El Queso Guero

Love love love this spot! Stopped by after a long day of work and i couldn't of made a better choice. Ordered a bowl with chicken that was flavorful with all types of spices. They missed my flour tortilla but everything else was on point.

I have a newborn and wanted some Birria. It was late and they were open. So my partner went to grab some and ordered 6 birria tacos with consume. Some were falling apart when he got home. They all were different sizes which threw me off too. They lacked flavor, luckily I had some of their green sauce to dip them in. I wouldn't go back.

Love me some food trucks! Driving Around running errands, I passed a corner and what did I see?! El Queso Guero. As I passed I went from not being hungry.... To craving a quick taco. While I was ordering I went from wanting a quick taco... to needing a burrito, 3 tacos and a quesadilla. I exercised great restraint by not also ordering the tater-tot nachos that looked soooo good. The service - One man show for ordering cooking and all things In between. Nice dude, had a good chat while he got everything ready. The food - Everything was tasty. I liked the burrito, which had a spicy slaw inside. I'm a sucker for slaw so it was right up my alley. Ice cold Mtn Dew in a can hit the spot, and the salsa that came on the side was just right.

Went with a friend to the Pinball Hall of Fame last week and had a ball. This food truck was there and we had a delicious lunch. It would have been better if the HoF had set up some tables, but my lunch was big enough to finish for dinner. Simple menu but fresh, quality ingredients.

BEST DAMN TACOS IN VEGAS - This man Edward Tallman is a genius with food. Personally watched him create more then just tacos, amazing person and business owner!!! I will always be following El Queso Guero / The Food Factory!!!!!

El Queso Guero is one of the best things I have tried all year! Last night, I attended the Monster Mash trunk or treat at the Crossings church. El queso guero was there! I ordered the "gringo nachos" and they were out of this world! I had a nice conversation with the owner/operator of the truck, and he was friendly, talkative and recommended the quesadillas for my daughter. My husband and I are big fans of Mexican food and we will definitely be paying El Queso Guero visits in the future! This place definitely satisfies a craving for great Mexican food.

Amazing tacos! I had 2 chicken tings tacos and 1 chefs special which was fried in honey then topped with chili limon. The tacos were flavorful and fresh! They can be found on the UNLV campus and I definitely recommend.
