"Felix Schneider and his team take you with them into their very own cosmos. Their sustainability concept – consistently implemented, down to the last detail – is clearly reflected in the extraordinary seasonal set menu, which is brimming with their own ideas and meaningfulness. They forage, plant, ferment… everything is made in-house, from the ham and butter to the miso and vinegar. The short tour of the experimental kitchen starts at 6pm, after which you will be served numerous creative courses – fish/meat-based or vegetarian – over the course of four to five entertaining hours. Impeccable ingredient quality is evident throughout – from the aromatic, sweet heirloom tomatoes to the super-fresh, ikejime-slaughtered golden trout. The food is accompanied by a dynamic selection of drinks pairings, wines or alcohol-free creations. We had a fantastic time at etz and are certain that we'll be back. The ingredients are clearly the star of the show. Because all ingredients are purchased "raw", no processing, there's an additional element to delivering a dining experience of this quality. While I did not vibe with all dishes, presentation was spot on across the board and so was the balance of flavors and textures. The service struck a nice balance between formal fine dining and Franconia casualty, which felt just about right for the experience. We got lucky and spent some more time with the team discussing their journey and philosophy, really rounding out a wonderful evening. Highly recommend, if you're open to regional top-notch products! This is a hard restaurant to rate. I think you need to check in advance what they offer, and decide if it suits you. They do a very local/seasonal cuisine, with products that come straight from the region. If you like that concept, you'll probably like it a lot. In our case, this meant that the menu was mostly vegetarian. A lot of radish, celery, and stuff like that. Personally, when I got to a place at this price range I expect to see more of the "heavy hitter" ingredients in the menu. So all those veggies didn't really hit the spot for me. Also, they have an open kitchen and prepare the dishes in sight of the customers. Generally I'm a big fan of this concept, but they overdo it. Our meal lasted around five and a half hours, and we weren't really taking our time with the dishes. I found it too much in the end. So, to be frank, it didn't really work for me. But I think they are fairly clear on their website on what they do. If you go knowing that, I think you'll like it. The price range, however, has it implicitly competing with some other top restaurants in the region, which IMO are stronger options.

Absolutely the best 2 michelin star restaurant. 200% recommended. I have been to many one star michelin restaurants, some two and very few three. The concept and service of ETZ did blow my mind. Open kitchen concept, absolutely friendly staff and amazing food is 5 out of 5 recommendation worthy. Thnk you Felix for amazing experience.

I've been there in summer 2022, I've done all the gastronomic restaurants around Nürnberg. I can safely say it is from very far, the most amazing experience available in the area. The menu was well thought through, following a gustative story line in respect of the area. The only restaurants that had the balls to have a beer pairing, which was a perfect match for that dish. Atmosphere was intimiste but also heartwarming, service was between friendly and respectful, which is precisely what a young couple would expect to feel confortable. I'm going back tomorrow, I'm so looking forward to going that I'm counting days since I booked.

My partner and I visited etz on Friday 10th February. Having visited a few fine dining restaurants across the continent and the UK we can say without doubt this has been our favourite. Our English needs were very much catered too, the staff were fantastic at explaining everything to us even when not in their native tongue. Daniel (who might be the manager, might be the sommelier, might be something else) was superb with us, both in advance and on the night, so much so that he reached out to see if I had left my scarf behind (its the small touches that make everything). The food was to die for, I could ramble all day about each course, just superb. I can honestly not recommend this restaurant highly enough. Please visit this place, you will not regret it.

Team Etz, thank you for this experience that I will never forget. Ok, I am totally into food and wine and I dined in star restaurants before but I have never experience this kind of art composition with ingredients before. The team in ETZ is kind of nerdy for what they are doing, there is much thought and love in all the dishes. All is selfmade, harvested or choosen super local. They even show you their working space behind the kitchen, a big laboratory where they experiment with ingredients like making their own soy-sauce, drinks, fermentation, mature of meat and vegetables, .... Just stunning! If you have the chance, go and experience not cooking but art.
