"Chef José Kobos Cortés says that “we eat every day but to smile while we do so is something else altogether”. Here, just a few metres from the Cebada market (in the La Latina district), he has created his Japanese-inspired cuisine (he spent a year working in Japan under the baton of culinary maestro Norihito Endo) around solid technique and the seasons. In this unpretentious restaurant, where everything revolves around a small sushi bar, he conjures up a single Omakase menu that normally starts with a green tea to welcome you (and which is then constantly refilled). We had a wonderful evening! The food was excellent, and we truly enjoyed the fantastic company of the other guests. The sake was absolutely delicious and added the perfect touch to an already memorable night.

We were underwhelmed with our experience here, especially compared to a dozen of omakase we’ve experienced in the US and Asia. It took a total of three hours, this was my first time where the entire meal was paced for everyone at the restaurant instead of each party. I was intrigued by how the chef prepared the rice with vinegar, but disappointed how grains were wet and fell apart as we picked up each piece. Compared to other omakase with a similar pricing, it felt a little too basic. Service was great though.

One week and many excellent meals later, we still recall this experience with particular fondness ❤️ Top quality raw ingridients, craftsmanlike attention to detail, impeccable service, and exceptional Edo-style sushi. In my eyes, Chef Kobos - who studied under the prodigious Endo Norihito in Tokyo - is Madrid's first true itamae 💯👏 Also worth noting superb wine pairing by Xavi Saludes, the founder and sommelier of Matritum, whose careful selection only enhanced the exquisite taste of each dish 🍷 Even if for a couple of hours, thank you both for transporting us to Japan at a time when it's not possible to visit this beautiful country 🇯🇵🥰 ごちそうさまでした 🙇🏻‍♀️🙇🏻‍♂️

I made a reservation and cancelled it on the same day, two weeks in advance!!! Their customer service ignored my request to cancel it and is as well not reacting to my request to refund my money. This leaves me unfortunately only with leaving a bad review and making potential guests aware of such a rip off. Very disappointed.
