google avatar

Kirsten E.

Yelp
This place was amazing. I had the pineapple float with Coca-Cola and it was a perfect combination. I also had the Caesar salad which the croutons or neither too hard nor too soft. The pizza was also fantastic. I had both the cheese and white pizzas. I preferred the cheese since I did think the white pizza was a little dry, but still very good. This place is adorable and family run. They have a very homey feel and are welcoming to all of their guests. The ice cream can be found in the main house and the pizza is right across the street. There was room on the front porch to sit and eat and mingle with those in your party. You had the mountains in the background for scenery and it was the quintessential Tennessee experience. I would highly recommend this establishment to anyone and will be going back again this week with friends from out of town. It is a must see.

Yelp
OMG is all I can say. While everyone knows that Cruze Farm takes the cake when it comes to ice cream in Knoxville... I have to say I was pretty blown away that their Pizza was some of the best I've had. It exceeded my expectations, Manjit is a pizza legend! What stole the show for me was the soft, doughy crust. All the toppings were fresh and unique, making for some awesome flavor combinations. (My personal favorite was the hot honey peach pizza and the leek and feta stuffed stromboli). If you haven't tried a Cruze Farm pie, you don't know what you're missing. The Pizza Barn is bright and cozy, while offering a family-friendly dining atmosphere. We will definitely be back!

Yelp
First time here for my wife and I. You walk up, place your order, receive a number for your table and wait to have you pizza brought to you. Only two sizes, and no 'by-the-slice.' The wait time on the counter chalk board is 25-30 minutes, but since they use a real pizza oven, it really only took 10-15 minutes. We had the caramelized onion and Italian sausage pizza. It was a little light on the toppings. However, we felt it was on of the best pizzas we've eaten in Knoxville. The crust was perfect. Not too thick, cooked crispy, but not over cooked. My wife loved it and ate all of her crust, a task usually left to me. Service was prompt and friendly. The inside is a bit worn, kind of make shift, and didn't feel entirely clean. No matter, we would readily return.

Yelp
The pizza is awesome! I ordered after checking Yelp and decided on the 2 Doors Down and was not disappointed! It has wonderful flavors. Do yourself a favor and give it a try. I ordered it to go and had to sample an ice cream cone while I waited...it was a must! Now that I am miserably full, I can honestly say that it was well worth it! They may be a little off the beaten path but it is worth the drive.

Diane Y.

Yelp
We enjoy driving out in the countryside for their delicious cheese bread appetizers and homemade strawberry ice cream. Love sitting on the old farm house porch...
google avatar

Eddie D.

Yelp
Excellent pizza, terrible service. I loved the food, everyone in our party enjoyed their pies. The service , however, left much to be desired. It seems to be normal these days, especially with younger employees, to be made to feel like a burden when visiting a business. That's how it was on our visit. Not down right rude, but not in any way helpful or informative... very off-putting... especially for first time visitors.
google avatar

Casey B.

Yelp
Amazing pizza and icecream! The service was really good too! We enjoyed sitting on the covered front porch. Can't wait to go back soon!
google avatar

Yelp
The pizza is great but what sets the pizza barn apart from other pizza restaurants is the fantastic ranch. Just go. It'll be worth it. Definitely get ice cream afterwards
google avatar

Dean C.

Yelp
It's a high 3 star. I'm rounding up because they are new and probably working processes and recipes out still. The people working there are very friendly and the pizza came out quick. The pizza was average. They were also stingy with the bacon. We ordered a 1/2 bacon cheese and 1/2 bacon cheese pepperoni. There was very little bacon on the pizza. The cheese and pepperoni were good. I think my biggest hang up with the pizza was the crust. I didn't care for the flavor. It wasn't bad but not great either. I suppose my expectation may be hurting them too with this review. They do the dairy and ice cream so very well that it sets a high bar. Lastly, the place was a little unusual looking. It's difficult to explain. It's like they couldn't exactly decide on a theme when decorating the place. It feels disjointed. So, I'm leaving it at 4 stars for now. I'm sure I'll go back again. If things are the same I'll downgrade it then to 3. Hopefully they'll continue to tweak the recipes and solidify the look/feel of the restaurant.

Yelp
Though a bit on the pricy side, the Cruze Farm folks have done a great job with making some delicious pizza! They have 2 styles of crust, a hand tossed & deep dish. They also have several interesting options of pizza topping combos listed on their menu, or, of course, you can build your own. We usually go for the "dumb blonde" (white pizza with ricotta, mozzarella, salt, & garlic) with added bacon, and it's just about right for 2 adults and a pizza hungry 2 year old. Be sure to save a little space to go next door & get some dairy fresh ice cream!

Yelp
An update to my previous review. Have been back 3 times now and service and food were excellent. Maybe they just had a bad night on my first visit. Highly recommend this place.
