"Housed in a private mansion in the Marais, this restaurant is run by an Argentinian chef who creates inspired seasonal cuisine. He devises two "carte blanche" menus, one focusing on meat and fish ("Terre & Mer"), the other vegetarian. We had an amazing experience at Dessance for a special night out. The food is incredible, with bold and unexpected flavour combinations. We got to try some new flavour pairings as well as some classic dishes like lamp chomps. The wine pairing really helps bring the meal together. The service is kind and friendly and really attentive. We loved the open kitchen, letting you see the chefs at work. Despite the open kitchen, the restaurant isn’t too noisy so you can still have a conversation. The kitchen staff were calm and friendly and we really appreciated when the pastry chef brought her dessert over to us with a smile. I had high expectations, but it was better than I imagined. The lamp chomp was genuinely one of the best cooked pieces of meat I’ve ever had, and normally I’m not a huge fan of lamb. My partner isn’t usually fond of steak tartar, but the one here changed her mind and was even one of her favourite things on the menu. The chocolate mousse dessert with jasmine sorbet is one of the best desserts I’ve had in my entire life. If I had one small note, it is that the chairs are not the most comfortable if staying at a restaurant for 2+ hours. Overall, with great service, amazing food and a lovely atmosphere, Dessance is a really special place for a special night out. We will be coming back!

The restaurant offers a relatively good cuisine with an innovative French twist. However, the service was rather peculiar. The waitstaff demonstrated limited professional competence, with unclear enunciation. Possibly I'm a Asian and dressed in casual attire rather than super formal wear, given our younger age, we noticed the manager showed noticeably less enthusiasm toward our table compared to others, particularly older guests at adjacent tables who received warmer treatment. While leaving, we weren't even assisted with door service - an oversight we didn't witness with other patrons. I believe quality dining establishments should maintain consistent service standards regardless of guests' demographics or tipping (note: France has no tipping culture). If this restaurant were awarded a Michelin star, I would question the guide's evaluation criteria. Additionally, the overcrowded dining space with high customer density resulted in overwhelmed staff. I hope the venue won't prioritize income traffic at the expense of diners' experience. BTW, they are run out of hand soap in the restroom.

This was one of the best restaurants we have ever eaten in! We are vegetarian and to be served a tasting menu which was so elegant, extraordinary and so delicious was a gift. When we have experienced other tasting menus we never feel quite satisfied. This spot served us so many delicious things and 3 deserts! The waitstaff was excellent(obviously well trained) and as an added bonus, the restaurant is in an old historic building. We couldn’t have been more pleased!!!

Relatively informal fine dining with slightly awkward service, decent food and a wine pairing that comes up a bit short. I had omnivore ex shellfish, my companion had vegan. The vegan food was better than average but lacked protein. Tofu or beans could go a long way. The omnivore menu was refined, delicate flavours, but no wow factor. The wine pairing is middling. Small pours and noticeably no pairing for dessert. Instead, dessert pairing is an upsell, as is the cheese course (I was stuck with a double portion), as is the wine pairing for cheese. The upsold pairings for cheese and dessert, a vin jura sous voile and a Thierry Mortet Bourgogne, were generous pours, €15 to €19 per glass, and significantly better than the main pairings. Upselling increased the cost of the meal by about 30% but the upsold wine was more memorable than the meal. I also picked up a snack after the meal; the overall quantity was not quite satisfying.

We had the “regular” tasing menu and it was amazing! The dishes and the wine pairings were outstanding. The depth and intensity of the flavors was truly scrumptious. The fish courses were elegantly and perfectly prepared. The steak course was by far the best steak I’ve had in my life. So dang yummy and compared to prices in California where we’re from it was a bargain! Mange!

My 12 year old and mother were both excited and a little nervous for their first chef's choice tasting menu experience. After the first course they were not nervous and just very impressed. The atmosphere was welcoming and friendly and the food and wine pairing were described and presented beautifully with a playful flare that we all loved. From start to finish our meal was delicious and we all agreed it was a perfect way to end a wonderful stay in Paris.

