Update: I had been in contact with the owners, who very kindly gave me a gift card to give them a 2nd chance. Tonight I went back and ordered pulled pork bbq for everyone. The pork and all the sides were absolutely outstanding as they were the first time. I did ask for a sample of brisket. I was afraid to order it given what it was the fist time. The sample of brisket I had was really good. The flat and point pieces had a good flop, fat was rendered and cartilage was broken down, and had a good smoke flavor. I declare this place redeemed in my book and we’ll be making it a regular go to place.
I really hate to write this up, but bad food backed up by bad service after spending $130 and even tipping has to be addressed. I received the brisket shown below on my brisket platter. It was tasteless, chewy, tough, fat wasn’t broken down, and flat out rubbery. My daughter’s brisket sandwich was the same. I brought this to the attention of the manager who proceeded to tell me I didn’t know good brisket. She even asked where I was from, like that had anything to do with being served bad brisket. I have smoked briskets for over 10 yrs, and if it’s over an actual wood fire you would have a smoke ring and the fat and collagen would be completely broken down. I said maybe this was a bad batch or wasn’t cooked right, and she proceeded to keep repeating how it was smoked for 12 hrs. No way this was smoked for 12 hours and the fat didn’t break down. I can list a number of ways a brisket can turn out like this, but I’ve eaten brisket in TX, NC, St. Louis, Kansas City, and countless other places and this was the worst brisket ever. The manager’s poor response didn’t make it any better, she brought me a 2nd plate of the same sorry brisket. I refused both and ended up with the pulled pork which was way better. The customer behind us even came up after and said her brisket was bad too and that it’s not normally like that, and also couldn’t believe how the manager responded. Lucky me I guess. Everything else we ordered was great, but bad brisket and a manager’s bad attitude earned this 1 star review. I posted a photo of what a brisket should look like. That was done over oak, mesquite, and hickory using TX fast competition style, and yes mine is way better than what I was served tonight.
