As parents of a Baylor University student, we’re always looking for spots that feel like a real treat when we visit Waco. Diamondback’s has become that place for us—hands down our son’s favorite restaurant in town and the perfect break from dorm food. We try to make it down every three months or so, and it never disappoints. What sets this place apart is the owner, Meghan. She personally oversees every aspect of the operation, from the kitchen to reservation scheduling, and it shows. We had an issue once in getting our table at the exact time we requested with the hostess. Meghan immediately contacted us and apologized and assured us that she would that would be rectified. She certainly kept her promise and each time since, she personally reaches out to us to confirm table reservations. That level of hands-on care from the owner is rare and really makes you feel valued. The food is everything you’d expect (and hope for) from a top-tier Texas steakhouse. The filet mignon is phenomenal—perfectly cooked medium-rare every time, melt-in-your-mouth tender, and when you add the sautéed mushrooms and that luxurious truffle sauce… it’s next-level delicious. The sauce brings this beautiful earthy depth that complements the beef without overwhelming it. You absolutely have to try the lobster tail too—just tell your server to prepare it the way the Baylor Basketball team likes it. It’s a fun little insider request and the result is outstanding! The wine list is impressive and thoughtfully curated, the sides are excellent, and the whole experience feels polished yet warm and approachable. We usually dine a little later in the evening, and on our last four visits we’ve been lucky enough to have Ky as our server. He is genuinely one of the best waiters we’ve ever had anywhere—super professional, incredibly attentive (drinks never run low, he times his table visits perfectly, reads the table like a pro), and never pushy with upsells, but always happy to share great recommendations. After a few visits he started remembering our names and greeting us like old friends. It’s that kind of personal service that keeps us coming back. Everything about Diamondback’s—food, service, atmosphere, and ownership—delivers a consistently amazing fine-dining experience. If you’re looking for a special night out in Waco (date night, family celebration, or just treating yourself), this local gem is the one. We highly recommend it and can’t wait for our next visit! Came here for the first time with family, we got a special room off to the side where it was quiet. Best part of the experience was our server, Cullen. I had shown up about 20 minutes earlier than the rest of my party, and he took the time to speak with me while I was waiting. He was a fantastic server and I really appreciated how genuine he was. The food was good. A few things to note: the prime rib could have used more seasoning (although it was perfectly cooked), the bread was odd (not normal fluffy bread but crunchy and hollow) and the lobster mac n' cheese wasn't really cheesy and didn't have a ton of seasoning. But the service was great, and everyone enjoyed our time there. Again, huge shoutout to Cullen!

I went to Diamondbacks in Waco last night with two friends to celebrate my birthday. The hostesses were very sweet when we arrived, and our server was kind and polite. However, the overall service was very poor and the experience did not match the price point. We were there for about two hours and barely had service for most of that time. We also noticed other tables being shown boards with the different steak cuts and having them explained by their servers, which never happened for us. The steak itself was bland and lacked flavor, and the sides were subpar. We were told a birthday dessert would be brought out, but it never came, which was especially disappointing since this was meant to be a special celebration. Honestly, the only standout part of the meal was the bread and butter, which were phenomenal. Unfortunately, everything else fell far below my expectations for an establishment like this, and I left feeling really sad that my birthday dinner was not the experience I had hoped for.

Amazing service, cozy vibe, and a hidden gem on the menu! DiamondBack’s was an awesome experience from start to finish. The staff was super friendly and made us feel right at home. The atmosphere is warm, elegant, and perfect for a special night out. But the real star? The Fried Lobster! It’s not on the menu, but if you ask for it—you’re in for a treat. Crispy, flavorful, and absolutely delicious. Highly recommend giving it a try if you’re in Waco!

My grand daughter graduated Baylor. We had a party of 11. Reserved the wine room. We were redirected to an area that were high tops that you couldn’t stay in and slid out. Dinner took 3 hrs. Food came out sporadically, no water, ate around all dirty plates and drinks that were empty. Nothing cleared for an hour… We were leaving without our entrees and they started bringing them a few at a time. We were prepared for champagne toasts, drinks, appetizers, entrees and a wonderful evening. Apparently a much more important group took our joy. We won’t ever forget this experience unfortunately.

