Chef Nick Balla Will Attempt to Eliminate Food Waste at New Restaurant | Eater SF

"Planned as a zero-waste restaurant and large-scale processing facility (a “working name”), Duna Kitchen aims to eliminate food waste by processing very large volumes of B-grade produce — think 1,500 pounds of overripe plums or an overwhelmingly huge amount of dandelion greens — into delicious food. I’m told Balla is custom-designing a 3,000-square-foot kitchen filled with equipment like tilt skillets and huge dehydrators so the processing facility can be the main function, while also housing a counter-service location of Smokebread, a bakery, a ticketed dinner series, butcher-block seating, and a retail section. Wholesale under the Duna Kitchen brand is a goal, with Smokebread dips and spreads offered in smaller compostable packages, and although produce may be donated at times, the plan is to pay for it to create market value and benefit everyone through the supply chain. The project is still early — lease and fundraising remain, and recipe testing will start on a smaller scale in a commissary kitchen — but the intent is to build a flexible processing kitchen that creates food that is simple and delicious." - Ellen Fort

Anywhere I’m going 2 days in a row and ordering the same exact thing doesn’t need much more of an explanation. This place is amazing. So fresh and great proportions sandwiches and an equally delightful group of people who own it and others who work here. Highly recommend :)

My sister in law decided to have lunch from here and that was a great choice. I really enjoyed chicken avocado wrap. Freshly made with ingredients spread across evenly. I really like the chopped crispy bacon in it. Kale soup was good, but I prefer it a bit spiced. Overall great food, highly recommend!

Dana's kitchen catered my intimate wedding and bridal shower. The presentation is unmatched. Everything looked so drop dead gorgeous and tasted even better. I am so thankful for all the work and attention to detail that Dana and her team put into preparing everything.

Wow! We had driven by Dana's a couple of times but never at the right time to stop for a meal. Today was different. I do have to agree with some others that the wait was a little long but it was well worth it. Everything was so fresh and delicious and the portions were huge. We had the falafel wrap which was one of the best we have ever had, and the smoked blue fish Greek salad. The blue fish was amazing and the salad full of fresh delicious vegetables. Their home made cole slaw, dill pickles and chocolate chip cookies were also just great. Next time we are driving by we will stop no matter what time it is because we can always just got for the cookie or other baked good. Everything looked so good!

I've always wanted to go here on our trips to the cape, we finally went and will never go again. The prices are exceptionally high, $18 for a sandwich without any sides, and the service is incredibly slow. For a counter service I would not have expected over 30 minutes for 3 sandwiches.

Best Reuben ever! The kind of sandwich you dream of on a cold gray Cape Cod day. Perfection. The food is also consistently good. Everything ordered - from apps to desserts - were delicious. The owners are super sweet, great service, cute spot and can't wait to go back. A little gem of a place.

Dana's Kitchen is famous for its appearance on Guy Fieri's "Diners, Drive-ins and Dives", and its fame is well-deserved. Its Portuguese kale soup got highlighted- https://www.foodnetwork.com/recipes/portuguese-kale-soup-3083302 Sadly, while Dana's no longer has outdoor dining on its patio and front porch, people did dine out by its parking lot. They make their curbside pickup an easy process. The number is posted on a chalkboard beside the door. Be sure to ask about specials seen on the online menu. The service is friendly. They were busy, with tons of folks coming to get takeout. I got some iced Speedwell coffee out of Plymouth (the Speedwell was the Pilgrims' other ship) and their Maryland crab cake/kimchi wrap. The wrap was delicious, nutritious, teeming with veggies, and the crab cakes were on point. Lunch cost about $20, and the DDD "pilgrimage" was worth it.

A couple of characters, Dana and Art, lovingly prepare your food. Anyone comparing this to Panera are f*&@ing clueless. Good things take a little time to prepare. Reuben was outstanding and delivered on artisanal rye bread. Wraps and poke bowls both winners. A mutual lifelong friend sent us and was well worth the visit!

