"Under the term ‘ether’, derived from the Greek word for 'sky' or ‘firmament’, this restaurant gives physical form to the dream of the Tofé brothers, Sergio and Mario, who share the load, the former as chef and the latter as maitre d' and sommelier. The unassuming premises, just a few minutes' walk from Plaza de Legazpi, is intimate and minimalist, decorated with paintings by different artists. They favour a contemporary cuisine that is not devoid of personality, with interesting Latin American influences (especially from Mexico and Colombia) that speak to their experiences with chefs from the region. You'll find a unique tasting menu that changes five times a year: Talo (twice, 1st and 2nd in spring), Karpo (summer, focused on vegetables), Ouros (October, mountain flavours) and Thalate (seafood). Interesting fact: The well thought-out background music... varies depending on the menu and the stages of the meal!" - Michelin Inspector
Great food: elegant, subtle, flavourful. 12 step tasting menu (summer), every step delightful. The absolute favourite was the sardine dish, the taste and the texture just perfect, but had that little happy moment of tasting something wonderful a few times during this meal.

Incredible personalized service. Owned by 2 brothers (one in the kitchen and the other one in the dining room). Cozy and nice venue. Great local wine selection by the glass or bottle. Loved the 7-course menu, very well-balanced and tasty. The ingredients were very fresh. Nice bread as well. An excellent, not crowded choice, to book (reservations are required) for an upscale but not expensive lunch. Not too far from the city center. I really recommend to try the established menu as dishes had the perfect size and also it was a nice matching & pairing experience palate-wise.

this location has to be my favorite restaurant in madrid. i’m sincerely grateful they were able to make accommodations. the two brothers were too kind & very insightful on the subject of the culinary art. the place was so chill & aesthetically pleasing. it’s difficult to decide which portion was the best. i believe all had it’s strengths & euphoria for the palate. i can see the passion for this form of art, i wish them the best.

Éter is a small informal but quiet and elegant bistro a bit away of the downtown but definitely worths the trip.
Two tasting menus to choose, plenty of delicious bites based on traditional Spanish preparations but with a very personal touch and international influences.
Special mention also for its cellar, plenty of references from small low-intervention winemakers.
Closed during the weekends and almost imposible to book, you must keep a watchful eye on its website the first day of each month when they open reservations for month after.

Absolutely outstanding experience. The 12 course meal was absolutely delicious and we loved the philosophy behind the restaurant of sourcing local, seasonal ingredients and the "nose to tail" approach. Also the staff were impeccable - knowledgeable, friendly, and explained each dish beautifully. Highly recommend!