We came for our anniversary dinner and everything was perfect! The food was so fresh and savory. Our waiter, Donald, was attentive and very knowledgeable of the menu options (and off menu options). The managers even stopped by to wish us a happy anniversary. They even gave us a rose for our table to celebrate our special night. Thank you y’all so much for a fantastic evening.

Ridiculous. This used to be our favorite place in Waco, a spot we never missed whenever we were in town. We always brought our son and his friends here and had planned to bring 16 family members for his graduation dinner. After this last experience, we will never go back. The food was good, but absolutely not worth what they are charging. The service was fine, but nowhere near the level you’d expect at the prices they command. And the drink prices? Outright insulting. $30 for a Grey Goose on the rocks (a double) — when even in New York City’s most expensive steakhouses, a double costs $24. For Waco, Texas, it’s indefensible. It’s clear they are taking advantage of Baylor families and out-of-town visitors who don’t know better. That kind of price gouging completely overshadows anything positive about the food or the atmosphere. We left disgusted and disappointed. What was once a family tradition has turned into a money grab with no sense of value or fairness. They’ve lost loyal customers for good — and anyone else considering it should think twice before wasting their money.

My husband and I dined here for the first time and the service was exceptional, and the food was equally delightful. I ordered a side Caesar salad, which was fresh and flavorful. Although my Wagyu steak was slightly too salty for my preference, it was still expertly cooked. Overall, both the food and service were outstanding, deserving a perfect 10/10.

Best meal I've ever had... From the rosemary cheddar popovers to the akaushi rib eye steak... Amazing!

Would definitely go back. We were able to book a reservation for 4 easily. I know it's a steakhouse but wow, the Cajun shrimp pasta was my favorite.

Excellent steakhouse in the spice Village shopping center. Outstanding customer service, great atmosphere, high-quality food, great drinks and a creative menu. We came here after 8 PM on a weeknight and they were open and gladly took our party of three. We ordered the New York strip and a petite fillet. We ordered a wedge salad with blue cheese, tuna, tower, and for our sides we had brussels sprouts and waffle fries, all of which was outstanding. Our waitress was Bridget and she was knowledgeable, friendly, and eager to help. She is fluent in sign language in the event that it's necessary. The weight staff are put through rigorous training and testing to ensure customer satisfaction. This is far and above what my expectations were for Steakhouse in Waco, Texas and this is a really outstanding place

Second time here-- did not disappoint, again! Highly recommend the lobster bisque...super rich, but super worth it! Tonight, tried the spicy tuna roll on the happy hour menu- very tasty and super reasonable at $9. Also opted for the gulf shrimp cocktail and roasted garlic sautéed spinach- both were great (I will smell like garlic for days)! . Sat at the bar again- Ike was great, personable! Casual steakhouse....nice vibes!

Good food, steak was great and service was top notch. Not cheap but a good dining experience usually isn't, a must try if you're in Waco.

The server presentations were great but and a very big but she took 20 plus minutes to take our order. Then I ordered the dry aged ribeye and half of it was burnt to a crisp. Come on now if I am going to pay that much for a dry aged steak at least it should be cooked properly. All in all it's not worth the money honestly the atmosphere and service is not worth the price.

Very interesting interior, old textile mill. Great server who kept checking back with us. Wedge salad, Perfect 16oz ribeye with asparagus side and a chocolate tower to finish off the meal.

Excellent experience! Great ambience, fantastic food, but the staff....... Our waiter, Donald, provided us with excellent service not only regarding the food, but also with his polite demeanor. The reception team were very welcoming and friendly, allowing us to ask questions about the establishment and the history behind it. Also, the food and dessert was incredibly exquisite, making even the most picky eater in our party enjoy the delicacies. As a result, Diamond Backs has earned these five stars for a job well done! Great restaurant!

A Texas style steakhouse- solid steak and a jumbo baked potato side. Both of our steaks were cooked perfectly with a nice char to them. The mushrooms were well seasoned but a little overly buttery for my taste. We tried the pressed sushi roll and it was okay... kind of large pieces that feel apart when you tried to eat it. Fish tasted fresh though. Dessert options looked good, we tried the red velvet bomb which was very moist. Good service and a nice unique wine list.

