Head taquera Laura Rivera is also known for her fat, well-blistered gorditas and for making what is perhaps the Bay Area’s tastiest pambazo — a kind of sauce-soaked sandwich loaded with chorizo, soft-cooked potatoes, fresh lettuce, and Cotija cheese.
