"Fat Mao, Cantonese for “prosperous cat,” deals in the everyday prosperity of rich broth and chewy noodles, the kind of comfort that chefs and restaurant folk seek out on their days off. This tiny Chinatown noodle shop has long been an insider favourite, known for Thai-style soups like the khao soi, which is deeply spiced and rich without becoming heavy, more warming than spicy-hot. The lighter, smaller Thai rice soup is perfect after a day of running around the city, with a nourishing pork broth, soft rice and a finish of greens and herbs that tastes almost medicinal. You should also order a side of griddled roti, which perfectly complements the meal with its golden, slightly crisp edges and a side of rich curry for dipping.