Food was great (house and wedge salads, filet, shrimp Cajun pasta). Flights of red wines, all good. Service was also great. Ambiance was also very nice. Would go back for sure.

Honestly, best steak I've probably eaten in TX in last 9 years. Service was excellent. Every dish was perfect. Dessert menu was phenomenal! Thank you for a great dining experience Justin!

The calamari is amazing.. the fried banana peppers throughout the plate are delicious! Be prepared when they ask if you want to see the desserts. Your jaw will drop! It was so hard to choose! Will definitely go back if in Waco again.

We stumbled on to DiamondBack's through Yelp. The reviews were spot on. We did not have a reservation so sat in the bar. The service was great, food excellent. The pork belly/bacon appetizer was awesome. We would plan to visit again.

Went here for an anniversary dinner and had an amazing experience! The food was incredible! My husband raved about how good the salad even was, and the steak was incredible. Dessert also great. Well-made drinks, excellent service. Highly recommended.

My husband, daughter and I had dinner here this evening. My daughter and I both tried The New Vegan Meatloaf! special. I don't know how they did it but it was the best meatloaf I have ever tasted. If I hadn't known it was vegan before ordering, I never would have known. It was that delicious!

Outstanding experience from hostess to server to food to ambiance ! Wait time - Called ahead to put our names on wait list on a Friday night around 6:50pm, was told about 45-60mins. No problem understandable and I appreciate them over estimating because we ended up being seated about 25 mins later! Hostess was friendly and welcoming, younger girl on 2/24/23. Server - Request Cullen, he made our night!! One of the best servers I've ever had. Knowledgeable, friendly and jovial while remaining professional, attentive, and never seemed rushed (kudos to your management for staffing well then also!!). Food - so good!! We ordered the petite filet burrata, the 8oz filet, sautéed spinach side, baked potato side, and asparagus side. The steaks are SO GOOD!! My friend also said the spinach was the best she's had. Drinks - my friend ordered toasted marshmallow Manhattan, too strong for her but i tried it and it was excellent! I just had a glass of Pinot Grigio and it was good. Ambiance - fantastic! Romantic steakhouse vibe, with western type pictures/decor but so elegant. Walked by the bar and that looks great place to have a refined drink and good conversation with someone. Thank you DiamondBacks for a wonderful evening for this Cali girl visiting.

Had a Texas size ' "Beef. It's what's for dinner." ' moment and needed a great steak. Reservations at DiamondBack. Without a doubt this was a five star experience. From ambience to food to service, it was all excellent. Lobster Bisque and House Salad for starters. Split a Bone-in Cowboy Rib Eye with Au Gratin Potatoes and Brussel Sprouts as sides. All delicious. But that steak! Holy moly. Perfectly cooked to medium temp, tender, juicy. Wow. We were absolutely stuffed, but every time that damn dessert cart went rolling by, we rubber necked to see what was on it and what each table ordered. We split the chocolate tower that was a three layer monstrosity that included mousse and cheesecake all covered in dark chocolate. Another big, wow. And our server, Tyler, was terrific. Super personable, helpful with menu selection and provided impeccable service. Truly a wonderful dinner for our last night in Waco.

OMG so so SOOOO YUMMY. AND POPOVERS! SO GOOD I have died and gone to heaven! I got extra popovers and headed them for 20 seconds in the microwave the next day and they were still AMAZING! My chicken was fab!

The ambiance was great. Definitely high end steakhouse feel. I always think it's funny when places want you to make a reservation and you get there and you still have to wait and then they walk you to your table and there's tons of empty tables. I get it, there might not be enough servers but that's the scheduler's fault. You know they can afford to put more servers on the schedule. We had the Calamari appetizer, I've had better. The batter wasn't cooked all the way and fell of the squid. The side Caesar Salad was extremely small but tasty. The Wedge Salad was good. For entrees we had Sushi, Chicken Parmesan and Chicken-Fried Venison. They were also good. We had a glass of wine and beers. A place like this, I think should have tap beer but they only had bottles. We didn't have desert but they looked good and all of them were really big portions. Service was good. We of course considered having steaks since it's a steakhouse but they were so expensive, we got other items. I get it, it's a high end steakhouse but come on, between $60-$140 for a steak, only, please. Especially, since I can buy grass fed meat myself. I know you're also paying for the ambiance and service too, so I can see going to a place like this every once in a while. So we got 4 beers, 1 glass of wine, appetizer, and 3 entrees and we spent $200. All and all it was good. I would recommend it, if you don't mind spending the money.

