My last experience was not so great at the Broadway location, with one of the pastas I had being oversalted and another being undercooked (hard in the middle).
This time I was introducing it to a friend as a popularly known spot, because we were in the area, and they wanted a bite to eat. I figured it was time to give it another try. This experience topped the last one by a long shot, and not in a good way. I wish I could give stars for friendly employees and a clean location, which it had, but the food was so bad I can't. We ordered carbonara, made with the protein pasta, to share. We aren't GF but both consume high protein diets, and eat protein pastas often. This one was unfortunately... inedible. We each had a bite and did not want anymore. I forced down a few more bites to really try to taste everything but it was hands down the worst pasta I have ever eaten in my entire life - I'm not sure who thought it was acceptable enough to put on a menu.
To start, it did not taste like a carbonara. Maybe the pasta flavor was overpowering the sauce, but it tasted straightup like bland, warm egg yolk, and separately some cheese. It did not have a cohesive flavor (and yes, I know the sauce is supposed to be made with egg yolks and cheese).
Secondly, I know the protein pasta/casarecce was not a traditional nor necessarily a good choice for this sauce, but it shouldn't ruin the dish. It was both soft and gummy, not chewy nor al dente at all (it said it was supposed to be 2/3 al dente? but it was a 0/3). Soggy like the texture of wet play-doh, and sticks to your teeth when you chew into the middle, somehow like overcooked and undercooked at the same time. In fact, it tasted like a wheat flavored play-doh, boiled in water. I've had many types and brands of protein pasta and I've actually never had one I did not like - until now. They can have varying textures but this one should not be called a pasta. It should be taken off the menu, truly.
We ended up giving up and tossing the rest - a waste of a ~$15.11 dish (post-tax, pre-tip) but you couldn't have paid us to finish it (and I'm the type that never likes to waste food or toss out things, but neither of us could swallow anymore). We both hugely regretted going in since I mentioned my last experience but my friend wanted to try it anyways - I told her maybe better next time with a different pasta... but I think we're both too scarred from that to waste any money or energy on trying it again.