Out of town visitor on last day, tried calling no answer, visited website and all indications the restaurant was open. Arrived to no one in the parking lot, walked up to patio and not approached by anyone for 5 minutes 2 hours before closing. Staff is unhelpful, Dana is rude. The food might be good, but service is awful. Spend your money somewhere else. Poor service will put this restaurant out of business.

This place is awful they don't make any of their food. Your eating all packaged food. You may think Dana makes her baked goods because of how good they are, but no they are packaged as well. She is awful to her workers. They charge way to much for their food and they don't even make any of it their selves.

Dont give them your money- go to panera instead. Owner was extremely rude and the restaurant took an hour to make 2 turkey club sandwiches. They were complaining that "no tomato" is considered too hard and changing the sandwich too much. They were moping around in the kitchen and serving people that came in after me. Really was hoping to support small businesses during covid, but they have kinda ruined that for me along with cape cod bagel. Will definitely not being going back with such awful customer service

We went here on Guy Fieri's recommendation and were extremely pleased! We had a chicken avocado wrap, a Ruben, and a spicy BLT. Everything was very fresh and so incredibly delicious! Dana and her team were very polite and courteous. I only snapped a pic of my BLT because everyone else had already devoured theirs. It also has outdoor eating which is always desired in our family. I highly recommend this place!

We probably visited Dana's Kitchen nearly a dozen times, trying all sorts of menu items. Highly recommend - such a treat. SERVICE. The Summer of COVID isolation - we restricted everything to take out. Called ahead to order and service was consistently friendly & accurate. I thought the team was also accommodating and willing to handle adjustments when needed to menu items. I gave tips for every order because of the excellent service. In the spirit of continuous improvement: the young employees answering the phone rarely had knowledge of the menu - they often did not know some basics (great example: no idea if there was a choice of bagel, and there was). Not sharing this as a complaint but rather coaching for them. FOOD. Fresh, high-quality, ample portion sizes, and wonderful variety on menu. We particulary loved: Spinach Salad with Chicken & Sesame Noodles, Narragansett Bluefish Wrap with Horseradish, Dana's Club, in-season Soft Shell Crab Sandwich on Challah, Cranberry Walnut Chicken Salad. One time must have been slower, I got to meet Art!!! He couldn't have been friendlier & really made me even happier to support this business. I think this is a jewel within Famouth.

Have visited a few times now for both morning coffee and croissants as well as lunch. The baked goods are tasty if a bit overpriced. But the sandwiches are very fine and reasonable for what you get: the Reuben is particularly outstanding, with an inch each of corned beef and Swiss. Tuna melt was also great. It's a nice space inside, and the outdoor deck (covered and not) is comfortable when the weather warms and the deck comes into regular use. Proprietors are friendly, eager to please, and seem to be partial to saxy jazz ala Getz, Coltrane, Hawkins. A few drawbacks: no espresso drinks, no refills on iced tea, and they close pretty early some afternoons (~2pm). Also closed Tuesdays.

Diverse menu - hard to choose as it all sounded good. We had the famous soft shell crab sandwiches and they were delicious. Picked up a chocolate chunk & peanut butter with baked Reese's cookies. Dana was very friendly and helpful. Even made sure we had directions to ferry.

Stopped for lunch on our way to the beach. We both had the fish sandwich. It was fish, that was broiled, on challah bread. It was the best fish sandwich I've ever eaten. Cooked just right and now oily, with just a light breading. Highly recommend! The price was reasonable and service was fast and friendly. Look forward to coming back!

Terrible customer service from owner!! Pulled up and we were the only car in the lot no signage out front that is phone order only and no phone number in sight when walking to the door. Though we were nicely told by a cashier that she could take our order when ready. Once we were about to order the owner came to the screen door with attitude and demanded that it is much easier to just order over the phone and spat the number out quicker than I could type and walked away. Tried calling no answer from counter that was visible from outside. Needless to say we never ended up placing our order don't waste your time.