The atmosphere was amazing and the dessert was so delicious. We were just in town for the night but this place was definitely on our list to check out.

Host was an absolute airhead with zero ability to help answer a simple question. Definitely don't understand how people like this place! It's just a target version of Texas Roadhouse

Dined at 4:30 on Saturday. Six adults. Our waitress, Olivia was such pushy always upselling with subtle pressure. While a restaurant may like this, it soured all six of us to ever return, btw, out bill was near $900. The food was awful. Two of us had the lobster tail, which arrived cold, not even room temperature, cold, although it was supposed to be grilled. The person who order very rare filet, received medium, the person who ordered the rib eye said his steak was very tough although it also was supposed to be rare. The person who ordered the salmon said it was fine. Not a single side was delivered warm; the meal was awful! The alcoholic drinks were fine. Most miserable meal that lasted 3 hours. Miserable. Steaks and sides were amazing. Definitely a hidden gem for out of towners. The ambience is very warming. Shout out to Donald Ray, our server who excelled and made us put this restaurant on our top Waco restaurant list. We will be back, thanks to Donald Ray!

went here while in waco, it was awesome! we got the shrimp cocktail for an appetizer, one of the best in my life, they have specials, i was tempted to get the ribeye, but i did not. they gave us these fried hollow bread pieces with butter on the side, they were so good! ordered ravioli, and a 8 oz steak. + truffle fries, waited an hour and a half for our food, it was worth it, the ravioli was awesome, it even had caviar on it, my steak was so good, i was tempted to get that banana thing that they cook in front of you, i was way too full. service was awesome and nice. prices are...lets not talk about it, would definitely recommend this place for special occasions!

Everything is always Phenomenal! From Ambiance, service, food, & drinks. We've gotten, sushi, tempura asparagus, & truffle fries. Steaks, Seafood, & Venison, with many different sides. We've chosen to sit at a dinning table & at the bar, any area is perfect. Can't wait to go again!

Really sadly lackluster. Dusty inside. Ordered the slab bacon appetizer, arrived cold on the inside. Waited an exceedingly long time for salads, bread and eventually entrees. The sea bass was very salty, and the steaks were just ok. I've had similar if not better at Outback, tbh. Upon receiving the bill, I realized that I was charged $11 for the two olives in my martini, which was mostly vermouth. For the price, I cannot say it was worth it. Several years ago this was a premier steakhouse. I'm sad to say it is not now. Three stars was generous.

Diamondbacks Had a Baylor Graduation Lunch here with a private room. Wonderful service from Tanya and made our celebration very nice. Had Prime Rib which was very good and Lava Cake for my dessert. Had a special request for Bananas Foster for the grad and was prepared excellent with a nice touch for our graduate. Diamondbacks did a wonderful lunch and a fun celebration was Had by all.

Atmosphere is ok, nothing spectacular. The food was good and drinks were good as well. However, service was mediocre and the prices are extremely high for the quality of food and service

Diamondbacks' steak was cooked to perfection, with a beautiful sear on the outside and a juicy, tender interior. Every bite was bursting with flavor, and the quality of the meat was simply outstanding. I was blown away by the attention to detail that went into preparing the steak - it was clear that the chef was a true master of their craft. In addition to the incredible steak, the sides and appetizers were also top-notch. We tried the roasted vegetables and the truffle fries, both of which were absolutely delicious and perfectly complemented the main course. Overall, I would highly recommend Diamondbacks Steakhouse to anyone looking for an unforgettable dining experience. The quality of the food is simply outstanding, and the service and ambiance make for a truly special evening. If you're a steak lover, you absolutely have to try the steak at Diamondbacks - it's the best I've ever had, and I'm sure you'll agree!

My husband and I went last night and had a delicious meal with great service. Our bartender (I don't remember her name) was very friendly and my husband said this was one of his top 5 best steaks of all time (and we eat at a lot of good steak restaurants). We will be back again when in Waco!

