went not knowing what to expect. it's quintessential traditional japanese service/hosting experience at its finest. besides the dishes (read michelin guide), all wares are museum pieces, the simple abode is built literally from salvaged and freshly prepared wood and pieces from castles and other historic structures, the chef is well-versed with localized indigenous wisdom of creating unique aesthetics aligned with the seasons and the natural qualities of all ingredients, to him, i feel it's about relationships. with people that grow everything, stewards of the land and ecosystem and food ways, and downstream is us not mere consumers but given the rare opportunity to engage authentically. we walked away with renewed appreciation for what traditional japanese cuisine and omotenashi is all about.
