The cutest and most delicious little find in Idaho Springs :)
I truly happened upon this place by accident. I was driving up to the mountains from Denver and had to stop to take a quick work call. Idaho Springs was the closest town, so I pulled off, parked, and walked down the main street in hopes of finding a little shop to work from. Edelweiss Pastry Shop caught me before I could even peek inside - I saw the sign from a few shops away, and it sounded absolutely charming! I stepped inside and immediately realized it was perfect. They have quite a few tables and chairs (a spacious, yet cozy set up) and some incredible-looking pastries.
I walked up to the counter to admire the selection and decided on a blueberry turnover. The man working the counter offered to heat it and bring it to my table for me (which was very kind). I found a table and settled in, and was already buried in work emails when he came with my turnover. It was, in a word, divine. The flakes! The blueberry filling with the glaze on top! I couldn't imagine a more perfect pastry. It was heaven.
I worked for about an hour, then packed up and went back to the counter to buy three more turnovers for the road (could NOT resist). I was also planning on stopping again on my way home, but traffic was bad, and we had to skip it. However, now that I know about it, you can bet I'll be stopping at every opportunity to and from the mountains - or just driving up to Idaho Springs for the sole purpose of getting some little treats from here :) Loved it.
