Pastries that will transport you to Europe. Laminated dough mastery. Balanced flavors that allow the quality of her ingredients to shine.
So far we have enjoyed:
▪︎ Plain Croissant; a masterfully executed work of laminated art
▪︎ Chocolate Croissant; massive, flaky, buttery laminated pastry with a rich, dark chocolate spine
▪︎ Ham and Cheese Croissant; nutty Gruyere & quality ham enveloped in buttery, laminated pastry. Savory, decadent, and balanced.
▪︎ Almond Croissant; WOW. Perhaps one of her sweeter pastries that I've tried yet, and even still: perfection. Densely filled with frangipane- frangipane that actually tastes of almond and not sugary paste with almond flavoring, laquered with a light sweet glaze adhereing thinly sliced toasted almonds... so, so delicious.
▪︎ Blueberry & Cheese Danish; top notch, not overly sweet. Worth. Every. Calorie.
▪︎ Financier; never would I ever opt for cake over croissant but my partner added this dense little cake, studded with diced pears, to our pastry assortment a few weeks ago and YUM. Dense but with a tender crumb, perfectly sweet without being cloying, beautifully bronzed and expertly baked. A new favorite... second to lamination, of course.
▪︎ Cream Puff; another work of art. Perfect pâte á choux dough with a rich, dark chocolate shell, bursting with the fluffiest pastry cream. Again- the quality of her craft, ingredients, and expertise shine bright.
No need for artificial colorings, flavors, excess sugar, or whacky gimmicks- what matters most here is the food, and that's what matters most to me. Edelweiss is a GEM. A true gift nestled in downtown Biddeford.
I highly suggest picking up an assortment, brewing a strong pot of coffee, and inviting your favorite people for a cozy catch-up.
She deserves a James Beard award.
