DALMAR

The hotel is all new and shiny and emits the classic 2025 interpretation of luxury. Ie minimal hard neutrals. The smartest restaurant (ie less family oriented) is called Dalmar. It has a large long interior with two peep windows into the busy kitchen. The outside is a long relatively narrow terrace with views over the hotel compound down to the sea. It’s a little too concrete/stone for me. No soft furnishings here. Practical implications are that the the drinks produce a huge amount of condensation that delivers puddles of water around the table. A table cloth would have prevented this. The staff were nice and friendly and helpful. The menu is the least adaptable we have ever experienced but that’s the price you pay for eating at a Michelin starred chef’s restaurant. What little food we could order (we have allergies but for example they could not say what ingredients were in the Oxygarum). It was a lovely experience to go but until there are soft furnishings and an adaptable menu we will not be planning to go back soon.

I had an amazing experience in Dalmar, from the beginning. The restaurant is beautiful decorated, great views to Gibraltar and the staff made our experience even better. The food was exquisite and delicate. All exceed our expectations. I strongly recommend this place for any occasion. We will come back soon!

We absolutely love DALMAR! We live in the area and we come here all the time - it is our favorite restaurant. The quality is consistent, the staff are super nice and the food is delicious. Highly recommend!

Una experiencia gastronómica. Un restaurante totalmente recomendable con un excelente servicio y calidad en el producto. Un nuevo proyecto de Benito que estoy seguro que va a triunfar. Disfrutamos muchísimo y recomiendo este sitio a cualquier persona que quiera disfrutar de una gastronomía excelente. La lista de vinos también es muy amplia con referencias de mucha calidad.

Expérience extraordinaire dans ce beau restaurant au sein du Fairmont. Depuis l’accueil on sent le niveau et l’expérience à laquelle nous avons droit et c’est sans faute. Cuisine exceptionnelle et surtout service et personnel extraordinaire. Bravo