We were without a plan for dinner, wandering the streets of Paris looking for a place deserving to host us and our unhinged jaws when we stumbled upon this place. We took a peak at their menu on display outside and as soon as I saw "vegetarian option" under their degustation menu I was sold. Tina was sold because we had just downed a few cocktails and they had a bathroom. Fortunately, we did not require a reservation for immediate seating on a Thursday night around 8ish. They have an open concept kitchen so you can watch them do their thing and it is SO cool to see. The staff were very friendly and really added to the experience. The six course meal and wine pairing were both priced extremely reasonably. I would even go out on a limb to say that it's a very good deal. I don't remember specifics but I do both GF and I greatly enjoying our meal. The wines paired wonderfully with everything. They literally came out with so many different things that one of the servers said "this is the last course, I promise" lmaoo. This place is certainly worth a visit.

Definitely lives up to it's Michelin star status. The dinner was multiple courses, each complementing and improving one after the other! We were seated at the chef table and had a very cool view of all that was going on. The staff went above and beyond to make us comfortable, so warm and friendly! Not only is the food delicious and beautifully plated, they are also serving some of the most interesting dishes I've ever had for a very reasonable price. For starters we tried 2 dishes. Sucrine, coriander tzatziki, poached pineapple, truffle vinaigrette. I don't even like coriander but the flavor was not over powering so I quite enjoyed it. This was basically a salad but it was plated carefully and that poached pineapple was like an explosion of flavor in my mouth. What I would give just to have a huge bowl just of this pineapple. The second starter was royale de foie gras, pickled cabbage, purple sweet potato crumble, braised fig. This is quite possibly the most interesting starter I've had in my entire life and it was plated so carefully. I can't describe to you how delicious that crumble was and all the ingredients complimented each other so well. For the mains we had octopus, parsnip puree, spinach velouté, grilled almonds. A GORGEOUS dish that was more like a soup to me with octopus pieces on top. Again a great combination of ingredients like a match made in heaven. The star of the dish was really the spinach velouté and I wish they could just give me a giant thermos of it to go. The second main was a blanquette de veau, potatoes, carrots, endives, salted nuts. Tender, shredded veal with a delicious sauce and plated to look like a painting. I have been to some really good restaurants in Paris, but seriously none of them are as amazingly presented on the dish as Dessance. Every plate that comes to the table I am overjoyed with the care put into it. Also no other restaurant has such an interesting mix of ingredients together in one dish as well. I regret not having any desserts but I had several pastry shops I had to go after so I had to manage priorities! I don't really feel that pictures do this place justice. You have to come to experience it for yourself on your next trip to Paris. I know that on my next trip back I am 100% going to come back to Dessance again! Literally food art heaven

Chef Javier has an uncanny ability to blend unusual tastes into truly exceptional dishes. Last night's dinner was truly a wonderful surprise. While Dessance gets high reviews, the tastes created such rare pleasures that it deserves a Michelin star. I am returning in three days to repeat the experience.

We had a truly bad experience. Portions were so tiny that we all left extremely hungry. While presentation looked nice, none of the food was particularly memorable. In fact, the dessert was completely inedible - I mean tasted awful. They told us one dish was going to be a sausage dish - I kid you not it had two 1cm drops of liquid andouille sausage next to a bland piece of asparagus. We were actually laughing at how small the pours were for the wine pairing too. On top of that, they put us upstairs and kept forgetting about us entirely. They offered to accommodate one of us who doesn't care for duck by swapping it out for the vegetarian option, yet when that course came they forgot. That's fine - mistakes happen- but then the server instead just questioned her why she doesn't like duck and was insisting that *their* duck would change her mind, making her feel pressured to keep it. She indeed did not like the duck. He then gave us a tiny extra splash of wine to "make up" for the mistake. Also, the tension between the two servers - one clearly new - was totally palpable which made for

