(Overall: A+) - Das Loft is a beautiful rooftop eatery in the So/ Hotel with views overlooking the entire Vienna city center that is for sure not worth missing. If you want a window seat table, you must participate in their pre-fixe that would run for 130euros. The food is innovatively exciting, high quality and impressive, particularly among the presentation front.
(Dragonfruit Cocktail: A) - If I had to design an Asian-inspired cocktail, this is everything I would want. The dragonfruit provides a beautiful pink sheen to the drink, in addition to a beautiful garnish, which is a smart use of the peel. Lychee is also a good pairing that is light and aromatic.
(Salmon Tartare: A+) - I love the intricacies involved to make this first bite truly set the tone for the rest of the menu. For example, that green sauce seems to serve at least three purposes -- one to hold the puff in place, another to add colors similar to vines in a garden with those flowers, and third, to add acidity to the dish to build depth of flavor and pair with the richness of the salmon. Very impressive dish.
(Tomato Butter: S) - As a person who does not enjoy butter, this was the best butter I've had to date. Tomato is a genius pairing as it adds some slight sweetness and acidity to help lighten the fattiness. Further, it was beautifully plated almost to the shape of a burrata that truly captures the picture perfect essence of this dish.
(Arctic Char: A) - The arctic char is paired with a classic ponzu that adds bold flavors that works. The fried vermicelli, though, is such a smart pairing that helps raise the bar for the dish as it gives height and some impressive presentation, and also soaks up that beautiful dressing.
(Pork Belly: S) - I was quite impressed with this dish given the numerous elements that complemented each other harmoniously. The crispy chicharron added some crunchy lightness to the rest of the pork belly, and the kumquat added significant acidity to balance the dish. I was also a big fan of the eggplant puree, which added a creamy earthiness to the dish.
(Angus Beef: B) - This is a beautifully plated beef and mash dish with handmade gnocchi which was light and fluffy. Unfortunately, even after sending back the first piece of beef, I found the beef to be rather over that is almost worthy of a job well done (despite still being tender).
(Viennese Fruits: C) - This is yet another beautifully plated dish, but unfortunately I found this dessert lacking in substance as it pairs fruit, ice cream, and sweet bread, missing a component with significant backbone to ground the dish. I did enjoy the farm to table flavors that were harmonious though.
