Smells like old people and moth balls in here. Was not expecting what smelled like a dirty diaper when I opened the drink cooler. Also, there are children running around on little walker things. Ordered Shrimp Ceviche and a Coke, paid 17 bucks. Asked for hot sauce, was told they don't actually make any....I understand this is traditional Sinaloan, but I'm pretty sure they use hot sauce too. Whatever, a Togo container of Tapatio it is.
Opened my Ceviche, which came in a 32 oz cup. Smells good, tastes okay, kinda bland. I'm used to more flavor, coming from Houston. Tortilla chips are thick and crunchy, but otherwise generic. Then I dive in further to my Ceviche, and what do I find? Nothing but RAW shrimp! Barely any at all, but was was there was still grey. A little too for the future. If you're going to prepare Shrimp Ceviche from raw, let the shrimp sit in ONLY citrus juice for about an hour. That way the come out pink with a nice "pop" to them when you bite in. Otherwise, bring your liquid to a boil, then turn off the heat and pop the shrimp in for a second.
The way you've prepared this, while still edible, is unsafe and unappealing.