My experience at Dessance treated me to one of the best meals I'd had during the long weekend I spent in Paris. While I didn't go to any of the San Pellegrino/Michelin mainstays in Paris, I can say with some degree of confidence that they may not have been as intellectually engaging as everything I saw and tasted at Dessance. Located in a fairly casual space in the Marais area of Paris, the restaurant strips away pretense and provides a meal that stands up to any critique. To appreciate Dessance requires one to first understand its story and its concept, borne out of the mind of a dessert pastry chef. The goal of Dessance is not to provide a meal that is full fat and meat heavy, but utilize the delicate touch and balance learned from dessert/pastry and apply them to a full menu that includes savory items. The focus is less on proteins, but more on the flavors and textures of fruits, vegetables and herbs. These are all welcome departures after meals consisting of foie gras and cheese all over France. I came in at lunch as a party of 1 and they sat me at the counter where I had the privilege of seeing each dish plated and presented. I had the Hedonist menu which included savory and sweet bites that are pictured. Some memorable moments included the use of salsify three ways in a mushroom dish, shiso + blue cheese, pretzels + lemon confit, smoked walnut shells + veal, etc etc. Very inspired. I highly recommend Dessance, which for the price point, was affordable and delivered. Great casual ambience, very good music. Superlative service by young chefs and managers, catering to a new generation of eaters.

We all felt that the food was remarkably good, with a perfect wine pairing to match. One person in our party enjoyed it more than Arpège, and while I'm not sure I completely agree, it certainly deserves a detour to visit. For what was truly a fine-dining caliber meal, it was also surprisingly inexpensive. The service was gracious, warm and unpretentious.

The food is quite interesting with some combinations that you likely won't find very familiar. If you're looking for a nice ambiance and want to be a bit surprised with your palate, this is your place. The chef seems to enjoy what he does, and you can see everything that's going on in the open kitchen. I do have to agree about the service here though - a couple of times, we weren't sure whether the meal had ended or there were more courses left because of the slow service. They also gave us the wrong order (which we were not aware of), and we ended up paying for a more expensive meal than we anticipated.

I watched the HEAD CHEF wipe up some over spray of a whipped topping, lick his finger, and then move onto touching other people's food with his bare hands. Um, no. That is disgusting I don't care what country it is.

Dessance is definitely an experience, and am excellent one at that! I am rating this a hesitant 4.5 mainly due to timing issues which I'll elaborate on. Small restaurant about 3 Kms from louvre etc in Paris. Excellent, hospitable, friendly service. Great menu! Blown away by the combination of sweet, savory, in between. We got the middle food pairing- 5 dishes in all- plus a palate cleanser at the beginning, end. We also got the wine pairing which we thought was very good too. Price was fair I thought- especially since it included the service charge. $142 for 2 people. Loved all courses but my favorite was with foam, cheese, tangerines fresh and in foam form. I thought it was an excellent fish and really tickled my taste buds! The first course was veal drenched in truffle cream with parsley parts. Good but I wonder why they started with that. My only complaint was that I think somehow the gap between veal and the next dish and for our dessert was way-too-long. It kind of made me very impatient and our drinks seemed just sitting there. Just a small problem. Oh also a really appreciated our server rushing to bring us our check AND calling us a cab! Didn't think he would go that far!! Merci!!