We had a GREAT lunch at Dana's Kitchen this weekend. The owner was very helpful and friendly and talked us through the menu and how everything could be made to order. The falafel wrap (vegan) was fresh and hearty with lots of vegetable fillings and not too much wrap, very good hummus and delicious homemade pickles on the side. The PB cup cookie is "to die for" my mother says. The spicy BLT had pepper jack cheese and avocado which was a great touch. Very interesting menu with something for everyone. Outdoor seating was wonderfully relaxing - going to Dana's Kitchen feels like you are being invited into their home. Service was lovely. Definitely would recommend!

Looking for a place for lunch? Look no further. On our way home from the Cape, it was an easy hop of the highway for this cozy spot with outside seating. My wife and I ordered the Haddock Chowder, which we both split. Next time though, I get my own bowl! This luscious chowder was crowded with beautiful sweet haddock swimming in a perfectly seasoned base served at just the right temperature. It just couldn't get any better...or could it? It did. Next, on our order was their classic Fish Sandwich. What can I say other than it was off the hook! Tender fillet, fresh greens, tangy but not over powering tarter sauce, an absolute 10. Home run, outta the park!

Hands down my favorite sandwich shop - in any city, ever! There is a standard menu, which is always good, but the really amazing sandwiches always fall on the specials menu. Try the falafel, it's quite good. The crabcake sandwich is amazing. And any other option you want to try will also be phenomenal. The sweets are always good and the cookies are particular hard to get away from. The coffee is great and there are always a couple of options if you don't want a standard cup of joe. The place has indoor and outdoor seating (depending on the weather) and they always have the food network on (which just makes me smile). The owner is fabulous and unbelievably sweet and friendly everytime I go in there. He always makes my mother laugh and that means the world in my book!

This place typifies my opinion of Falmouth: over-priced and underwhelming. Service was very slow, I think partially because of the strange system where you order at the register and seat yourself with a playing card associated with your order. A bunch of very timid teenagers wander inside and out trying to find the right table. For a casual dining establishment, it took nearly half an hour to have our food served. My gazpacho was unpleasantly vinegary, and my veggie roll-up fell apart instantly exposing an interior of wilted lettuce. All in all, everyone in my family was pretty unhappy with their choices except for my sister who ordered a salad with goat cheese, cranberries, and walnuts. The baked items were far more impressive than their deli options. The Challah was a tasty surprise. MmmMmm.

Dana's club sandwich may be the greatest sandwich in the world, but everything on the menu is excellent and done with marvelous attention to detail. The restaurant is small, but has outdoor seating when weather allows. Art and Dana are both chefs with serious training, but they put taste ahead of complexity or overdone creativity. Their food is always fresh, impeccably prepared and delicious.

Waited in line for 10 minutes to order 2 rollup sandwiches at 12:45 pm. Waited 45 minutes for the order. Crabcake and falafel wraps were good but certainly not worth the wait. Also when we asked after our orders 30 minutes in, Dana shrugged and said "it's August on the cape...this is Dana's place". No apology offered and no advance notice it would be a an absurdly long wait. Pass this one by!

I would say that 3 stars is pretty fair. Sandwiches are so-so, ambience is really nice, service is mediocre. Getting your order in is a weird mix of get it yourself and order at the register combined with a pay now, pay later type of deal. Some things are written on the wall and some are on the menu, seems not well thought out;I've been here several times and I've never really got the hang of it. Also the ordering area gets crowded / discombobulated and the clientele like to stand at the register and shoot the breeze with the staff about trivial things like "did you hear that Harry is allergic to mustard?". Who cares, move aside and lets keep the process (as strange as it is) keep going. Oh and its open in the morning but saying they "do breakfast" is an understatement. Let's just say they have some breaded goods available in the am. So-so with promise I would say.

