The 24 Essential Restaurants in Salvador, Brazil

"At this homey restaurant in the Rio Vermelho neighborhood, chef Leila Carreiro serves what she calls “heritage cuisine.” For a decade she has focused on regional dishes, including those typically served as street food in the markets of Bahia and the recipes that locals cherish most, many of them paying homage to African origins. You’ll find peguari (fighting conch), a summertime classic here served with cashew vinaigrette, as well as hauçá rice (coconut and beef rice fried in palm oil with dried shrimp)." - Rafael Tonon

In Salvador, Brazil, Afro Brazilian Religion Shapes Street Food and Fine Dining | Eater

"Opened in Salvador in 2006 and helmed by chef Leila Carreiro, this restaurant is devoted to reviving centuries-old Bahian dishes rooted in African arrival cooking and the influence of Candomblé. Menu highlights include ipeté (the local bobó de camarão presented in its traditional form, with a discussion of how yams gave way to cassava over time), a poqueca variant served wrapped in banana leaf rather than in a stew pot, and historically significant preparations such as acaçá de leite (ground white corn with coconut milk made in honor of Oxalá). Carreiro researches archival sources and the work of Manuel Querino to reproduce recipes as African arrivals might have cooked them, and she removed items like latipá from the menu when diners did not recognize them—reflecting a balance between faithful preservation and contemporary reception. The restaurant frames its cooking as cultural recovery and education, aiming to keep Afro-Brazilian culinary traditions alive while responsibly popularizing terreiro foodways." - Rafael Tonon

Unfortunately, the server forgot to put in my main course. He was confused because I ordered an appetizer and thought that was all I wanted. I was the only person in the entire restaurant. When I noticed it was taking over 30 minutes for my food, I inquired about it. That’s when he informed me he never put the order in because he didn’t realize I wanted the mocqueca. He was apologetic, but this was disappointing. I didn’t have time to wait and this place was on my list from TikTok. He also didn’t offer anything for the mistake. I had to mention a caipirinha on the house for the inconvenience, which he agreed to. The restaurant is absolutely beautiful. A very calm, relaxing vibe on the water. The bolinho estudante was great, but I wish I’d been able to try the actual meal I ordered. Mistakes happen. I would give them another try if I went back to Salvador and had the time.

Good food but I was expecting more due to the high prices. Nice environment. Our fish was way too fried, and a bit dry.

Aside from the delicious regional cuisine, the servers are excellent and very accommodating. Casquinha de siri and siri mole were our favorites. Caipirinha de tamarindo is worth checking. Highly recommend. A must if you are in Salvador