tl;dr: fantastic, complex, fun food. impeccable service, wildly fun experience. I came here with my girlfriend for dinner on our last night in Paris. We made a reservation two days prior and were lucky to snag one of the last tables at 9pm. When we arrived, I immediately noticed two seats at the chef's table (and two seats at a normal table across the room). As a gentle request, I pointed to the chef's table seats and asked the maitre d, "is this for us?" - I was ecstatic when he smiled and pulled out the chairs. As soon as we were seated, we were seen by about 3 people - a nice woman who discussed wine options with my girlfriend while laughing, the maitre d who discussed the menu with us, and a bus boy who put down silverware and glasses of water. My girlfriend opted for a glass of wine and on the insistence of the waitress that she make us a free drink for "waiting so long" I received a glass of rose. My girlfriend enjoyed both. We decided to split the veg tasting and normal tasting to maximize the number of dishes we tried. This ended up being a great decision, though the meat dishes usually outpaced the veg ones (sorry vegetarians). We began with perhaps the most impressive and complex amuse-bouche I have ever tried. The veg was some small bite that tasted of corn but in a wildly delicious and simultaneously simple and complex way. It was served on a platter of raw corn kernels that I enjoyed watching my girlfriend mistakenly try to eat. The fish option was a mussel encased in a shiso leaf and tempura-fried. This was so delicious, I almost forgot to wonder how on earth they managed to keep the mussel encased during frying. The next several dishes were a whirlwind of flavor, presentation, and culinary skill. On some occasions, I think they backed away from a risk taken in the last minute (the delicious smoked carrot that was pretty one-dimensional). On most occasions, the dishes balanced flavor, presentation, and fresh ingredients in ever-amazing ways. For a few dishes, the head chef came over to us and discussed the ingredients and how they were prepared. This attention to the customers, ingredients, and preparation only served to make the dishes more delicious. The desserts were all spot on. One managed to make my girlfriend revisit her hatred for caramels. All impressed. Throughout the meal, we had the pleasure of watching a team of 3 cooking their asses off in a minuscule kitchen. They managed to prepare a massive number of dishes without even a burner installed into the kitchen (they were using a small hot-plate that plugged into the wall and an open grill that was used for several dishes). Watching them work was almost as enjoyable as the meal. We were impressed with how the kitchen managed to communicate without talking and plate dishes in unison. At the end of the meal, the chef visited us as the kitchen was shutting down. We told him how impressed we were with the food. I especially wanted to know how they managed to coordinate such complex dishes in such a small kitchen without talking barely at all. Apparently, despite this being their first month at the restaurant, the trio have been working together for several years and just migrated together from another restaurant. The chef is a very nice man who was funny and chatted with us briefly about his life and how much fun he is having cooking at Dessance instead of his previous occupation at a more traditional French restaurant. The menu came out to about 70E/person with wine. I can't imagine there is a better combination of price, experience, and food in Paris. I hope they get a star in the next few years. They deserve it.

I really enjoyed the concept of this restaurant and thought it was a lot of fun. They have a couple menu "styles" that you can choose from: all sweeter plates, or a combo of sweet and savory. I think there was even another tasting menu of some sort but I don't recall the exact set up. We both choose to do the "sweeter" menu, which included 3 small plates and then a dessert. You do not know ahead of time what you will be served, which I normally avoid, but I read another review that said 90% of the dishes are vegetarian and that no "weird" meats are used or anything. This was absolutely accurate (at least for the sweet menu). The food was very pretty and such unique combinations of flavors. It was a really cool overall experience and I definitely recommend trying it as a "safe" way to try a fixed menu. It's also a nice way to step out of your box if you are the "typical American tourist". The staff were very welcoming and explained what each dish was as it arrived. At the end of the meal they even brought over one extra course for us to try on the house. I can definitely recommend this restaurant on all fronts, but especially for the uniqueness of the experience.

My wife and I came here a year ago, and sadly we didn't take any photos since both our phones were dead from a day out exploring. But the memory will last forever. Unforgettable. -==FOOD==- This is hands down our favorite dining experience ever. It's so different from anything else out there. It's a 5 to 7 course meal consisting of only desserts. Some sweet, some sour, but all amazing. The different textures and colors truly make it art. The best part is that you can see them prepare it in the open kitchen. Choose the wine pairing option and you'll fall in love with this place. -==LOCATION==- Located in the wonderful and entertaining Le Marais section of Paris, this gem is merely steps away from shops and other great eateries. --=SERVICE==- Awesome! The waiter explains everything to you. Each course is described in great detail as well as the coupling of the wine. They are so knowledgable about their food. Please tip them!! -==VIBE==- Super modern chic and clean.

