A while back I was telling my wife about our legendary "Tecmo Bowl" nights at my cousins' house back in the 80s. We'd buy a three liter coke, Doritos, bologna, white bread and cheese slices and play video games till the next morning.
It was awesome, and I was missing it.
So we went to H‑E‑B, bought some nice bologna, some choice American cheddar slices, Texas toast, Doritos and some cokes (Coke Zero of course, we're old you know).
We played Halo all night and ate our sandwiches with cokes, but it didn't taste the same. Was it that our tastes had it evolved? Was the quality of the ingredients (better in this case) the root cause?
Circle back to El Paso Flautas. They make delicious brisket flautas, on their own a reason to visit. The brisket queso and fries are unique and well executed as well.
But let's be honest, I was there for some Chicos...
The ensemble was well done. The flautas, the red tomato and chile sauce and the salsa verde, all brought me back to my youth and college days. But it was almost too good.
You see, Chicos uses the cheapest ground beef, tortillas and, as we used call it, government cheese. There's no way the nice folks El Paso Flautas would buy terrible ingredients so, it's almost a curse to have better ingredients.
I mention this to caution you to not hold that against them. The service was excellent, the food great and I recommend it.
But if I may, I'd love, love, love, the option to get a medium-sized cheeseburger with radioactive mustard to pair with my Chicos...
