One week and many excellent meals later, we still recall this experience with particular fondness ❤️ Top quality raw ingridients, craftsmanlike attention to detail, impeccable service, and exceptional Edo-style sushi. In my eyes, Chef Kobos - who studied under the prodigious Endo Norihito in Tokyo - is Madrid's first true itamae 💯👏 Also worth noting superb wine pairing by Xavi Saludes, the founder and sommelier of Matritum, whose careful selection only enhanced the exquisite taste of each dish 🍷
Even if for a couple of hours, thank you both for transporting us to Japan at a time when it's not possible to visit this beautiful country 🇯🇵🥰
