The 26 Best Restaurants in Panama City | Eater

"Espeziak, meaning “spice” in Basque, reimagines Spain’s most iconic dishes with a contemporary twist. Chef Xavi Vallejo, trained in Basque French cuisine, infuses the menu with influences from his travels through Thailand, as well as expertise from his Argentine partners. Highlights include local catches like manta ray and Espeziak’s creative versions of tortillas de patata (don’t miss the goat cheese and onion option). Sommelier Aarón Batista elevates the experience with a perfectly tailored wine list, and the restaurant shares space with the Flora Lab plant boutique, so take a floral arrangement to go." - Jorge Chanis

A new Mediterranean alternative in the city offers outstanding Basque choices among them Ibérico croquettes and perfectly roasted Lamb. Make sure you leave room for the Basque torte. Service is professional and friendly. Highly recommended!

If you're a true lover of fine dining, Espeziak offers a culinary experience that masterfully blends tradition and innovation, led by chef Xavi and the renowned restaurateur Federico Canosa, both of whom bring vast expertise in Panama's high-end culinary scene. One of the highlights of the menu is the torreznos, which arrive at the table perfectly crispy on the outside while remaining juicy on the inside, offering a traditional bite that brings out the essence of Spanish cuisine. This appetizer is the perfect way to begin, followed by the iconic jamón ibérico croquettes, a classic elevated with a creamy interior and crispy exterior. Each bite envelops you in the deep flavor of the ham, combined with a bechamel that makes the dish stand out. However, the true star of the restaurant is undoubtedly the Spanish omelette, available in several versions, all with that signature creamy center that’s hard to find outside of Spain. The version with caramelized onions and goat cheese is a standout—where the sweetness of the onions perfectly melds with the tangy notes of the cheese, making this dish an absolute delight. This balance of flavors showcases the technical mastery of Xavi and Federico. The arroz con pato al Pedro Ximénez (rice with duck and Pedro Ximénez wine) is another must-try. The creamy rice, perfectly cooked, blends seamlessly with tender duck and the sweet notes of Pedro Ximénez wine, adding a layer of complex, delicious flavor, transforming this traditional dish into a sophisticated gastronomic experience. In addition to the food, the luxury service provided by the restaurant's team deserves special mention. Particularly, the service of Paul, a five-star waiter, stands out for its professionalism and impeccable attention to detail. Paul not only guides diners through the menu with personalized recommendations, but also ensures that every detail is perfect, from the pacing of the dishes to wine pairings. The name Espeziak comes from the Basque language, and means “spices.” This concept is central to the restaurant’s philosophy, where spices play a key role in creating sensory experiences through vibrant, unique flavors. Xavi and Federico have seamlessly integrated a wide range of spices and aromas into their dishes, reflecting the diversity and richness of Mediterranean cuisine with a contemporary twist. And don’t forget to save room for the tarta vasca (Basque cake), a spectacular end to your meal. With its incredible texture and rich flavor, it’s like eating a piece of Spain right in Panama. Soft yet dense, with a delicate almond cream filling, this dessert is the perfect culmination of your dining experience at Espeziak, showcasing yet another example of the chefs' dedication to traditional yet elevated Spanish cuisine. Together, Espeziak offers a unique fusion of high-end cuisine and outstanding service, making it a standout in Panama’s gastronomic scene. Each meal here is a complete experience—rich in flavors and complemented by exceptional service.

20/dic/2024 Environment: Place is ok. For the prices they charge the environment is adequate and comfortable. Bit cold for the ladies but they have pashminas available. Services: For a dining place like this I expect much a higher level of attention since average cost of person is around $40 at least. Water were not filled frequently. Lack of enthusiasm from the waitress. We weren’t even offered for any drinks at all. Hence I only give 3 stars for an acceptable level of service. Foods: Foods are good over all. None of them really really stands out. The spaghetti con roba is worth a try. Huevos rotos is good too. So does the chicharron. Their best would be the cheesecake. That is one of nest cheesecake I have ever try in my opinion. But foods wise in terms of Spanish foods I would consider somewhere else. Thats just my 2 cents.

Visited this new restaurant during its opening week, it has an interesting varied menu with heavy Spanish influences. Decor is beautiful, decorated with plenty of botanical elements from Flora Lab. Excellent service, it seems that diner experience is definitely a priority. I expect this to only get better. Recommended: Vitello Tonnato and the Pulpo a Feira. Plus: plenty of parking and valet service.

Went for a Thursday dinner. Very spacious interiors, has a bar and outdoor section. Food was good, the steak was a bit salty for my taste.