Thank you for a memorable experience because of the smiling faces of the staff and the wonderful ( out of this world ) dinner. The "irresistible" was definitely a great choice but I'll come back for the second option and I'm already excited. The art of representation and the fusion of textures and flavors left us smiling after every bite. Ambience is really nice too.

So delicious I went back the next night with a coworker. Presentation is a huge part of a meal here. Each dish is meticulously presented and creates a gastronomic delight. I usually leave tasting menus hungry. Not here. It is heavily weighed on the sweet and vegetable side. I only had one meat entrée with my meal and probably would have liked one more. Overall 5 stars for the price!

There are multiple aspects that factor into what makes an excellent establishment. Sadly Dessance falls short not because it doesn't deliver on food, but because of its apathetic service. What Dessance provides in creative plating and use of ingredients, it decays with a monotone server and brusque sommelier. When it comes to fine dining every detail matters, and the customer service should reflect the care and affection the kitchen affords its food. Coming in on a Sunday afternoon I ordered the sweet+savoury tasting menu. When I informed my server that it was my first time at Dessance and asked whether he recommended it to me, he just shrugged and impatiently said it was a "safe" option and that I should just take it. At one point the chef behind the open kitchen burnt what looked like kale in the oven, to which there was a smell that wafted into the dining area. Overall, the flavours of the tasting menu were fantastic. I think Philippe Baranes is a genius in how he mixes fresh, quality ingredients and combines them meticulously to feature both sweet and savoury flavours without one course overpowering the other. However, I am certainly not a fan of the staff or overall experience of dining in the restaurant.

This is an interesting concept. I got the dessert + savory tasting menu so it was more like a full dinner for me rather than just dessert. The dishes were inventive and the wine pairing were good. The chefs work behind the bar so you can see what they are doing. The chef in front of us was nice and open to chatting a bit. He said that the place got really popular after a few reviews in US based newspapers so they have been getting a lot of Americans. Definitely a nice and unique experience.

I had a confirmed reservation I made online through reserve with google and their partner bookatable.com. I received email confirmations which I showed them, but the lady who purpoted to be the manager refused our reservation saying, sorry, we are booked and don't have place for you. My wife and I were in Paris just for a few days, and were looking forward to trying the food for the first time, but their rudeness was astounding to turn away two diners rather than apologize, accept that there was a mistake and to find place for us.

Waaay too slow The whole menus took 2.5 hours with only 5 courses. Usually one would expect 10 to 15 courses for this duration. I actually fell asleep during dinner. Staff is not well trained any seems lost from time to time.

I love Dessance. You get small portions of a lot of different and original stuff. Everything tastes wonderful. The staff is very friendly and helpful. Expect to eat between for 40€ to 70€ per person, without drinks. You will not regret this experience.

This is elite science meets art meets cuisine at its best. Such whimsical combinations of flavor profiles and textures and a very warm staff. You get the watch the chefs plate the food right in front of you- it is entertainment and it's like watching a science lab all at once. My girlfriend is usually a picky eater but she continues to brag about this place too.

A brilliant meal. You chose the number of courses and state any allergies then let the chef decide. When menu said fruit and vegetables it did mean in the same dish. The combination of flavour and textures was wonderful. The waiters were friendly and informative. The accompanying alcohol package was also an interesting variety. I'd recommend booking ahead it was busy on a Wednesday we were just lucky to get in!

We had the five course surprise menu and for the full Dessance experience this is really the way to go. I kept notes on what we ate in order to recreate at home, but I'm afraid I won't come near. We loved the surprising and adventurous combinations, top service and also the open kitchen with surgeon-like chefs at work. The only thing we werent all for was the meringue flambé in smokey whiskey, but we admire the courage anyway. Definetely a go to place.