As I was planning a visit to the Cape, I saw Dana's Kitchen and read many reviews for many sources and knew I needed to try. It was fabulous. The food was one of the most delicious ever. The ingredients are so fresh, the quality and quantity was great. If you want something fast and inexpensive, go to a fast food restaurant, but if you want something that will make your tastebuds beg for more, go to Dana's.

We found this place that was highly rated on Yelp and realized it was featured on Triple D, so it's got to be good, right? So completely wrong, I would say it's far below average. The biggest problem? The owner's attitude. I get it, you're nearing the end of the summer on the Cape, but when you are swearing at your customers under your breath but noticeable enough to everyone in line- like come on. Just plain rude and so completely unnecessary. She seemed to treat her staff like she owned them, but when they came to deliver the food they were so nice. I almost said, "How do you work for her?" My boyfriend had the club sandwich, it was mediocre at best. Lacked flavor and at the price point it was disappointing. I had the spicy BLT and it was gross. Proportions of the ingredients were way off and I ended up just picking at it. Also the bacon seemed old and bread also seemed like it was a day old, or more? Maybe this place was a go-to spot years ago, but certainly not anymore. I would highly suggest you find ANYWHERE ELSE than to succumb yourself to this disappointing establishment.

I like to judge an eating place by its soups. This is because it takes a lot of time to prepare and you can't really charge a lot for them. So if they are good it's because the cooks care about good food. By this metric, Dana's Kitchen scores off the charts. Their Portuguese Kale Soup is wonderfully flavorful made from vividly tasty kale and zesty linguiça sausage. Their matzoh ball chicken soup is superb. I have never had a soup here that was not competently made from excellent ingredients and several that were stellar. Venturing past the soup bowl one finds great sandwiches including a Reuben that would please most New Yorkers. The baked goods are tempting and satisfying. My favorite is the coconut macaroons. The fact that the place is run by two graduates of the Culinary Institute of America who delight in good food is easily discerned.

It's convenient to the swells from Sacconessett Hills, but a nothing here for a local contractor looking for fulfilling lunch-time fare. Uninspired menu, small sizes, lackadaisical preparation.

What a wonderful lunch! I would say this is the best place to go for a salad in Falmouth. It was an all around great experience from the freshness and variety of the food to the service! The owners were working themselves and very friendly! We had Maddelein as a waitress and she was so nice and willing to accommodate us in anyway she said it was her job. As a waitress myself for many years I saw great quality and her service! As a child I didn't appreciate Dana's kitchen as much, but upon returning today I can see why my grandfather I loved this place!

Dana and her husband, Art are some of the most kindhearted, gentle, and wonderful people you could ever hope to meet. They also happen to be PHENOMENAL chefs. Everything from the pastries and cookies to the soup and sandwiches are out of this world. The restaurant is nestled on a quiet wooded street that lends it self nicely to dining outside and enjoying the more wooded side of Falmouth. I consider myself to be a quiche connoisseur and their quiche is BY FAR the best I have ever had the honor to eat. Their prices are reasonable and the staff helpful and smiling. Take it from a local, I you are in the area, I wholeheartedly suggest you carve out some time for lunch at Dana's Kitchen!

Stopped to pick up food for lunch today. Called it in, and the girl on the phone sounded very young and inexperienced, not quite sure what she was doing. Upon arrival, I was told the sandwich I called in was unavailable. Not quite sure why the girl would take my order if they were out, and then not call me back? The other sandwich I got was good, but it was such a process to order/pick up. Pricey also, 2 sandwiches were 30 dollars. I also noticed the "homemade" pastries looked very similar to ones served at other bakeries in Falmouth, and had flies on them. No AC added to the horrible experience. Would not recommend going there.

Overpriced $13 roll-up. Was supposed to be cobb wrap with chicken, lettuce, blue cheese. Enough lettuce in the wrap to fill a family salad bowl with about as much chicken the size of my thumb. Very disappointing and a rip-off. Overpriced sandwiches in general. Paying for the atmosphere of being off the beaten path.
