I never write reviews, but this experience deserves one.
We travelled all the way from London, where the fine-dining scene is big and competitive and Dim Dining was genuinely playing on a world-class level.
From the moment we walked in, we knew we were in good hands. Instead of greeting us in Dutch, they welcomed us by our last name and switched straight to English. Such a small detail, but it tells you everything: they’re completely on point.
We chose the 10-course menu. My girlfriend had the non-alcoholic pairing, and I went for the sake pairing. The personal touch from the sake sommelier was exceptional, by the end we honestly wished he’d just pull up a chair and sit with us :-).
He didn’t just explain where the bottles came from, he explained exactly what aromas and flavours we were about to experience, and why each sake was paired with the dish. That level of storytelling and intention is rare even in London.
Back in London, non-alcoholic pairings are often pre-batched bottles brought in. Here, you immediately taste the difference. One moment that really stood out. A cold brew coffee with hojicha tea, finished tableside with persimmon caramel. Absolutely mind-blowing.
It’s impressive how a dining experience at Dim Dining can literally give you goosebumps. We were entertained for over four hours and 10 dishes later, with 20 thoughtful pairings and left with huge smiles on our faces. Yes, the price is high, but no higher than other starred restaurants that only offer three or four courses and less experience.
We truly recommend Dim Dining for their world-class hospitality, bespoke ingredients, and the beautiful harmony of flavours. This is exactly why we seek out experiences like this and we want to travel all around the world to visit such restaurants like this.
All this through a recommendation from the Botanic Hotel, an absolute must-stay over in Antwerp.
