There are restaurants you visit — and those you truly experience. De Managerie in Bruges is unmistakably the latter. In its intimate, elegantly understated dining room, a menu unfolds that not only justifies its Michelin star but celebrates it with every single bite.
We chose the four-course menu, and after the very first dish it was clear: this is a kitchen led by someone who not only masters technique but understands how to translate emotion onto the plate. It was genuinely impossible to pick a favourite. Each course carried its own character, its own delightful surprise, and each one was superb.
A particular standout was the duck — cooked with absolute precision, tender and juicy, balanced by an exceptionally harmonious flavour profile. The subtle smokiness set it apart: not a gimmick, but a thoughtful, beautifully integrated note that showed how modern cuisine can shine when craftsmanship and creativity meet.
Swapping plates among ourselves added an unexpected layer of joy. Every dish revealed new nuances and reinforced one thing: the team at De Managerie knows how to deliver variety without ever losing focus or consistency.
The meal concluded with a dessert that was nothing short of extraordinary. Rarely have we enjoyed an ending so flawlessly executed — textures, flavours, sweetness, freshness — all in perfect harmony.