We went to Diamondback's right at opening on a Saturday afternoon. The waiter was very knowledgeable and helpful with recommendations. Shared some interesting anecdotes about famous people that have been through the restaurant. We had the bacon appetizer which you should definitely order. Slab of bacon with a glaze of some sort drizzled on top. Excellent option. Steaks were well seasoned and cooked perfectly. Sides were really good especially the au gratin potatoes. We got the truffle fries as well. No complaints. Will definitely come again!

We had recommendations about this place and we're in town for family weekend in Baylor. We had a reservation so we sat down quickly. The Caesar salad was really good as was the bread that she brought to the table. I got the lobster bisque. It was good, but could've had more lobster for the price. My son and I shared the Wagyu ribeye that was really really good. I asked the waitress if the fries were freshly cut and she said yes, but that was not true. The fries had to be from a frozen bag. The service was OK, Not great. We will definitely be back to eat here again!

Great food. Great ambiance Prices are quite steep, but the food still is delicious. Drinks are really delicious.

Great ambiance. Wonderful whiskey and cocktail selection. Steak was made perfect and was checked with me on the color before serving. Bar tender was attentive, friendly, knowledgeable, and makes great drinks. Sides where large portioned but well made. The BREAD was worth coming back for all by itself! Share the deserts or ask for a box after they are examples of letting the kitchen have fun and making wild and tasty products. Enjoy desert with an excellent port selection.

Great place- my boyfriend and I come here for special occasions and are always treated so kindly. The staff is super friendly, and the options are very good, food is consistently excellent.

I was turned away at the door several weeks back because of "IT issues" and "only the ability to seat those with reservations" when the restaurant was at half capacity. I wrote a negative review and someone immediately reached out to me to attempt to make it right. I was impressed with the promptness, I wasn't asking or looking for anything and was offered a gift card. I (without being ask) was compelled to delete my negative review. However the gift card never showed up so now they let me down twice! I was in town seeing my kiddo at Baylor a few days ago and they wanted "steak" and it made me think of this place. We went to Texas Road House (I know it's not even comparable to this place) but neither of us were let down!

Superb food, excellent service by our server Adam and we will be back often! I highly recommend treating yourself and your family to this upscale steakhouse in Waco! I recommend the filet, lobster bisque, and the crab cakes. My dinner companions loved the Miso Salmon, the cajun pasta, the wedge salad, and the mac and cheese. Update: We returned again to Diamondbacks for Sing! Weekend and had another Wonderful dinner! Thank you for consistency; you have earned a huge fan!

Get a reservation. The food is amazing but really great service as well. We were seated right away on a Friday evening. The place was packed. To start we ordered the colossal shrimp cocktail & they were so good. The wine menu is brought to you on an iPad so you can get a little information about each one. Some really great choices. The puff pastries with rosemary and butter were to die for. Please get the lobster bisque & dip the pastry in it. Those 2 belong together. The wedge is kinda half a wedge really but the house made blue cheese dressing was delicious. I ordered the petite steak burrata and the steak was perfectly cooked & seasoned well. Had to end with bananas foster being from Louisiana but omg this bananas foster will give Brennans a run for the money. It's a little different and I loved it! It's super cozy in there and perfect for date night or celebrations. Definitely going back while in Waco.

Such a beautiful restaurant with Edison style lighting and a lot of dark wood features. We made a reservation to play it safe on a Friday night and we got a big booth table that was so comfortable and romantic. Our server seemed off and we were wondering the whole time what was going on with him. He was very nice and informative, but he seemed like he was either overwhelmed or got thrown off by us being in his section. It made it a little uncomfortable and a constant wonder throughout our dinner service. Our food was delicious! I had the prime rib and my husband had a ribeye. Both were delicious, tender and clearly very high quality. The Cesar salad that came with our entree was good, croutons were very good and the pop overs that came with our salads were divine! We also ordered one of the steakhouse sides, mashed potatoes, and they were very creamy and flavorful. With that said, it was very expensive! Easily the most expensive steakhouse I've been to throughout the United States. If you're looking for a very nice dinner out with high quality steaks in Waco then I highly recommend it!

The service was AMAZING!! Thank you Coby for taking care of us. I will say that we could not watch the Dallas Cowboys.... but the food made up for that.
