This is in our opinion the best restaurant this region has seen in the past 15+ years. It was already good with the previous team, but the new chef makes it even better. We had the full tasting menu - it was excellent, but what we found particularly good are the bold flavors. In Germany, particularly in this region, we are used to more muted flavors, as the people generally prefer milder tastes, and the chefs are careful not to offend them by not meeting expectations; also courses tend to follow the classical French gourmet template, to avoid any surprises. This is not the case at Danza - the flavors are bold and intensive, and the courses show imagination, bordering on experimental. Closer to the Basque gourmet, rather than typical French. We hope to see it soon rewarded by Michelin and others.
