The 38 Best Restaurants in Santiago, Chile | Eater

"Get your ticket to chef Benjamin Nast’s modern Chilean restaurant, set under a carnival-esque big top where delicious “madness” is served on a plate and fire breathers, aerialists, and magicians entertain dinner guests. Start with a platter of local oysters inspired by Thai, Mexican, and Japanese flavors, paired with one of Fabian Reyes’s breathtaking cocktails like the Demasiao’, a highball of Chambord, ginger syrup, ginger beer, and pomelo juice. The small plates menu includes fish tiradito in ponzu, Tacos Dementes (cold, Nobu-esque tacos of citrus-cured Chilean rockfish with avocado cream in a crunchy wafer tortilla), and arroz de langostinos (grilled langoustines over a weave of red rice and caramelized socarrat). It’s also a great place to grab a burger and a glass of Casas del Bosque pinot noir. Bill Esparza" - Bill Esparza

We love this restaurant and have been several times—even recommending it to friends from out of town. However, we were very disappointed by the food during our last visit. Cocktails and ambience were great, but our first course, oysters, took almost 40 minutes to come out. They were tasty, but extremely small for the price tag. The main courses also took a long time. We shared the octopus, meatballs, and truffle fries. The octopus dish was 70% potatoes, with only small bits of octopus mixed in. The meatballs were so overcooked that you could barely cut them. The fries had good flavor, but were soggy, you could tell they had been sitting out for a while. After talking with the waiter, and then the manager, they did not charge us for the octopus or meatballs and took them back. They offered us a coffee or dessert on the house, but we decided to get the check and go to another restaurant next door. Overall, a bad night for this restaurant that we have historically really enjoyed. I hope they figure out their kitchen issues!

Food was good, tasty, nice presentation (best dish beef tartare). Cocktails nothing exciting to be honest, maybe I was expecting something more creative for the restaurant concept (i tried a sauvignon blanc which was part of the 5-course menu, the acidity is too high I do not recommend it). Friendly staff, the only problem was that they didn't have enough staff and the waiting time was very long (food and drinks).

I absolutely enjoyed my dining experience at Demencia. The staff were so kind and thoughtful, I even got approached by one of the managers and she went above and beyond to make me feel comfortable/welcomed. The moment you walk into this restaurant, it feels as if you are being transported to an artistic and interesting scene. Highly recommend Demencia truly had me in awe!

A Disappointing Experience – Reservation Mishandled on My Birthday I had high hopes for Demencia in Vitacura, especially after they confirmed my reservation for a special occasion — my birthday. However, what followed was incredibly disappointing and speaks volumes about their front-of-house management. On the day of my birthday, I called to confirm everything was in order. I was told, “we’ll make it happen.” Hours later, I was informed last-minute that the reservation could not be honored. No proper explanation, no alternatives offered — just a flat-out cancellation on one of the most important days to dine out. As an American living in Chile, I can confidently say this is not the level of service I’d expect from any establishment claiming to be high-end. I’ve secured tables at top-tier restaurants in Miami and New York without this kind of amateurism. While I can’t speak to the food or ambiance (since I never got to experience it), I can say the customer service and reservation handling were unprofessional at best. For a restaurant aiming for excellence, the basics need to be solid — and sadly, they weren’t.

Fun experience in a unique circus-themed setting. We enjoyed all the food -- modern dishes, fun presentation.

This place offers a different experience with its circus-themed vibe, as well as the quick shows happening from time to time over the night. Cocktails were great, great service, and food was just OK, nothing memorable. Prices are average for the area. Recommended for a drinks night with food to share more than for dinning.

Demencia has a small but very well done menu. We absolutely loved the mini sandwiches! The food is inventive but delicious, which can be difficult to find in achulé. Definitely one of my favorite places in Santiago!
