Best Restaurants to Road Trip to From Dallas | Eater Dallas

"It’s a collective of chefs. It’s a series of pop-ups. It’s the buzziest thing to happen to the Tulsa culinary scene, maybe ever. The 2023 James Beard Award semifinalist Et Al., which operates out of Foolish Things Coffee, morphs into various culinary concepts throughout the week, serving a meal inspired by the Alsace region of France one night and hand-folded Japanese dumplings on another. Check social media to find the pop-up that’s right for you. - Jess Brent, Eater contributor" - Courtney E. Smith

Dumplings are good, miso soup is good. Japanese fried chicken was so burnt/tough it was not edible. The desserts were not great either, butter mochi (hard and lacks flavor) and the custard dessert was overwhelming with maple syrup and salt. Portions of all the mentioned were small. Cool vibe but food was just ok.

- Pork garlic chive dumplings with Szechuan peppercorn oil we're balanced perfectly, with the sharp bite of the ginger and peppercorn oil calmed by the delicate dough and aromatic filling, texture was perfect. - Kara Age Donburi, bowl was packed with umami, the chicken was crispy outside with great tooth, juicy flavor in the dark meat. - Pot De Creme, their take on crème brûlée blew my mind. So much so I went back a couple hours later just to get another order of it. - Staff was warm, friendly, and genuine in their love of the craft. - The prices were very fair for a spot downtown, especially given the quality and presentation of the dishes. - The vibes, were immaculate.👌

Et Al. is a collective of chefs working to build an equitable service operational model while serving delicious global cuisine. There are currently six concepts: Bischix, Butter Bar, Compaignon, Dumpling Night, Japanese Breakfast, and Pickles at the Barbecue. Et Al. was a semifinalist for Best New Restaurant 2023 by the James Beard Foundation. Et Al. operates from Foolish Things Coffee in downtown Tulsa’s Cathedral District and located at the start of the historic Route 66. After a long walk along the Tulsa portion of Route 66, I stopped in for Dumpling Night, a weekly Wednesday evening pop-up led by chef Colin Sato featuring Japanese food and beverages. Foolish Things Coffee is a welcoming coffee house featuring clean lines, cool artwork, and a fair amount of natural light. There is a patio area to the side of the shop and front of shop seating. Customer service was exceptional. Despite a continual line, the staff was warm, welcoming, and fielded questions regarding the menu. Food came out at an appropriate pace especially given the volume. I had the Pork Dumplings, Udon, Ginger Sake, and Pot de Cremé. I did not have a bad bite all night! The ginger sake was great. The ginger flavor was very present. The Udon had a broth with great umami flavor. The individual components (shrimp, noodles) were well prepared. My only notes were to add more shrimp. The dumplings had a nice char on the bottom. While the filling was good, it wasn’t as flavorful as I would have liked. I loved the rice vinegar addition to the chili sauce. I am still thinking about the Pot de Cremé. I loved the black salt paired with the maple syrup on top. And the cremé was super luscious. I left Dumpling Night inspired and full. I love the values of Et Al. and wish I was in town long enough to experience the other available concepts. As for the Dumpling Night, I would want to try the Sticky Rice and the cold beverages.

One of the few things I miss about living in Tulsa, dumpling night. This became a weekly thing for me and my friends 10/10 would recommend. The staff is friendly and fast

This food pop-up in the coffee shop is exceptional. The dumplings are absolutely perfect! The flavor, the spice, and the portions are an absolute value at this price. The coffee menu hasbplenty to choose from and they also have a few summer beers to go perfectly with the food options. Seating is great, both indoors and out. And the staff is some of the best we've net in Tulsa!

Wednesday nights are Dumpling Nights! I thoroughly enjoyed the nicely balanced hand-folded dumplings, your choice of either Pork & Nira (garlic chives) or Mushroom & Bamboo. They were plump and silky. I also tried the Karaage Donburi which is a Japanese fried chicken rice bowl topped with umami mayo, nori, benishoga (red pickled ginger), and scallions. The rice was flavorful, the chicken juicy and crunchy, and the entire dish a lovely medley of flavors. Staff made me feel appreciated and welcomed even though I was a solo diner and they were quite busy (there was a substantial line by 6:45pm). Service was calmly efficient and provided with smiles. I wish I could eat here every Wednesday evening!

Approximately a year ago, I discovered Et Al. in Tulsa's culinary scene, renowned for its collaborative approach to diverse tasting menus and pop-up concepts like Butter Bar and "Sufra." Led by Chef Chloe Butler, known for her national acclaim, Et Al. prioritizes workplace equality and a team-driven culinary vision. Butter Bar, housed within "Foolish Things Coffee" in downtown Tulsa, offers an urban industrial ambiance with exposed ductwork, brick walls, and dim lighting. Service, led by Chef Butler, embodies teamwork and excellence, with each member contributing to menu conceptualization. The tasting menu at Butter Bar unfolds with courses like a delectable cheese plate, roasted affogato, hot honey passion fruit tart, grilled pineapple tarte tatin, Kakigori, Wok Berries, S'mores, and Cloche. Each dish showcases creativity and flavor complexity, though some, like the roasted affogato, could benefit from better flavor balance. Despite minor flaws, the overall experience at Butter Bar is exceptional, with an atmosphere rating of 18/20, service rating of 20/20, and food rating of 52/60, resulting in an impressive overall score of 90/100.
